TOFU, TOMATO & COCONUT CURRY 💚 Ingredients 2 tbspn olive oil (or spray oil) 2 red onions, finely diced 4 cloves garlic, crushed 1 thumb sized piece ginger, grated 2 tspn garam masala 1 tspn turmeric 1 tspn chilli flakes 1 tin coconut milk 1 tin chickpeas, drained 1 tin cherry tomatoes 1 vegetable stock cube 1 x large (450g) tofu, cubed 100g baby spinach Method - Gently fry the onion until softened - Add the garlic and ginger, continue to fry for a few minutes - Add the spices and chilli flakes, stirring to combine and cooking for 2-3 minutes - Add the coconut milk, chickpeas, tomatoes and crumble in the vegetable stock cube simmering on a medium heat until the sauce begins to thicken - Add the tofu and once fully heated, add the spinach and stir through - Serve with steamed basmati rice or divide between 4 food containers to freeze for later Estimated macros per portion 527 cal (using olive oil) 29 P 20 C 32 F Do you pre-prep and batch cook? Chana Gobi Masala (Chickpea Cauliflower Curry)🔥 INGREDIENTS: 2 tablespoons of olive oil 1 onion, diced 5 garlic cloves, crushed 1-inch piece of ginger, grated 1 teaspoon of cumin seeds 1 teaspoon of garam masala 1 teaspoon of turmeric 1 ½ teaspoons of ground cumin 1 ½ teaspoons of ground coriander 1 head of cauliflower, cut into florets 1 can of coconut cream 1 can of chickpeas, drained and rinsed 1 cup of crushed tomatoes ½ cup of vegetable stock 1-2 chillies, finely chopped Salt, to taste A handful of fresh coriander, finely chopped Rice, for serving Naan bread, for serving INSTRUCTIONS: 1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until golden brown, then add crushed garlic and grated ginger, stirring until fragrant. 2. Sprinkle in cumin seeds, garam masala, turmeric, ground cumin, and ground coriander. Stir well and cook for about a minute until the spices release their aroma. 3. Add cauliflower florets, coconut cream, chickpeas, crushed tomatoes, vegetable stock, and chopped chillies. Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook for approximately 25 minutes, until the cauliflower is tender. 4. Season with salt to taste, then stir in the chopped coriander. 5. Serve hot with rice and naan bread. Serves 4 xx

Bang Bang Tofu Ingredients: 15.5 ounces Extra-firm Tofu ¼ cup Cornstarch ¼ cup Panko breadcrumbs 2 teaspoons Garlic powder 1 cup Vegan Mayonnaise 2 tablespoons Sriracha ½ teaspoon White Sugar ¼ teaspoon Salt Directions: Remove extra firm tofu from its packaging and drain all excess water. Wrap in a clean kitchen towel or paper towels and gently press to extract moisture. Place a light weight on top for at least 5 minutes. Preheat the oven to 400º Fahrenheit. Slice the pressed tofu into about 32 cubes. In a mixing bowl, combine cornstarch, panko breadcrumbs, and garlic powder. Toss tofu cubes in the mixture until evenly coated. Line a sheet pan with parchment paper and spread the tofu cubes evenly. Bake at 400º Fahrenheit for 40 minutes. While baking, mix vegan mayonnaise, sriracha, sugar, and salt in a bowl to make the bang bang sauce. Once baked, toss the crispy tofu in the sauce until well coated. Serve as desired with garnishments like red pepper flakes and chives. Creamy Chickpea Bowl By @veganfoodcrazy INGREDIENTS: 1 tbsp oil 1 tbsp red pepper flakes 2 cloves garlic sliced thinly 2 boxes chickpeas, drained & rinsed 1 cup marinara sauce 8 oz vegan Greek yogurt 1 tbsp dried oregano 1 tbsp sumac Salt & pepper to taste METHOD Start by heating your oil over medium heat, add the garlic and red pepper and sauté for about a minute. Add the rest of the ingredients and bring to a boil. Lower the heat and simmer for about 5 minutes. The longer you simmer the more the it will dry out . SPICY TOFU LEEK STIR FRY & NOODLE SOUP By @sncxkitchen Recipe➡️ 🔹Main Ingredients 🔸2–2½ tbsp grapeseed oil 🔸½” ginger (finely sliced) 🔸5 dried red chili pepper (soaked & cut to ½” slices) 🔸½ tbsp Sichuan peppercorn 🔸1 tbsp fermented black beans/douchi 🔸2 tbsp Pixian doubanjiang 🔸3 garlic cloves (finely minced) 🔸298 gm/10.5 oz. five spiced tofu (sliced) 🔸1 leek (white part only – sliced diagonally) 🔹Seasoning (whisk until well combined) 🔸¼ cup water 🔸1 tsp cooking wine 🔸1 tsp vegan fish sauce 🔸1 tsp sugar 🔸1 tsp salt or to taste ▪️Steps ▫️In a large skillet/non-stick pan on medium heat, add the oil. Once the oil heats up, add the ginger, dried chili pepper, peppercorn, douche & doubanjiang. Sauté stirring frequently until slightly fragrant. ▫️When it’s slightly fragrant, add the garlic. Sauté stirring frequently until the aromatics are fragrant. Add the tofu. Stir to combine & sauté for ~1 min. ▫️Then add the leek. Stir to combine & sauté for another min. ▫️Lastly, add the seasoning. Stir to combine & sauté for 1 – 2 mins until the tofu & leek has absorbed the seasoning. ▫️Taste the dish. Tonight’s dinner may as well be called “I am the mother of a Tik Tok influenced 17 year old girl” 🙄😄 Last time I went to the Asian supermarket she asked me to buy tteokbokki, and this time she wanted to upgrade it to cheesy rabboki! 🥰 So rice cakes & ramen noodles, cooked together with the sauce/seasoning sachets they both came with, plus cheese added near the end. I used the vegan pizza topping from @lidlgb vegan week; which looked like pre-grated mozzarella, melted amazingly, and had no funky vegan cheese taste - I wish I’d bought more than one pack! Last time I cooked tteokbokki just for myself I added tofu and red pepper, which worked really well, but as I was cooking for my daughter tonight too, I kept it as the simple carb fest she wanted it to be. my first of many posts about this lovely little space, @thebaseliverpool — a health and wellness cafe in the knowledge quarter at @rcpspaces 🌿🌿🥙🥙 I was invited here to sample their menu, and there were so many choices (will be posting more later 😋). I went for the vegan feta and caramelised onion panini with a raspberry croissant for dessert and an oat latte to wash it all down ☕️ Diana, the supervisor at the cafe, also gave me a side of mixed salad leaves with beetroot, avocado, sunflower seeds and vegan feta cheese 🧀🥗 really flavoursome dishes and heart healthy too!! after we ate, we were given a tour of the building by Jen! The Spine has been built to incorporate the ‘WELL’ Standard concepts, which makes it the healthiest building in the North West and and one of the healthiest in the UK. the WELL Building Standard is the premier standard for buildings, interior spaces and communities seeking to implement, validate and measure features that support and advance human health and wellness. the standard consists of ten concepts – air, water, nourishment, light, movement, thermal comfort, sound, materials, mind and community. their sustainability also expands to the cafe itself! from using local and seasonal produce to promoting plant-based and vegan dishes on all their menus & sourcing ‘wines with a conscience’. their coffee beans are from @neighbourhoodcoffee ☕️☕️🤎🤎 i couldn’t recommend this cafe more. from friendly staff, to tasty dishes and a sustainable build! (with recycled wallpaper, carpet and live planes and trees! 🌿🌴🌱) in the summer, they’re introducing outdoor seating and cocktails! 🍹🍸🥂 i’ll definitely be visiting again for that 😍 {PR - invite}

Vegan Black Pepper Tofu By @foodpassionical Prep time: 10 minutes Cook time: 10 minutes (2 servings) Ingredients: 1 block tofu (400g), cut into cubes 3 cloves garlic, sliced 1 onion, roughly chopped 1 small carrot, sliced 2 stalks scallions, cut into 1 inch 2 tbsp cornstarch 1 tsp black pepper 2 tbsp oil for cooking Sauce mixture: 1 tbsp shaoxing wine 1 tsp sesame oil 1 tbsp soy sauce 1/4 tsp dark soy sauce 1/2 tsp mushrooms powder 1 tbsp vegetarian oyster sauce 1 tsp sugar 4-5 tbsp water Method: 1.) To squeeze out the water from the tofu, wrap the tofu in a clean towel and put heavy burden on top. Cut the tofu into cubes, coat with cornstarch and set aside. 2.) In a small bowl mix together all the sauce ingredients and set aside. 3.) Heat oil in a frying pan on a medium heat, pan fry the tofu till golden brown and set aside. 4.) In a same frying pan, add in the garlic and onion sauté till fragrant. Add in carrot and cook for 2 minutes, then add in the sauce mixture, tofu and black pepper. Stir to mix well, lastly add in the scallions. Stir fry to combine everything and remove from the heat. Store and enjoy!!! 🤗 2️⃣ CALLING ALL CHOCOLATE LOVERS!!! 🍫😍 ✨INGREDIENTS✨ 5 cups Hazelnuts 1/4-1/3 cup powdered coconut sugar depending on how sweet you like it - I used 1/3 cup 1/2 cup cacao powder 2 tbsp olive oil 1 tsp vanilla 1/4 tsp salt 🚨IMPORTANT🚨 do not use any water based ingredient such as plant milk, maple syrup or another liquid sweetener. It will cause the nut butter to seize up and will not be smooth and creamy. Even vanilla should be kept to a minimum - just 1 tsp tops! 🔥 First start by roasting your Hazelnuts until golden. 425f for about 10 minutes should do the trick! Place the sausages on a baking tray lined with parchment paper and bake for 16 minutes. Wash and chop the potatoes and add to a steamer tray. Wash the cavelo nero, chop and add to a second steamer tray along with the mushrooms. Steam for 10 minutes. Mash the potatoes with a little splash of soya milk, salt and pepper. Heat the baked beans and serve with the sausages, greens, mushrooms and mashed potatoes. Laidback Meatless Monday with two loves - fruit and vegetables… 💜dinner was stock sautéed sliced king brown mushrooms, yellow & green courgette slices, whole tomato, asparagus spears, red pepper, bok choy stalks & leaves, and chickpeas tossed in fresh basil, mint & coriander & lime juice, served on Kos lettuce leaves; eaten after a fruit plate with orange, plum & persimmon. 💜early afternoon tea was a ‘green’ smoothie with abundant kale, parsley, coriander, lemon Juice, acv, banana, blueberries, acai and beetroot - plus a can of drained & washed organic white beans to boost our calcium and to fortify Y for his Monday night tennis. 💜early lunch was a salad plate; and a miso and tumeric herbal blend soup with leafy greens, cherry tomatoes, chopped red capsicum & left over gf spaghetti ‘noodles’. 💜breakfast was a fruit plate, a shot of coconut water kefir, black seeds with tahini, and activated buckwheat and omega3 seed & nut cereal with Bon Soy and bananas & blueberries. 💜Y made us a luscious & aromatic soy mochaccino with cacao, cinnamon, ginger & cayenne powders. Chocolate chip cookie dough makes early mid week mornings much better! Actually, any day better in my book😉Are you a lover of cookie dough or you prefer to eat actual cookies? ✨To make the smoothie, start by blending: 🥛around a cup of almond coconut milk (any plant based milk you like will work) 🥬a small handful of steamed cavolo nero (or other greens of choice) 🥑1/2 of a little avo 🥄3 spoonfuls of almond yogurt 🥄2 heaped tbsp of vanilla plant based protein 🥄a tbsp of soaked chia seeds 💧water or more milk until you reach a consistency you like. Start will 1/2 cup and go from there. ✨To make the chocolate chip cookie dough: 🥄1 1/2 cups of oat flour 🥄1 heaped tbsp of vanilla plant based protein 🥄pinch of salt 🥄3 tbsp of tahini   🥄2 tbsp of maple syrup 🥄1/2 tsp of vanilla extract  🥄handful of chocolate chips In a medium bowl, stir together the flour, protein and salt. Add in the tahini/almond butter, maple syrup, vanilla and mix until the dough sticks together. Fold in the chocolate chips. Transfer to a small square container lined with baking paper and press down the dough with your hands. Place in the freezer for 10 minutes. Take out and cut into bite size pieces. I used some on top of my bowl along with some swirls of plain and turmeric yogurt (plain yogurt mixed with a nice pinch of turmeric), raspberries, blackcurrants, hazelnut crumble and coconut..so good and so needed today😍 Hope you’ll do or make a little something that feels like a treat today. Tofu curry with noodles and purple sprouting broccoli By @helens_vegan_kitchen Serves 4 Ingredients for the tofu: 1 large block of firm tofu, pressed 1/2 tsp ground turmeric 1 tsp mild curry power 2 tbsp coconut oil Salt and pepper Other ingredients: 1 tbsp coconut oil 1 large onion, diced 3 cloves of garlic, minced 1/2 red chilli, finely chopped Thumb sized piece of ginger, grated 200g french beans, chopped 200g purple sprouting broccoli 400ml tin of coconut milk 400ml vegetable stock 1 tsp ground turmeric 1 tbsp mild curry powder Juice of a lime 4 nests of noodles Fresh coriander and chilli to serve Method 1️⃣ Drain and press the tofu (or pat dry if you don’t have a press) then cut into bite size pieces and mix with the other tofu ingredients. Fry for 7-8 minutes then remove from the frying pan 2️⃣ In the same pan, fry the onion, garlic, chilli and ginger in the remaining coconut oil for 4-5 mins and then add the other vegetables, the coconut milk, stock, lime juice, some salt/pepper and the spices. An easy salad dressing that goes with every salad, is delicious, and has all the great nutrients you'll need for a wholesome salad: Salad dressing recipe (1 portion) ½ zucchini peeled ½ lemon juiced ½ sweet onion ⅔ tbsp tahini ⅔ tbsp flax seeds 1 garlic clove → Mix everything smooth and warm in a blender. Bang Bang Tofu Ingredients: 15.5 ounces Extra-firm Tofu 1/4 cup Cornstarch 1/4 cup Panko breadcrumbs 2 teaspoons Garlic powder 1 cup Vegan Mayonnaise 2 tablespoons Sriracha 1/2 teaspoon White Sugar 1/4 teaspoon Salt Directions: Remove extra firm tofu from its packaging and drain all excess water. Wrap in a clean kitchen towel or paper towels and gently press to extract moisture. Place a light weight on top for at least 5 minutes. Preheat the oven to 400º Fahrenheit. Slice the pressed tofu into about 32 cubes. In a mixing bowl, combine cornstarch, panko breadcrumbs, and garlic powder. Toss tofu cubes in the mixture until evenly coated. Line a sheet pan with parchment paper and spread the tofu cubes evenly. Bake at 400º Fahrenheit for 40 minutes. While baking, mix vegan mayonnaise, sriracha, sugar, and salt in a bowl to make the bang bang sauce. Once baked, toss the crispy tofu in the sauce until well coated. Pumpkin Samosas (Uzbek Samsa) By @naturallyzuzu Makes 14-15 samosas Homemade Dough 2 cups all purpose flour 1 teaspoon Salt 2-3 tablespoons avocado oil 1/2 cup hot Water 3 tbps of non dairy yogurt one handful Sesame Seeds Filling 1 medium size Butternut Squash (about 2 cups) 1 large red onion 5-6 fresh curry leaves (optional) 1 teaspoon Salt 1/2 teaspoon Pepper 1/2 teaspoon Cumin 2 tsp of coconut or date sugar 3 tablespoons Avocado Oil Method: Preheat oven to 380 degrees F. In a stand mixer, combine flour, hot water, non dairy yogurt, and salt and kneed dough for 5 minutes until dough is smooth. cover and rest for 30 minutes. Meanwhile, mince onion and pumpkin. I used my food processor to mince all the filling ingredients coarsely. Mix with salt, pepper, cumin, sugar and oil. Divide the dough into 12-15 pieces. Make a ball, dust the surface lightly with flour and roll out each dough ball into 4-5 inch diameter. Repeat the process with each dough pieces. They don’t have to be perfectly round. Fill each dough with. 2 tbsp of pumpkin mixture and fold it in triangle. Watch my highlights for step step instructions. Fill all dough wrappers with the pumpkin filling. Line cookie trays with some parchment paper. Place the samosas with folder side down on the cookie tray. Pumpkin Samosas (Uzbek Samsa) By @naturallyzuzu Makes 14-15 samosas Homemade Dough 2 cups all purpose flour 1 teaspoon Salt 2-3 tablespoons avocado oil 1/2 cup hot Water 3 tbps of non dairy yogurt one handful Sesame Seeds Filling 1 medium size Butternut Squash (about 2 cups) 1 large red onion 5-6 fresh curry leaves (optional) 1 teaspoon Salt 1/2 teaspoon Pepper 1/2 teaspoon Cumin 2 tsp of coconut or date sugar 3 tablespoons Avocado Oil Method: Preheat oven to 380 degrees F. In a stand mixer, combine flour, hot water, non dairy yogurt, and salt and kneed dough for 5 minutes until dough is smooth. cover and rest for 30 minutes. Meanwhile, mince onion and pumpkin. I used my food processor to mince all the filling ingredients coarsely. Mix with salt, pepper, cumin, sugar and oil. Divide the dough into 12-15 pieces. Make a ball, dust the surface lightly with flour and roll out each dough ball into 4-5 inch diameter. Repeat the process with each dough pieces. They don’t have to be perfectly round. Fill each dough with. 2 tbsp of pumpkin mixture and fold it in triangle. Watch my highlights for step step instructions. Fill all dough wrappers with the pumpkin filling. Line cookie trays with some parchment paper. Place the samosas with folder side down on the cookie tray. El día más lindo no puede estar para darnos self love con alimentos de verdad. Te confieso que no me gusta el Junk Food vegano, no lo tengo en mi casa y muy rara vez me embarro con una comida de esas super procesadas. A mi me encantan los colores, la comida de verdad y me gozo el proceso de transformación química y física de los alimentos al calor, marinado, aliños lo que sea pero siempre soy mas de mondar cascaras que de quitar etiquetas. Mucho junk aunque sea vegano hace daño y no hay que esperar que te lo diga un medico. Easy Vegan Laksa By @foodpassionical Prep time: 10 minutes Cook time: 10 minutes (2-3 servings) Ingredients: Laksa paste- 3 shallots 3 cloves garlic 10 gram galangal Handful dried chilli, soaked The broth- 3 stalks lemongrass 300 ml water 250 ml coconut milk 1 1/2 tbsp brown sugar or coconut sugar Juice of 1 lime Salt for seasoning 2 tbsp oil for cooking For serve: 280g noodles any of your fav noodles, cook according to the packet direction Handful bean sprouts, blanched 4 Long beans (cut into 2 inch), blanched 1 small eggplant, grilled or cooked 100g fried tofu Handful coriander Fresh chilli, sliced Method: 1.) Heat 2 tbsp oil, add in the lemongrass and sauté till fragrant. 2.) Add in the blended Laksa paste, cook for 1-2 minutes or until the paste look a bit darker. 3.) Pour water, sugar, salt, coconut milk and lime juice. Stir and mix well. Cook for few more minutes. Turn off the heat once it's boiled. (Discard the lemongrass pieces) 4.) Place the cooked noodles, vegetables and tofu in a bowl. Pour in the Laksa broth and top with fresh chilli and coriander. Day 117/366 of @ayearofwastetotaste with @liverpoolzerowaste as we commit to using at least one item of #savedfood every day for a whole year, instead of it going to #landfill or #anaerobicdigestion I loved yesterdays beans ‘n’ greens so much, I made a variation today … not quite as creamy as the melting quality that leeks bring to the dish is in a class of its own. However, chopped garlic, chilli, flat leaf parsley, runner beans, mange touts, courgette all sautéed in olive oil, added seasoning, large can of borlotti beans, and a good coupla splashes of oat milk to add some creaminess. Cook until everything is nicely softened. You could serve with any carb, but it is lovely on its own, too, and beautifully springlike. Side note: the two other people I currently cook for are not vegan, but they love my vegan food. Most restaurants are happy to accommodate a request for a raw or healthy high raw meal. Yes, sometimes the options are a salad, salad, or salad, and often not a meal-size one either. But hey, I absolutely love salad and appreciate the conversations such a request can lead to. Generally, wait staff is excited to come up with something and I ALWAYS share my gratitude for their effort. I had this lunch two days in a row when hubby and I spent time at #rickettsglenstatepark and #worldsendstatepark . The staff at this roadside eatery were incredibly kind and my little meal was perfection, in part because of their great energy. Peace to all✌️ Love to all ❤️ Eat more raw 🌱
