Vegan Chilli Tofu Tacos๐ฎ๐ถ๏ธ Taco Tuesday with a kick๐ฎโ๐จ Recipe: Ingredients: โข 400g firm tofu, pressed and cut into cubes โข 3 tablespoons olive oil โข 2 tablespoons chilli powder โข 1 teaspoon smoked paprika โข Juice of 1 lime โข Salt and pepper, to taste โข 8 small corn tortillas โข 1 small red onion, thinly sliced โข 1 red bell pepper, thinly sliced โข Fresh coriander, chopped, for garnish โข Additional lime wedges, for serving Method: 1. In a bowl, whisk together 2 tablespoons of olive oil, chilli powder, smoked paprika, lime juice, salt, and pepper. Add the tofu cubes and toss to coat. Marinate for at least 30 minutes. 2. Heat the remaining tablespoon of olive oil in a pan over medium-high heat. Add the marinated tofu and cook until all sides are crispy and browned, about 8 minutes. 3. Warm the tortillas in a dry pan, on both sides, until they get a little char and are pliable. 4. Assemble the tacos by placing a handful of the chilli tofu in each tortilla, topped with slices of red onion and red bell pepper. 5.
