The world’s first zero-waste restaurant has opened in London. It’s called @silolondon and it has no bin. Everything that isn’t eaten is turned into something else: fermented, reused, transformed. There is no such place as “away”, so nothing should be thrown “away”; everything, it seems, does belong somewhere. “Rubbish” is just stuff in the wrong place. 🥦🚫Distaste for waste… 🍅♻️ On Saturday we embarked on an eye-opening mission to save food from skips at the largest fruit, vegetable and flower wholesale market in the UK. London discards 2 million tonnes of food waste annually, valued at a jaw-dropping £2.5 billion quid. 😱 No where is this wastage more apparent than at this massive market serving London's restaurants. What's not bought on the day and is too ripe to be sold the next gets tossed straight into skips outside - it's not even composted. Much of it still perfectly edible.
