Dreaming of last nights dinner 😍 the scallops enrobed in beurre blanc were life changing. Oysters were perfectly briny and I usually pass on mignonette but this spicy one was perfect (great flavor but didn’t overpower). Beef Wellington was exceptional (and no, we didn’t order it well done, it was a perfect med rare but glazed in a black truffle sauce which makes it look more done than it was). Thanks to @namikazehawaii I may never enjoy ahi again—their tartare was beyond flawless and I’m not sure another tuna dish can top it. Impossibly fresh fish that had layers or complexity and flavor that didn’t overpower the fish. Corn croquettes also had the most fluffy interior with a shattering but light crust. I’ve raved about the wonders of tempura in a previous post and I thought it was time I actually posted a recipe. What’s great about tempura, is one doesn’t even need a recipe. It’s a casual way to cook where you can freestyle or improvise. So long as the oil is at the correct temperature and the batter is the right consistency, the rest of the process is a total breeze. I’d go far and even say that tempura asparagus is one of the best vegetables I’ve ever made in the history of my cooking chronicles. And the shrimp/prawns are always flawless. To top it off, I even have a dipping sauce recipe that’s so easy to throw together and is the perfect accompaniment to tempura—plus so many other things. Based off a @rick_bayless recipe, this salad of roasted beets, poblanos, and red onion is tossed together with a complex, bright, yet rich dressing and finished off with shaved manchego and chopped marcona almonds.
