This time, I attended a wonderful World Gastronomy conference in @gastromasa. Where I spoke about the transience of sushi and the once-in-a-lifetime encounters. Nowadays, we have the opportunity to hear Japanese food words such as “Umami”, “Ikejime”, “Dashi”, “Omakase” etc…. all over the world. This time, I did not focus on technical matters, but on the most important sense before the technology that you don’t usually come into contact with. In this day and age of digitalization and AI, I, as a Japanese chef, would like to talk about the importance of cultivating the Japanese sense of “Wabi Sabi 侘び寂び”and how developing human power and beauty called training”Syugyou 修行” I think it is very important to talk about the aesthetic sense of a chef and the thoughts that are put into one piece of sushi abroad. "Aka Kirishima" is one of Kirishima's long-selling products. Behind the birth of this shochu is the story of a man who put his heart and soul into sweet potato research. The pioneer behind sweet potato research was Dr. Yamakawa. The development of Aka Kirishima began with the desire to "create shochu with a taste like no other that would be accepted throughout Japan." Conventional sweet potato breeding takes 10 years. However, Dr. Yamakawa was given only five years. After six years of patient breeding and repeated brewing trials, the “Murasaki Masari” sweet potato and Aka Kirishima was born. Yesterday we had the great honor to visit Bungo Meijyo in Saiki, Oita Prefecture, and see where beautiful Kariu Shochu and Ubugoe are produced. It was very interesting to see the factory and of course the people behind this great Shochus. A wonderful shochu has arrived in the Netherlands! Do you know shochu? Although it might not be familiar in Europe yet, but production in Japan began around the 15th century, and along with sake, now it is one of Japan’s super representative national alcoholic beverages. Simply said, it is a kind of spirits, distilled drink from an alcoholic drink made with koji. There are many ways to drink it, on the rocks, straight, with water or soda, with hot water, and as a cocktail base, very a lot! Shochu comes in a variety of flavors depending on the raw materials and manufacturing methods. So I can’t explain it easily here, but to put it simply, it’s a very attractive and delicious drink! Now, delicious shochu has arrived from Saga, Japan. It’s barley shochu. Barley is MUGI we call in Japanese. Therefore, this shochu was named MUGY😄by producer Munemasa breweries @munemasa_brewery In addition to barley, this shochu also uses rice and of rice koji, allowing you to enjoy the clear aroma of barley and the rich, deep flavor of rice. And, there is one more feature: Lemongrass is added to the ingredients of this sake. Super lekker. When you mix this alcohol with soda, you can go to the super refresh relax world. Sentite un lamento, una vocina come di bambino che chiama aiuto. Correte nella sua direzione, intravedete una forma piccola e scura nell' acqua, tendete il braccio verso di essa. Una mano viscida vi afferra con forza sorprendente e con uno strattone vi trascina a sé. Mentre cadete in acqua lo intravedete per un istante nell' oscurità: un carapace di tartaruga, un becco sovrastato da occhi da rettile e una cavità nel cranio da cui gronda acqua sui capelli radi.
