Boniato con arroz y seitan rebozado en salsita de miso dulce Boniato rojo, arroz, seitan esponjoso, huevo, panko o pan rallado, miso claro, aceite de sésamo, salsa de soja, mirin y sake. 1-Prepara el horno y embadurna en aceite de sésamo el boniato. Mételo como 40-50 min al horo. 2-Mientras, mezcla en un cazo una proporcion 1/1/1/1 la salsa de soja, mirin, sake, miso y reduce. Puedes añadir un pelín de azúcar -yo no lo hago. 3-Prepara un arroz gohan y reserva. 4-Escurre muy bien el seitán y córtalo al grosor que te guste. Sweet Potato Quiche Florentine: The Shrinky Dink Edition! 🤦♀️🤯 by @shicocooks Remember my Potato Pie that stole the show? You demanded a sweet potato upgrade, so I took one for the culinary team. Heads up: Sweet potato crust has shrinkage issues! Tower it up in the pan. It might not be crispy, but the taste? Pure deliciousness. Confession: I’m team regular potato, but this sweet experiment? Tasted like a victory! 🥔🚀 Ingredients: • 2 sweet potatoes (500g) • 2 tbsp olive oil (divided) • Salt to taste • Pepper to taste • 1 tbsp butter • 1 shallot (sliced in half-moon) • 1 clove garlic (minced) • 180g spinach • 3 eggs • 100g heavy cream • 100g milk • 1/3 tsp nutmeg • Zest of 1 lemon • 80g Gruyere cheese Method: 1. Boil the sweet potatoes, then transfer to a greased 20cm baking tin and crush. Press firmly to create the sides (build them high as they will shrink!). Drizzle with olive oil, sprinkle with salt and pepper, and bake in a preheated oven at 200°C (fan) for 40-45 minutes. 2. In a frying pan, melt butter, add shallot and garlic, cook until softened, then add spinach. Cook until wilted and set aside (if the mixture is too watery, drain the spinach). 3. Whisk eggs, cream, milk, salt, pepper, nutmeg, and lemon zest. Add Gruyere cheese and whisk well. Pour this mixture over the sweet potato base after adding the spinach. 4. This is a mash up of two recipes. The idea came from @veg.corner , Sweet potato with hummus, lentils and pistachio pesto. I swapped the lentils for, Seared lemon and Sumac marinaded chickpeas, from plantbaseddrd.com . I cooked these rather than having them cold as my gut hates raw onion and garlic. Sweet Potato Casserole Ingredients: 3 cups mashed sweet potatoes (about 2 large sweet potatoes) 1/2 cup milk 1/4 cup melted butter 1/4 cup brown sugar 2 eggs, beaten 1 teaspoon vanilla extract 1/2 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1/4 teaspoon salt Topping: 1/2 cup chopped pecans 1/4 cup all-purpose flour 1/4 cup brown sugar 2 tablespoons melted butter Instructions : Preheat oven to 350°F (175°C). Obviously you can’t go wrong with a classic jacket potato but why not make it sweet 🤭 I cooked my sweet potatoes in the oven for about an hour to get a nice baked skin! Not really soup weather but I had a quarter pumpkin that needed to be cooked, so pumpkin soup for dinner it is…🎃😉 Also wanted to make croutons from a baguette 🥖 I had left over. Usually I’d use butternut squash for this recipe but kent pumpkin works too. Roasted the pumpkin, yellow capsicum, carrots and sweet potato 🍠 for an hour at 180 degrees Celsius. While that is roasting, I caramelised roughly chopped onions 🧅 and a few garlic cloves 🧄 Added some chilies, grated ginger 🫚, paprika, coriander and turmeric. Once the other veggies were roasted, I added all that to the pot with stock and coconut milk. Cooked for a short while and blended in the Thermomix till nice and smooth. SWEET POTATO HUMMUS PANCAKES 🥞 The most delicious pancakes I’ve ever made 💥 We added cauliflower in the second batch and even the chef here was surprised at how good they were. Hidden veg… great for kids 🙌 RECIPE for 3 small ones: 1/2 sweet potato or the hummus (we made a plain one with just sweet potato, 60g plump chickpeas, olive oil, lemon). 1 banana 1 handful oats 1 large dash almond milk Ground cinnamon and ginger 1 tsp honey (You can add any other veg you want to use up, which also gives different colour pancakes such as green or pink with spinach or beetroot) Blend the ingredients in a blender and then dollop a spoon in a heated pan with melted coconut oil.
