LOW STOCK ALERT ~ only 38 bottles left of our terracotta-fermented Chardonnay. A unique blend of sustainably grown grapes. 10% of the fruit was skin-fermented, while another 10% was dried out prior to fermentation using the appassimento method, as a means to concentrate flavors. The remaining 80% was pumped into a porous, terracotta vessel to ferment with ambient, natural yeast before blending everything together. Sweet corn, bruised yellow apple and ripe pear, lightly oxidative from extended aging in our terracotta amphora. Subtle tannins from light skin contact and a nutty finish. Along the way through Cornell's campus, this waterfall captured my attention as it was such a magnificent sight to be found right next to a college campus. This waterfall is found along the river spilling out of Cayuga lake, one of the chain of finger lakes in upstate New York. Newman Arboretum has been voted the #1 most beautiful college arboretum. Just a 12 minute drive from the heart of downtown Ithaca, it takes about 10 minutes to drive through the whole thing, but there’s so much to explore! It is a really scenic spot to take a walk or have a little picnic under one of the beautiful trees, listening to the birds sing and breeze rustle the leaves. There’s plenty of wide open space for the kids to run around! There are many different areas of the arboretum, so check them all out - the ponds filled with turtles, geese, and fish, the gong, the sculpture garden…we have yet to see everything.
