| Salty, sweet and herbaceous. One of two butters that accompany Beau’s coal-fired bread. Unsalted thyme-infused butter dipped in burnt butter finished with a salty dust of popcorn and a drizzling of wild fynbos honey infused with lavender from our garden. Thyme is a wonderful partner for both the sweet and savoury elements of this butter and even assists in enhancing its natural flavour. The preparation is complex, has multiple steps and involves a mastery of temperature control and technique. Happy Earth Day, Planet!   As much as we love our vines at Beau Constantia, we also understand that they live amongst many other species of plants, insects, birds, small animals, and even us – the humans! As the human element at Beau, we believe that we all have a shared responsibility for the health of our planet and that we need to work together to achieve this goal.   Two weeks ago, we finished harvesting our grapes and today we finally finished hand-sowing various inoculated and/-or prepared seeds onto our soils to create increased biodiversity, fight weeds, feed nitrogen and preserve soil moisture. Our cover crops for the year: Field Pea, Haymaker Vetch, Crimson Clover, Saia Oats, Pink Serradella, Barley Silage, Triticale, White Mustard, Canola, Lupins, Medic and Japanese Radish. So, as our vines begin to shed their leaves and enter a period of well-deserved rest, look down towards our soils and behold the beginning of an entirely new life cycle. Created by general manager Tyrone, it’s an amped up variation of the classic Boulevardier that is a variation of another famous cocktail, the Negroni. Hence the muddling. Ivor has loved working with stencils since his Test Kitchen days. Constantia🍇🍇🍇 По дороге в Кейптаун мы видели большое количество виноградников. В сочетании с видом гор - загляденье. В тот момент промелькнула мысль "вот бы погулять там". А когда мы открыли для себя прелести красных автобусов, то смогли и воплотить эту идею. ЮАР довольно крупный мировой производитель вина - 8 место. Следовательно, виноделен там в избытке. И каждая не прочь провести для тебя экскурсию с дегустацией. А если ты пожелаешь, то можно и остаться переночевать. Но это для тех, у кого есть время и средства. Мы же были ограничены. Да и если честно, то я такой себе спутник на винодельни, со мной даже выпить нельзя😂 Поэтому мы ограничились простым посещением, так сказать посмотреть что это и как это. В этом нам помог наш красный автобус, доставивший нас в район Constantia. Constantia старейший винодельческий район, расположенный в пределах юго-восточных склонов гор, разделяющих Кейптаун и залив Фолс Бэй (False Bay). На этой небольшой территории под виноградники отведено 500 га и расположено всего семь хозяйств. Первой нашей остановкой стала старейшая винодельня Южной Африки – Groot Constantia. Это было одно из первых винных поместий, основанное губернатором Капской Провинции. Отсюда берет начало прекрасная традиция виноделия в Южной Африке. Мы погуляли по ухоженной территории, посмотрели постройки и виноградники. Естественно, весь досуг этого места сосредоточен на винах и их дегустации. Поэтому делать там особенно нечего, особенно непьющим людям 😂 Для разнообразия мы решили посетить ещё одну винодельню, расположенную чуть выше - Beau Constantia. Как я поняла, она видовая, ибо обзор потрясающий. Я даже немного загрустила, представив, как мы могли сидеть с Крис с большими бокалами вина и обсуждать их вкусовые особенности 😂 А так, мы только насладились красотой момента 🥰 Бонусом, в лучших традициях своей авантюрной натуры, я умудрилась получить веткой дерева по своему прекрасному лбу😂 Зато на втором этаже автобуса прокатились😂😂😂 #BeauConstantia #BeauConstantia #o5vittske #9марта2023

| Linefish sashimi, BBQ Southeast Asian pickle, yuzu and aromatic herb At Beau, dishes are layered. Layers of flavour and layers of components. This one, the kitchen’s Sashimi Version 12.0 at least, starts with thinly sliced freshly-caught linefish, then a rich and smoky fresh coconut pickle cooked in the bbq oven, topped with a scattering of herbs and greens. Binding these layers and lightening it all up is yuzu gel, made with fresh Peruvian mint. | Braaied Karoo Lamb, whipped ricotta, BBQ Ras El Hanout Dressing & Pomme Dauphinoise The oven is our identity. Salt + fat + heat = succulence and a killer crispy crust. Beau’s lamb saddle is scored and sprinkled with Maldon salt and slow-cooked in the open coal oven before a final flash of high heat for optimal crunch. The coal oven imparts so much flavour to the lamb.
