The peak crop is May/June - September/October, but there is also a fly crop in February/May and there are smaller amounts of harvesting during the other parts of the year as well. There are flowerings and growth all year long. As we specialize in PNG, we stagger shipments year-round from the early/mid/and late peak crop and the fly crop. We always have landed coffees with more afloat and we build containers around our core partners’ usage and forward bookings. As consumer demand for tastier, healthier, and more ecological coffees continues to grow, check out why shade grown coffees help support all three objectives. ● Shade grown coffee requires little or no chemical fertilizers, pesticides, or herbicides. The shade trees filter carbon dioxide which causes global warming, and aid in soil moisture retention which minimizes erosion. ● Migrating bird populations have been in rapid decline since the introduction of “sun” coffee and the consequent destruction of rainforest for more coffee plantations. As many as 90 species of birds have been identified on the shade coffee farms we work with. ● Coffee plantations which are chemically dependent suffer from soil depletion and increased erosion. We had a team cupping today at the 'HeadyQuarters' that was delicious and tremendously insightful. We are proud to have joined @robhoos and @benchmarkcoffeetraders on a journey to investigate how different approaches to roasting coffee varietals can impact the varietal’s flavor. The first leg of our expedition started in Papua New Guinea with three cultivated varieties from the Sigri Estate. We cupped a Typica varietal, a Maragogipe varietal, and a Castillo varietal. These were all roasted at a "standard" roast level and then at an "optimized" roast profile. The "standard" and the "optimized" roast highlight how the roast approach can alter each varietal's flavor profile. The findings were exciting! We can't wait to share what we learned today with you! Our future roasts will have traces of the methods and techniques we studied in the lab today. As always, we strive to be at the forefront of coffee roasting and will never stop researching ways to improve the flavor profiles of our roasts! A great coffee with a great cause? Look no further than our current coffee, Bunum Wo, from our friends (and frequent F&H espresso drinker) @benchmarkcoffeetraders. Both Benchmark and roaster-partners have teamed up to fund new clean water tanks for community villages that are in need. Two have been fully installed and a third is planned. This will provide clean water access for roughly 900 people. Benchmark pays the estate directly for coffee. Direct payment ensures an ability to know where your money went and ensures that purchases directly support actual coffee production and estate social programs, not premiums for unnecessary intermediaries. Three words - Anaerobic, Maragogype, Elevation. These are the key ingredients that make Big Red truly one of a kind. The extended anaerobic fermentation this coffee undergoes gives it a bold and vibrant flavor profile you will be writing home about. This variety of bean is known as a Maragogype, or an “Elephant Coffee Bean”, named for its large size, almost three times the size of the average coffee bean. Grown at 1600 MASL, a crop at a high elevation such as this experiences drastic temperature swings from night to day. The cold slows sugar development in the coffee cherry and that is associated with better cup profile characteristics and sometimes acidity to boot. Even though the island boasts ideal growing conditions due to incredibly fertile volcanic soil, it makes up less than 1% of the world’s coffee production. Transporting coffee from the highlands to the nearest port is an incredibly challenging journey. Deterioration, wash outs, and massive potholes in the roads make the trip slow and grueling. You know how a stew tastes better the next day? Resting time makes a huge difference. These conditioning bins are used to let the beans rest and acclimate after sun drying is completed. This helps even out moisture content through the batch. In addition to even moisture content, some magic happens during resting. The unconditioned beans we cup aside conditioned beans consistently come out thinner in body and lacking in intensity. Why do we do what we do? . Coffee production in PNG is 85-90% smallholder coffees. Coffee, almost entirely, follows the same chain of custody: smallholder to cherry buyer to miller to exporter to importer to roaster. Changing hands this many times leads to three significant adverse outcomes: 1) the most vulnerable in the supply chain, the smallholders, are taken the most advantage of 2) Even a basic level of traceability becomes impossible. 3) Quality becomes very difficult to manage .
