Buenas tardes compis ,vamos a por el Martes🥰🥰 Hoy os traigo unos DUMPLINGS RELLENOS DE CARNE PREPARADOS EN THERMOMIX6 Y A LA PLANCHA Ingredientes: 🥟400g Carne picada de cerdo 🥟Una cucharita de sal 🥟15 g de azúcar 🥟1/2 pimienta blanca @carmencita_especias 🥟Una cucharita de aceite de sésamo tostado 🥟15g de salsa de Soja 🥟50ml de agua Preparación: Masa: 250 g de agua 15g de azúcar 1cucharita de levadura de panadería deshidratada 500g de harina de trigo 1/2 cucharita de sal 5g de aceite Montaje y terminación: Una cucharada de aceite 100ml de agua Una cucharita de semillas de sésamo negro ( yo no tenía) Una cebolleta en rebanadas ( tampoco me quedaba😁) Preparación: Poner la carne de cerdo,la sal,el azúcar, la pimienta,el aceite de sésamo,la salsa de soja y el agua mezclar 20seg/vel3 Amasar 🌾/1minuto Reservar en un bol tapado en la nevera Masa Poner en el vaso el agua,el azúcar y la levadura 2 minutos/37°/vel 1 Añadir la harina,la sal y el aceite amasar 🌾/3minutos Retirar la masa hacer una bola ,tapar y dejar reposar 30 minutos Dividimos la masa en porciones con forma de bola ,extenderla y hacer un círculo rellenar y cerrar haciendo pliegues tapar y dejar reposar 15 minutos Calentar una sartén antiadherente con una cucharada de aceite y poner los Dumplings tapar y dejar que se doren Agregar 50 ml de agua tapar dejar que se cocine 5 minutos Poner otros 50ml de agua tapar y otros 5 minutos y listo 🤤🤤🤤 Deliciosos🤤🤤🤤 #enreaenmicocina #drumplings #recetasdeliciosas #recetasfaciles #carmencitaespecias #conthermomix #thermomix6 #thermorecetas

Pelmeni cooking Ingredients: Dough: 260 g flour, 1 egg, 5 g salt, 1 / 2 cup of water Filling: 230 g beef 2 onion salt,black pepper,cumin, 50 g water, 1 egg ,oil 2 spoon Method: 1. Mix water with eggs and salt. Stir well until the dough is soft and stretchy. Leave the finished dough for 20 minutes 2. To prepare the filling you should grind beef and onion, add salt, black pepper, oil, and water and mix well. 3. Divide the dough into several portions and roll them out into very thin strips. Drop a tablespoon of minced meat on the dough strip at a distance of 5-6 cm from each other. Cut the circles out with a glass. Squeeze the edges together all the way around. 4. To cook pelmeni, boil much water and salt it. Drop pelmeni into boiling water. Don't forget to stir them from time to time. ➖KITCHEN LIFE: 📍 Drumplings, Winter 2019 (Melbourne, Victoria, Australia) 🇦🇺 [Throw🔙 May - September 2019] ➖ Bacon and Cheese Roti: • Smoky Bacon, Melted Cheddar, Spring Onion wrapped by a Grilled Flaky Roti sided with a Tomato Kasundi Relish & Coriander 🥓🧀🥞🍅 ➡ Throwback to my time working at Drumplings in Melbourne. The Bacon and Cheese Roti was an item created for the breakfast and brunch menu. We used the Indian-inspired Grilled Flaky Roti that we already used in another dish as a base, wrapped it with some bacon and cheese for a breakfast/brunch feeling! Keeping on the Indian vibe (as one of our headchef travelled the world and like Indian food), we side that with a Kasundi, a kind of Indian Relish (habitually, it's more like a mustard/yellow relish) but our chef wanted a tomato/red version inspired by Indian Eastern-region cuisine. --- A good dish that has some comfort food and Fusion Indian vibes thus. I liked it on some quick breaks/brunches or breakfasts (see picture 3, quickly made one for myself in the kitchen, while the others come from Drumplings' social medias/photographers haha). However, on huge kitchen/work days/shifts, it wasn't that filling aha... Even if there is a saying that working in a kitchen, you have less appetite because you smell and taste food non-stop...! 😋
➖ KITCHEN LIFE: 📍 Drumplings, Winter 2019 (Melbourne, Victoria, Australia) 🇦🇺 ➖ French Toast Bao: • "French Toasted/Grilled"Gua Bao, stuffed with Chili Chocolate Ice Cream, Poached Pear Slices & Ginger Syrup 🍐🍦🌶️🍫🍨 ➡ Throwback to my time working at Drumplings in Melbourne. Here is the last dessert Bao that was on the winter menu, a crowd pleaser during brunch! Most of the pictures are from Drumplings social medias except the second one, which was mine/one I made in the kitchen aha! A very nice dessert which required more time than it seems, especially on busy shifts! We had to steam the gua bao first, then grill it on a plancha. I wasn't the best at scooping ice-cream as well sometimes/underpressure! 😜 Prepping poached pears and slicing them was nice. Worst part was putting the ginger syrup in tiny bottles as we didn't have enough of them on busy days and had to collect all the bottles back/clean and fill them again... Sometimes "influencers" would ask for several bottles for their IG drizzling shots (sometimes not emptying a whole bottle, and sending them back to us and we had to do the process all over again🙄😠😂)! We would also run out of bottles so we would put the syrup on bowl (see picture 9).😜 --- It's now Winter again in Melbourne while we're getting a hot summer in Europe, maybe it's time for me to make my own version and share a recipe here! 😁

Here are 2 others variations of the "Drumplings Dessert Bao", as we used to have 3 versions rotating weekly. Pictures are from Drumplings social médias taken by photographers or customers. These items are not anymore on the menu so maybe I'll make some at home for the nostalgia... 😜 Particularly craving the one with banana and chili chocolate ice cream (I would try to make one with Belgian Chocolate and Piment d'Espelette though, see previous post) 🤤. --- Here you have variations with housemade pineapple jam and we would serve the deep fried crispy bao (normal flavour or a coconut bun one) with "pandan" ice-cream or a "piña colada" one (see the 2 last pictures).
➖ KITCHEN LIFE: 📍 Drumplings, Winter 2019 (Melbourne, Victoria, Australia) 🇦🇺 @drumplings ➖ Moneybag Assortment (Vegan) • Orange / Sweet Potato: Sweet Potato, Lemongrass & Coconut 🍠 • Yellow / Curry: Curry, Pumpkin, Vermicelli 🎃🍛 • White / Tofu: Tofu, Ginger, Pickle, Chive • Green / Spinach: Spinach, Yam Bean, Shallot ➡ Some vegan dumplings with 4 differents colours and flavours! At first it would seem to be some flashy flavourless vegetarian/vegan dumplings but their fillings are complex and interesting actually! Usually sold by baskets of 8 (2 of each 4 varieties ), I often had some extras/unsold ones as a afterwork late dinner or taken away to home for next day lunch, aha!
➖ KITCHEN LIFE: 📍 Drumplings, Winter 2019 (Melbourne, Victoria, Australia) 🇦🇺 @drumplings ➖(NOT) Avocado Smash Slider: • Fresh Diced Avocado, Cherry Tomatoes, Puffed Tofu, Edamame, Coriander, Spicy Tomato Sauce and Spices, Grilled Bao Slider & Cassava Chips 🥑 ---- ➡ Throwback to a dish that used to be on Drumplings' Menu during the 2019 Winter, when I worked there. That was one of the item done mostly during brunch and a good-selling vegan option. I personally find it interesting to prepare and eat...! But it was kind of a hassle to prepare it, as all its ingredients where used in other preparation/dishes from various parts of the menu/cooking stations-sections, cooking-wise (frying/slicing/steaming,grilling, etc...)! I guess that is why it has been removed from the mbu, but I'd love to make a homemade version by myself. Pictures come from Drumplings' social medias but the 3rd one was the 1st time the executive chef made it in front of the kitchen, when it was still not the final version. Anyway, it's an interesting vegan dish that I enjoyed eating... Who said vegan/vegetarian food had to be boring?
