Banana Scones with Peanut Butter Glaze These banana scones are light and moist and full of banana flavor. To push them over the edge, I covered them with a smooth peanut butter glaze. This scone is perfect with your favorite morning cup of coffee. 2 cups flour ½ cup brown sugar 2 ½ teaspoons baking powder ½ teaspoon salt ½ cup unsalted butter, cold 1 large egg 1 banana, mashed 1/3 cup heavy whipping cream 1 teaspoon vanilla 1 cup powdered sugar ½ cup smooth peanut butter 1/3 cup heavy whipping cream 1 teaspoon vanilla ½ teaspoon salt Preheat oven to 400 degrees. In a large bowl, add the flour, brown sugar, baking powder, and salt. Work in the butter just until the mixture is crumbly. It is ok to have some larger chunks of butter. Stir in the mashed banana, heavy whipping cream, and vanilla. Stir until dough ingredients are moistened and hold together. Line a baking sheet with parchment paper. Pat dough into 8” circle, about ¾”thick. Slice into 8 wedges. Bake for 15-18 minutes or until golden brown. Let cool. While scones are cooling, make the glaze. Chocolate Biscuits These biscuits taste like a pastry you spent hours on, but they actually come together quickly. The biscuits have rich, dark chocolate spiraling throughout the biscuit. I used a dark orange chocolate but use mom’s favorite chocolate. These are a must on your Mother’s Day Brunch Board. Dough 2 cups flour 1 tablespoon sugar 1 tablespoon baking powder ½ teaspoon salt 5 tablespoons unsalted butter, cut into small pieces ¾ cup whole milk Filling 3 tablespoons unsalted butter, softened 2 tablespoons sugar 4.4-ounce dark orange almond chocolate bar, chopped Topping 1 large egg yolk 1 tablespoon whole milk Glaze 1 cup powdered sugar 1 teaspoon vanilla 3-5 tablespoons heavy cream Dough: Preheat the oven to 400 degrees. Line a baking sheet with parchment paper. In a medium bowl, whisk the flour, sugar, baking powder, and salt until well blended. Using your fingers, work the butter into the dry ingredients until crumbly. Add the milk and stir with a fork, until a rough dough forms. Turn the dough onto a lightly floured surface. Gently form a ball, then gently knead. Using a floured rolling pin, roll into a 13x11 inch rectangle. Spread the butter on the dough, then sprinkle with sugar and chocolate. Beginning with one long side, tightly roll up the dough. Using a sharp knife, cut the roll crosswise into 12 slices. Arrange the slices, cut side down on the parchment paper. In a bowl, mix the egg yolk and milk until blended. Brush the biscuits with the egg wash and sprinkle with sugar. Bake the biscuit until golden brown, about 15-18 minutes. Transfer to a wire rack to cool for 5 minutes. Top with powdered sugar glaze. Best served warm or within a few hours of baking. Glaze: Mix powdered sugar and vanilla. Add one tablespoon at a time of heavy cream until desired consistency. Top the biscuits with the glaze and let set. #chocolate #biscuits #easy #chocolate #orange #tasty #sogood #mothersday #brunch #board #family #thyme #familythyme

Sausage and Cheese Biscuits These are my favorite breakfast biscuits. They are filled with sausage and cheese and pair perfectly with eggs. They are best eaten the same day so freeze if you won’t be eating right away. You can reheat as needed, so enjoy for breakfast every morning. 2 cups flour 3 tablespoons cornstarch 1 tablespoon baking powder ¼ teaspoon baking soda 1 teaspoon salt 1 ½ tablespoons dried thyme ½ cup butter, cold, cut into chunks 2 cups thinly sliced cooked maple breakfast sausage links 1 cup shredded Cheddar cheese 1 cup buttermilk Preheat oven to 425 degrees. Line baking sheet with parchment paper. In a large mixing bowl, combine the flour, cornstarch, baking powder, baking soda, salt, and thyme; blend. Add the butter and combine until the mixture resembles coarse sand. Stir in the sausage and the cheese. Fold in the buttermilk until the dough comes together in a sticky mass. If the dough seems dry, add 1-2 tablespoons more buttermilk. Do not overmix. Using a tablespoon, scoop 12 mounds of the biscuit dough onto the prepared baking sheet, spacing evenly apart. Do not compact, they should have an irregular shape. Bake the biscuits 15-17 minutes, until golden brown. The biscuits are best served warm out of the oven. #maplesausagelinks #shreddedcheese #biscuits #breakfast #warmoutoftheoven #eggs #freezeforlater #sausage #family #thyme #familythyme

Bacon Jam Bacon jam is so simple to make: bacon, onions, and brown sugar are slowly simmered until thick. You can use bacon jam as an addition to your appetizers or as an awesome burger topping. However you decide to use it, you will make it again and again. 1 ½ lbs bacon 3 extra large, sweet onions, thinly sliced ¾ cup brown sugar ½ cup water ½ cup strong brewed coffee 2 tablespoons balsamic vinegar Cut the bacon into small pieces and add them to a large frying pan. Cook over medium-high heat for about 10 minutes, stirring frequently until the bacon is cooked but still chewy. Use a slotted spoon to remove the bacon from the pan. Remove all but 1 tablespoon of the bacon grease. Add the onions to the pan and cook for about 8-10 minutes, then reduce the heat to low. Add the sugar and stir. Continue to cook until the onions have caramelized, about 15-20 minutes. Add the bacon back to the pan, along with the coffee and water, and increase the heat to medium. Continue to cook, stirring every few minutes, until the onions are thick and the consistency of jam, about 30 minutes. Remove from the heat and stir in the balsamic vinegar. Use immediately or refrigerate for up to a week. Bring to room temperature before serving. Makes about 3 cups. Enjoy! #bacon #jam #caramelized #onions #balsamic #vinegar #addictive #appetizers #burger #topping #family #thyme #familythyme

Artichoke & Pancetta Cheese Pizza Pizza is always a family favorite because the flavor ideas and combinations are endless. Have fun mixing and matching your favorite toppings. This pizza has sauteed shallots, marinated artichokes, smoky pancetta and 3 different cheeses. I use pre-made pizza crust so this pizza comes together quickly. 1 premade pizza crust (I used Market Pantry original pizza crust) 1-2 tablespoons olive oil 3 shallots, thinly sliced 4-ounce package pancetta 1 cup marinated artichoke hearts, drained and chopped 1 cup shredded fontina cheese 1 cup shredded mozzarella cheese 8-ounce ricotta cheese Preheat oven to 400 degrees. On a pizza pan, spread a thin layer of olive oil (1-2 tablespoons) over the pizza crust. Over low to medium heat, sauté the shallots and pancetta. Chocolate Chip Pecan Bagel Strata A breakfast bread pudding; what could be better than that! A layer of caramel on the bottom with chocolate chips and pecans scattered throughout the cinnamon sugar bagels. You can prep this in advance and bake it fresh in the morning. Drizzle with maple syrup for the perfect bite. 8 large eggs 1 ½ cups whole milk ½ cup maple syrup 1 teaspoon cinnamon, divided 1 teaspoon vanilla 1 teaspoon salt, divided ¼ teaspoon nutmeg 5 plain bagels, cut into pieces ½ cup unsalted butter ½ cup dark brown sugar 1 cup chocolate chips 1 cup pecans, chopped 2 tablespoons sugar Preheat oven to 375 degrees. While the bagels are soaking, in a small saucepan, melt the butter over low-medium heat. Once melted, add the brown sugar and ½ teaspoon salt. Whisk until the mixture is thoroughly combined and caramel-like; 5-10 minutes. Pour the mixture into the greased baking dish and spread it evenly over the bottom. Add the chocolate chips and pecans to the bagel egg mixture. Stir to combine. Pour the bagel mixture into the baking dish. Sprinkle the top with the ½ teaspoon cinnamon and two teaspoons of sugar. Birthday Tiramisu Tiramisu is at the top of my favorite desserts. What is not to love? It is a rich and creamy dessert with coffee liqueur, mascarpone cheese, espresso, and cocoa powder. This is the dessert I chose for my birthday this year. I knew I couldn’t go wrong and what better way to ring in the next year! 8-ounce container mascarpone cheese, softened 1/3 cup sugar ¼ cup coffee liqueur ½ teaspoons vanilla 1 cup heavy whipping cream 30-36 crisp Ladyfinger Cookies 1 cup strong brewed coffee 2 tablespoons unsweetened cocoa powder In a bowl, beat the mascarpone cheese, sugar, coffee liqueur (I used @5Rocks coffee liqueur), and vanilla. Beat for 3-4 minutes or until light and creamy. In a separate bowl, whip the heavy whipping cream to firm peaks. Fold the whipped cream into the mascarpone cheese mixture. In an 8x8 pan, arrange half of the ladyfingers (breaking to fit as necessary). Drizzle with half of the coffee. Top with half of the mascarpone cheese mixture, spreading until smooth. Sprinkle with 1 tablespoon cocoa powder. Arrange the remaining ladyfingers over the cocoa. Drizzle with the remaining coffee. Top with the last of the mascarpone cheese mixture, covering the top. Sprinkle with 1 tablespoon cocoa. Cover and refrigerate for at least 4 hours; preferably overnight. Sweet Brown Butter Bacon Pasta This pasta dish has only a few ingredients, but the flavor is amazing. Sweetness comes from honey, the brown butter adds a warm, nutty flavor, and the bacon adds saltiness. All the flavors come together for an explosion of tastiness. Once cool, chop and set aside. Brown the one stick of butter in a medium sauté pan (cast iron skillet) over medium heat, stirring constantly. As it melts, it will begin to froth and bubble. The butter will become light brown and have a nutty aroma. Add the honey, stirring constantly. Remove from the heat. Add the pasta and bacon and toss to coat evenly. Coffee Marshmallows  Homemade marshmallows are great for parties and hostess gifts. The taste beats store-bought any day! Marshmallows are fun and easy to make, and the flavor combinations are endless.   ¼ cup powdered sugar  ¼ cup cornstarch  Vegetable oil, for pan  6 tablespoons instant espresso  1 cup boiling water  2 (1/4-ounce) envelopes unflavored gelatin  1 ½ cup sugar  2/3 cup light corn syrup  In a small bowl, sift together the powdered sugar and cornstarch. Brush the bottom and sides of an 8-inch square baking pan with vegetable oil. Cut an 8x12 inch sheet of parchment paper to cover bottom and 2 sides of pan. Brush parchment with oil and coat parchment and pan with half of the powdered sugar mixture. Set aside.  In a small bowl, dissolve instant espresso in boiling water. Set aside to cool to room temperature. In the bowl of a stand mixer, add ½ cup espresso. Sprinkle with gelatin; set aside. In a medium pot fitted with a candy thermometer, combine the sugar, corn syrup, and remaining ½ cup espresso. Bring to a boil over high heat. Reduce heat to medium and cook until mixture reaches 240 degrees. Remove from heat.   Beat gelatin mixture in a stand mixer for 30 seconds. While running, pour in the sugar-corn syrup mixture in a slow, steady stream down the side of the bowl. Increase mixer to high and beat until very thick, ribbony, and doubled in volume; 12-15 minutes.  Pour marshmallow into prepared pan. With damp fingers, smooth the top. Sprinkle remaining powdered sugar mixture over top. Let rest, uncovered, about 4 hours or overnight. Invert marshmallow onto a dry surface and discard parchment. Dust off excess powdered sugar. Dust knife with powdered sugar, then cut marshmallows into small squares. Dip the edges in the excess powdered sugar mixture on the work surface. Store in covered container.  #homemade #coffee #marshmallows # parties #hostess #favors #gifts #betterthanstorebought #treats #yummy #family #thyme #familythyme

Jalapeno Cheese Dutch Oven Bread  Who doesn’t love fresh bread? This yeast bread is crusty on the outside and fluffy on the inside. It is great as a side with your favorite soup, or you can use the leftovers to make a tasty sandwich. Any way you choose, it is delicious. Adapted from the Chunky Chef.  3 ½ cups bread flour  1 ½ teaspoons salt  2 cups shredded cheese (I used pepper cheese), divided  2 Jalapenos - fresh or 4 ounce can, divided  2 cups warm water  2 ¼ teaspoons instant yeast  In medium mixing bowl, combine bread flour, salt, 1 ½ cups shredded cheese and 1 diced jalapeno or 3 ounces canned jalapeno. Stir and set aside. In a large mixing bowl, add the warm water (not hot; lukewarm) and yeast. Stir to dissolve. Add flour mixture to the yeast and water, using a rubber spatula to stir all together.  Use a spatula to fold the dough from the outside of the bowl towards the center. Fold dough 8-10 times. Cover with a towel and let rise in a warm place for 1 hour. After 1 hour, use the rubber spatula to fold the dough in on itself again 8-10 times. Cover with a towel and let rise in a warm place for another hour.  Halfway through this second rise, add your Dutch oven, with the lid on, to your oven and preheat to 450 degrees. Preheat for 30 minutes. Set out a piece of parchment paper large enough to go inside your Dutch oven with a bit of overhang. Lightly dust the counter with flour. Turn out the dough onto the floured surface. Fold the corners of the dough in towards the center, about 6-8 times, until a rough ball is formed. Place dough onto the piece of the parchment paper and place into the Dutch oven. Carefully score the dough (‘X’). Spray the dough with cooking spray, sprinkle with remaining shredded cheese and jalapenos. Bake for 30 minutes with the lid on, then remove lid and continue baking for 20 minutes. The bread will be a deep golden brown. Remove the Dutch oven from the oven, tilt it slightly and use the parchment to slide the bread out of the pan. Let the bread cool on wire rack for 1-2 hours. Texture is best when bread is completely cooled. Enjoy!  #jalapeno #shreddedcheese #dutchoven #bread #crusty #family #thyme #familythyme

Banana Muffins  Growing up, I attended a Catholic elementary school. As a fundraiser, the school put together a cookbook and this is the recipe I submitted. Not too bad for a 4th grader! I made this recipe into mini muffins and added a powdered sugar glaze. These make a great breakfast or an easy grab-n-go snack.  ¼ cup sugar  2/3 cup flour  1 teaspoon baking powder  1/8 teaspoon baking soda  ½ teaspoon salt  1 banana, mashed  1 large egg, beaten  ½ teaspoon vanilla  ¼ cup unsalted butter, melted  1 cup powdered sugar  1 teaspoon vanilla  2-4 tablespoons heavy whipping cream  Preheat the oven to 375 degrees. Spray a mini muffin pan with cooking spray. Set aside.  In a medium bowl, add the sugar, flour, baking powder, baking soda, and salt. In a small bowl, mash the banana. Add the beaten egg, vanilla, and melted butter. Add to the flour mixture and mix until combined. Fill the muffin tins ¾ full. Bake for 8-10 minutes or until golden brown. Let cool.  While the muffins are cooling, make the glaze. Mix the powdered sugar, vanilla, and heavy whipping cream. Whisk until smooth. Dip the muffins into the glaze. Let set. Makes 16-20 muffins.  #minimuffins #bananas #glaze #breakfast #grabandgo #snack #yummy #anytime #delicious #family #thyme #familythyme
