A craving I had yesterday, even though I hate regular hotdogs, stuffed hotdogs. I boiled them 1st, then spilt them open a bit, spread my leftover cream cheese and brisket mixture in them. I used @threequeensspice and @mantis_bbq seasoning on top. Smoke them for about 5 minutes or so at 225 degrees. Habanero smoked salt. I dug out some 2 year old frozen habaneros and gently simmered them for 30 mins to make a tea. Then I spread 2 cups of kosher salt out and spritzed them with the habanero tea and put them on smoke at 250F.
