Just let myself take a little flight of fancy ~ I made some saffron yogurt and topped it with roasted cauliflower, couscous with preserved lemons + olives + herbs, and a roasted garlic + mushroom hummus. Nothing crazy, just tried to let the flavorful veggies shine through. Major tip though…I get ALL my nice, jarred goods at HomeGoods or TJ Maxx. LEAP’s Farm Share offers 5 convenient pickup locations: On Tuesdays: Carilion Wellness (on Starkey Rd.) and Parkway Brewing Co. (in Salem) On Wednesdays: Roanoke Memorial Hospital (Riverwalk Parking Garage) and Big Lick Brewing Co. (downtown Roanoke) On Thursdays: The LEAP Hub (1027 Patterson Ave.) Let’s talk about Thursdays. Did you know that LEAP is opening a retail store that will be available during pickup hours? All Farm Share members who would like to stock up on extra eggs, veggies, bread, or pantry staples will have a whole store to choose from. The experience will be similar to how West End Farmers Market has served Tuesday Farm Share shoppers for years. What else? Three of the pickup locations are staffed by a knowledgeable operator who can offer cooking inspiration and answer questions. The two breweries are not staffed, but stay open late and offer an easy, convenient way for members to pick up local food (and maybe relax with a beer or take in a band).
