i'd been eyeing the #fishcongee at @littlefish_echopark ever since a photo of it showed up on my #socialmedia feed. but it was on their #breakfastmenu, only available before 11am. i'm not an early-riser, so my getting to #echopark from the westside before 10am would be miraculous! whether on bike or by @metrolosangeles transit, it'd take an hour. and i value my sleep way more than food (it might not seem like it, but i swear that's true!) 🤞🏼 today was the @lamarathon, and i wanted to cheer on friends at the @laleggers aid station at mile 8 in #silverlake. getting there by 7am would put me in place to catch the elites run by before the rest of the pack arrived. in other words, the needed miracle happened! after my volunteer stint, i arrived in echo park just as the street sweepers were going by, with lots of time to make the fish congee breakfast at little fish! granted, it was more than your run-of-the-mill chinatown congee. instead of the usual rice in broth with pieces of chicken or pork, it was fancified #koshihikari rice in fish broth from pacific #stripedbass bass bones, with seared koji-cured #fishbelly, pickled #shiitake, a soft-boiled egg, and housemade chili crisp. yeah, something worth writing home about. i just wish the serving were larger (like 50% larger?) because i was still hungry when i was done. and i don't even eat a lot. let's just say i'm happy i was able to check it off my list! ✅✅ #losangeles #lifeonabike

Day 6 of CNY 初六 - I fancied a nice bowl of congee, so I made ginger fish & century egg congee using my Ninja rice cooker. My eldest daughter and I had a bowl for lunch, and I had another bowl for dinner. It was so comforting and satisfying. Congee is an anti-inflammatory and gut healing food. It is very hydrating and soothing in the stomach, especially if you are feeling unwell. I cooked sweet and sour chicken with egg fried rice for Mr.S as he loves the sweet and sour pork from Singapore. CREAMY FISH CONGEE, CHINESE STYLE I eat congee from time to time to cleanse my system or whenever I am ill or feel a little under the water. While there are different ways of making congee, I always like mine thick and creamy. Sharing with you here is how I do it (and a few tips that help the cooking process easier and more satisfactory). 1. Rinse the rice slightly to remove dirt. Drain. 2. Mix the rice (1 cup) with a tbsp of oil and some salt in a large pot and let it rest for 1/2 hour. This helps to cook the congee quicker and also achieve a smoother and softer texture. 3. Soak 2 dried scallops in water until softened. Tear into thin slices. 4. Add vegetable broth (8 cups), minced ginger (1-inch knob) and rehydrated scallops to the pot of rice. Bring everything to a boil over medium-high heat. 5. Cover with a lid. Tilt the lid at an angle to allow some steam to escape. Alternatively, I like to place 2 chopsticks between the lid and the rim of the pot for sturdiness and easy handling. 6. Lower the heat to medium low and let simmer for 1/2 - 1 hour until desired consistency. Stir the rice every now and then so that it will not stick to the bottom of the pot. (Towards the end of cooking, if the congee gets too thick, add water/stock and stir well). 7. This plain congee can be served right away with salt and white ground pepper to taste. 8. Alternatively, add protein such as pork, beef, fish or chicken and vegetables towards the end of cooking. I used cod fish and chopped cabbage here. I also added a few rehydrated goji berries. 9. Remove from heat. Add salt and white ground pepper to taste and serve. 10. For extra flavours, shown here are a spread of a few popular ingredients on the side: scallions, Chinese donuts, furikake, and fried garlic.
