I married well…. When left to make dinner my husband is who you want behind the stove and his bbq shrimp is just proof of that fact. There is something warm and buttery and tangy about this dish that begs to be dipped and smeared on French bread. You see bbq shrimp isn’t really bbq. It’s Worcestershire, smoked paprika, white wine and all the butter and cream. Just a squeeze of lemon takes it over the top. Its been a little crazy lately… Lots going on and between doctors appointments for the whole family, work, tutors and meal planning and I finally needed a silent meal. 😂 So I stopped at @eempdx for one of my favorite salads in all of Portland. I know that doesn’t sound like much but between the sweet, salty and crunchy elements in this salad (Tamarind dressing, pickled shallot, toasted coconut, and sliced apples.) it’s like I can never get enough. They also have really creative Mocktails (like the one above cucumber yuzu shrub and ginger lime soda) that are easy on the eyes and liver. :-) They just added a fried cauliflower app that made this already yummy meal perfect. I love spicy food and their fried chicken has always been the bomb but now they have even spicer fried cauliflower. I’m just crazy about it! It was just what I needed…delicious food, a moment to breathe in a lovely environment. He’s turning 13 next month. 😳 My heart, my monster, my butter is moving at light speed into becoming a young man. It’s such a thrill to see who he is becoming. His kindness, especially with my 87 year old mother who is suffering from Dementia is so beautiful to watch. He’s endlessly patient and very intuitive…always gravitating towards animals and those who might need a little extra love. I was SO scared of being a parent. He’s also been very understanding with me, knowing most other kids and parents are just not quite like us. He reminds me that’s he’s grateful for the ability to talk freely and be heard. That’s magical to me…. So I snapped this picture on his last day after his Shrinners Childrens Hospital rehabilitation visit (he had some trouble with his feet and they worked to help him to correct them so he wouldn’t be in pain). It’s crazy to think about the beginnings of this apple. The apple that almost wasn’t. The tree that was languishing alongside our home. The one that was probably planted when the house was built sometime in 1890 and was never pollinated. It lived many many years and occasionally, according to my neighbor and friend @georginahayns tossed off a few mealy, half eaten apples (even the squirrels knew better than to eat them) but now…since we’ve devoted the time and love and two other apple trees for it to cross pollinate it’s exploded with apples. I’ve never known the happiness that a garden could bring until this last year. I’ve always loved roses but now I understand the whole community that it takes to build a garden and to be a part of something so powerful and good is deeply satisfying. A dazzling maiden bloom from what was supposed to be my Huntington rose but probably isn’t. That said she’s so terribly, gloriously romantic I’m not even sure I care anymore. The roses are all budded up and ready to explode in my super tiny first year garden.
