Today would’ve been Mama Dip’s 95th birthday. This is a picture of me and Mama Dip...Ms. Mildred Council. We met back in 2001 when both of our restuarants were featured in a Food Network road show. And, we have been friends ever since. She has been one of my inspirations in this cooking game of ours. Mama Dip’s restaurant opened in November 1976 and is still very popular today. Mildred Council, better known as “Mama Dip,” started and owns the restaurant. Mama Dip’s cooking and life story have earned her a large fan base beyond the community of Chapel Hill, North Carolina. She opened the restaurant with $64: $40 for food and $24 to make change. The morning’s profits were used to fund lunch, and the lunch profits to make dinner. At the end of the day, Mama Dip took home $135 and the rest is history. Mama Dip learned to cook by watching her family members and is famous for her “dump” cooking style. Dump cooking involves no recipes, just measure by eye, feel, taste, and testing. We lost Mama Dip in 2018. But her wonderful legacy lives on. Every year growing up for Halloween, my mom made life size models of all your favorite monsters and posted them on our lawn. There was Frankenstein, Bride of Frankenstein, Dracula, The Wolfman, The Mummy, zombies, bats, ghosts....The list goes on. People would travel from neighboring towns just to come and take pictures. Now that I have a yard, I begin the continuation of her legacy on a much smaller scale, but with just as much love. Love you Mom! #HappyHalloween kiddies. Y’all probably have figured out that I’m a fan of plain, Southern country cooking. 🤣 In fact, I’m fierce in my preference for the Southern cooking that came from very blue collar, cotton mill worker, sharecropper families. Or another way to say that is the cooking of poor families. The author of the cookbooks you see today had humble, poor beginnings. Mildred Cotton Council, known as Mama Dip, was born in 1929 in Chatham County, NC, the granddaughter of slaves. She took over cooking for her family when she was 9. Because she never had measuring cups/spoons in her kitchen, she measured by feel, the way she had been taught by her father (her mother had passed away), and called her cooking “dump cooking.” She measured ingredients in her hands and then dumped them into the pot. Her cooking was/is so good that she started a restaurant in Chapel Hill, NC. Later, she wrote the two cookbooks but provided exact measurements. The food she served in her restaurant is the same food she grew up on and prepared for her family, the same food that is in her cookbooks. Look at the picture of what she considered essential for her kitchen; that picture is from her second cookbook, Mama Dip’s Family Cookbook. Mrs. Council passed away in 2018, but her children continue to run her restaurant -Mama Dip’s- in Chapel Hill. Her cookbooks are available through the restaurant and on Amazon. Oh, why was she called Mama Dip? Dip is her childhood nickname. She was tall -6’2”, so she could reach to the bottom of the rain barrel to dip out water. She was one incredible lady. ERIKA COUNCIL ON HER GRANDMOTHER. Often when reading about women who helped shape southern foodways, we hear about the phenomenal Edna Lewis. However, there were many other African American women and men that paved the way, one being my grandmother. Mildred “Mama Dip” Council was a restaurant entrepreneur, cookbook author, mentor and philanthropist in her community and beyond. Millions have made the pilgrimage to Chapel Hill, N.C to eat at Mama Dip’s Kitchen and fill up on the glory that was her pecan pies and crispy fried chicken. Raised on a farm in Chatham County N.C, my grandmother earned the nickname “Dip” from her brothers and sisters because she was tall enough to take the gourd dippers and dip out water from the well in the yard. Mildred learned to cook using the “Dump Method”, Dumping cooking is when you cook by feel and taste rather than using a recipe. It’s been a heritage among black American women since slavery. Mildred Cotton became Mildred Council after marrying Joe Council whose parents owned Bill’s Bar-B-Q on Graham St where she would go on to work further expanding her culinary prowess. From the dining halls of UNC Chapel (in the late 1940’s) to cooking for prominent families Mildred grew both her fan base, business acumen and family, having seven children (one being my dad- William). So in 1976, when presented with an opportunity to open her own restaurant on Rosemary Street she did so with only enough money to buy food to offer breakfast. As she writes in her book, “Spending almost all of my money and not realizing that I could not have changed a ten dollar if someone had given me one first thing that morning.” From the money she earned from breakfast she was able to make lunch, then dinner and the rest as they say is history. Eating your fried chicken, okra, sweet potato biscuits, fried green tomatoes, tomato casserole, and hushpuppies has been a highlight of my Chapel Hill visits since Mary Tom Bass first took me to your little restaurant as a UNC student in 1980. I introduced you to numerous friends, my parents, and years later at the new, bigger digs (after GMA and Rachael Ray came calling), my husband and son. Your food was as nurturing and inviting as your warm heart. I will miss looking to catch a glimpse of you at your restaurant, but I know my family will enjoy many more meals at Mama Dip’s. A legend has passed. For those of us who were on the receiving end of Mama Dip’s hospitality & all encompassing smile this is heartbreaking. Mildred Council was one of the few women who got praises from my children on her cooking. And this, one of my most beloved books, now on its third incarnation because they get used so much and even though I know many recipes by heart, I like to have the book open next to me as I cook. There's 250 southern recipes from her famous Chapel Hill establishment (we're heading to North Carolina next spring) and whilst they're not dramatic 'reinterpretations ' of local food, their history and genuineness makes them even more valuable. I akway adored haslet as a kid, we wrapped our meatloaf in it and Mrs D has her own recipe for Hickory Mountain hog hashlet which is as near as dammit for me. What makes it close? The inclusion of the classic dried crushed red pepper. She tells us how to make lard and cracklings, adds sauerkraut to her spare ribs and mixes them with wild rabbit too. Like all good southerners, she knows how to cope with a glut so if you're looking for workhorse casseroles, Mrs D is your woman. I love pound cake and there's a great buttermilk one (go to an Eastern European shop and buy real buttermilk); her rum glazed pound cake is baked from scratch in an oven that's not pre -heated and her pineapple coconut icing is multi -functional (I use butter but she prefers marge). Theres also an intriguing dried apple and peach meringue pie which surely comes from nearby Appalachia (like their dried apple stack cake). Apologies for essay but she rocks!
