Bakes 52 and 53 (which unless it kills me, I am deeming it a scrape pass): 'Not sausage' sausage rolls (spinach and ricotta) and *ahem* pecan pie. Very much a tale of two halves. Let's start with the positives... Spinach and ricotta 'sausage' rolls are delish. My meat consumption is now minimal so all meat based recipes are being vegetarianised for the challenge. My rough puff pastry skills were good today: we have flake, we have filling; very much a success. Pecan pie: I've managed to do most dumb things in my baking in the last ten years or so, but today a new first! A literal pie explosion. (I chose to laugh, not cry, mainly because it was still a first for me! 😂) Every part of me told me this recipe was wrong but my brain told me to trust the process as I'm still quite new to pastry. Baker's instinct should have been listened to though. Very soggy bottom so not sure if actually edible (I've eaten some and at time of writing am yet to die but will probably not inflict on anyone else).
