🇫🇷 Mais au fait, la tonnellerie c’est qui ? Aujourd’hui, nous sommes ravis de vous présenter Sylvain Monnot ! Sylvain, a débuté sa carrière à l’âge de 15 ans par un CAP Tonnelier. Puis Il a intégré deux tonnelleries en Côte d’Or avant d’arriver à Mercurey où il exerce son métier avec passion depuis bientôt 30 ans. Il est devenu grâce à son savoir-faire, sa longue expérience et son exigence personnelle, Tonnelier Expert au sein de la Tonnellerie. Ses principales missions sont la formation des apprentis et des tonneliers aux tâches les plus complexes et délicates, les finitions particulières comme le cerclage bois ou le vime et le service après-vente. Il se déplace d’ailleurs en France et en Europe pour effectuer des réparations. Ce qui le motive avant tout est de collaborer à faire des grands vins en fournissant à chaque vigneron le tonneau d’exception ! 🇬🇧 By the way, who’s behind the tonnellerie ? We are delighted to introduce you to Sylvain Monnot ! Sylvain began his career at the age of 15 after obtaining his CAP (vocational training certificate) in barrel making. His know-how, extensive experience and personal rigour have made him an Expert Cooper at our cooperage. His main responsibilities are training apprentices and coopers in performing the most complex and challenging tasks, applying special finishes such as wood or wicker hoops, and providing after-sales service. He travels throughout France and Europe to carry out repairs, and is also involved in continuous improvement projects. Il y a des étapes – cruciales – à respecter. Un cycle vertueux qui conduira à sélectionner les meilleurs chênes à merrain pour approvisionner les tonnelleries. Les chênes prélevés en forêt ont au minimum entre 150 à 180 ans. Les chênes achetés par les acheteurs de bois, sur pied ou bord de route, sont ensuite réceptionnés sur le parc à grumes, puis triés par origine et marqués tous les 1m, 1m20. En moyenne, sur une grume, on marque sept billons.
