Last night’s family dinner came together so quickly I didn’t even get the chance to take photos of the table 😂 The winner was this mashed potatoes recipe - it’s the best version I’ve ever made (almost the texture of pomme aligot!) and must share: Best Garlic Mashed Potatoes Christmas 2023 Adapted from Creme de la Crumb Prep Time: 10 minutes Cook Time: 20 minutes Total Time: 30 minutes Servings: 6 servings Ingredients * 3 pounds red potatoes (organic if possible) * 1 stick of butter at room temperature, sliced into four chunks * 1/2 cup sour cream * 1 cup whole milk (I used organic lactose-free 🙃) * 3 whole bulbs of garlic, local and organic if possible * 1-2 teaspoons of your best sea salt, to taste * 1 teaspoon fresh ground black pepper, * Green onions, chopped (the store was out of chives and this was an amazing accidental swap) Instructions * Preheat oven to 350 degrees * Slice the tops of your garlic bulb, drizzle with olive oil, wrap with foil, and bake in the oven for 60 minutes * Quarter the potatoes and boil until cooked through-keep the skin on! * Take the garlic out of the oven and let cool * In a blender, combine hot (drained) potatoes, butter, milk, sour cream, garlic, salt, and pepper. Add more milk as needed. * Your potatoes should still have a few lumps, do not over-mix! * Taste, add salt and pepper if needed. Top with green onions. Insipred by a lovely dinner out @viacarota with my wonderful friend @bklynchickadee ,I decided to try making #grilledoctopus ! My local #Asianmarket had fresh #babyoctopus available. I blanched the octopus for 15 seconds to set the curl of the tentacles, then I cooked it for 5 hours with my @anovaculinary #sousvide precision cooker. After thoroughly drying the octopus (which had shrunk considerably) I crisped up the pieces in a lightly oiled #grillpan . I paired it with #pommealigot , #meltedleeks , and a delicious sauce made from #orangejuice , #grandmarnier , #herbsdeprovence , #shallots , #garlic a splash of #balsamicvinegar , and salt and pepper. Chicken Fricassee 🍽 You’re going to want to try at least one of the elements of this! I went a bit all out for a mid week meal but ah well 🤓. A Fricassee packed with mushrooms, garlic and a creamy wine sauce, a pomme aligot, or ultra cheesy mash to you and me, some chicken skin and some green beans and chicory with walnuts and a whole grain mustard dressing. 🍗 - 4 thighs and legs, trimmed the legs on so they look a little neater. Fried off in 60g unsalted butter in an ovenproof pan/dish until golden on all sides and removed. Three shallots finely sliced added, follows by two sliced portobello mushrooms and roughly a dozen button mushrooms, with three sprigs of thyme and a bay leaf. Fry off until starting to golden, add two cloves of minced garlic and cook through for a minute, three tablespoons of flour mix well and cook the flour out. Add a good glug of white wine until starting to thicken with the flour, and then a good 3 cups or so of chicken stock. Start to simmer, add the chicken back, and cover for at least half an hour or until the sauce thickens. When the chicken falls off the bone, take off the heat, add 1/2 cup cream and chopped fresh parsley. Chicken skin off two of the thighs scraped clean, laid flat, a little salt and weighed down in the oven until golden. 🥔 - 4 medium sized potatoes baked, put through a rice and into a saucepan with 6 tbsp unsalted butter, 2 garlic cloves minced, 1 cup of cream and mix vigorously until thickening and combined. Grate a good 500g cheese, make sure half is mozzarella or traditionally Tomme d’Auvergne, with the other half gruyere. Add half the mixed grated cheese until fully melted into the potato and stringy, then gradually add the rest on the heat, continuously stirring to get the cheese heated through. The oozy luxurious finish of this classic must be tried!
