From yuck to yum 😋! Alright, someone needed a good dose of redemption after the matcha muffin incident of 2024. Am I right? These pumpernickel spring onion English muffins did the trick—and more! I used the @preppykitchen recipe and substituted in 1 cup of rye flour for part of the AP flour (@kingarthurbaking ). I finely chopped a fresh spring onion from our farm box and added in a little extra dried onion for flavor. The color came from 1 Tbsp of dark cocoa from @centralmilling . These were SO good toasted with butter. Oniony with a hint of the rye flavor. And with scrambled eggs and cheese for breakfast? Yum! English Muffins, recipe from @preppykitchen. Happy National English Muffin Day! I'm glad I gave these a try but I have to admit I will be sticking to store-bought in the future. This dough was extremely loose and sticky (and from the recipe video it seemed like it was supposed to be that way), and I found it exceedingly difficult to work with. Most of my muffins were misshapen and/or fairly flat because they were just impossible to transfer into the pan intact.
