BAGUETA CU POLISH: POLISH: 500 gr. Apă 500 gr. Faina de paine 2 gr. Drojdie proaspătă Se amestecă bine toate ingredientele, se acoperă vasul și se lasă să se odihnească la 18 grade timp de 10-14 ore, sau temperatura camerei 20-22 pt 6-8 ore. aluatul principal: 1000 gr. Poolish 500 gr. Faina de paine 23 gr. Sare 5 gr. Drojdie 240 gr. Apă 30 gr. Ulei de masline 10 gr. Zahăr Se amestecă toate ingredientele cu 150 gr. a apei. Se amestecă 3 minute cu viteză mică, apoi 6-8 minute cu viteză mare. Structura glutenului ar trebui să fie foarte bine dezvoltată. Acum adaugati apa ramasa si amestecati din nou 3 minute viteza mica si 4-6 minute viteza mare. Tot aici structura glutenului ar trebui să fie foarte bine dezvoltată. Transferați aluatul într-un recipient de plastic și faceți o fermentație în vrac timp de 3 ore la RT 22-24 grade. Aluatul trebuie să dubleze volumul. Acum impartim aluatul in bucati de 350 gr. Și faceți o pre-formă. Lăsați preforma să se odihnească timp de 30-40 de minute. După acest timp faci forma finală. Lăsați bagheta să se odihnească 10 minute la RT 22-24 grade, apoi transferați 70-90 de minute la frigider 4-6 grade. How-to below: Mediterranean Pasta Salad with Crispy Black Garlic Chick Peas. This is not your average pasta salad. I'm usually not a fan as I find the pasta tasteless and gummy. To avoid this, each element received its own bit of love before assembling to make it shine. •The pasta, just shy of 1 lb, was cooked until just al dente and removed from the pot with a slotted scoop so some of the water tagged along. It was instantly tossed with olive oil, lemon zest and lemon juice and seasoned with S&P. •A can of chick peas was drained and patted dry then roasted at 425°F, with convection fan on, after being tossed with ground black garlic (@burlapandbarrel a must- I have a special promotion to share in Stories), olive oil, a sprinkle of potato starch and S&P •1 bunch Curly kale, also not a favorite, was shredded and massaged with lemon juice, (blood) orange juice and kosher salt until tender, and then tossed with olive oil, Parmesan and currants •Pine nuts were pan toasted in garlicky olive oil and removed from pan. Bread crumbs were then toasted in more garlicky olive oil (@brightland) •Persian cucumber, grape tomato and Kalamata olives were simply chopped as they're ideal in their natural state. •Goat feta was cubed and crumbled. •A red wine vinaigrette was whisked up- red wine vin, olive oil (I do almost 50/50, you do you), touch of Dijon mustard, flaky sea salt, fresh ground pepper, pinch dried oregano, pinch of sugar, garlic optional. When each component was ready, (they may be prepared in stages and not all at once) pasta gets tossed with kale salad, chopped cucumber, tomato, olive, feta and pine nuts. Vinaigrette was tossed in (to taste). Fresh herbs would be ideal, but I didn't have any. Black Garlic Chick Peas and bread crumbs were scattered on top. It was served immediately and enjoyed by all. No leftovers.
