Dylan had some yummy Dahl soup I had in the freezer today for dinner. Served with crusty bread and cheese cubes. He had a falafel burger with herby potatoes at preschool so he’s eaten well today. I hope the lunches are as good at his new school 🤞🏻 Split Pea Dahl soup 200g split yellow peas, soaked overnight 1 onion, chopped 3 garlic cloves, crushed 3cm piece of ginger 2 large carrots, diced 2 sweet potatoes, diced 4 tbsp tomato purée 2 tbsp curry powder 1 tsp ground cinnamon 1 litre of vegetable stock 2 red peppers, diced 1 tbsp dried fenugreek 1/2 tsp nigella seeds 3 tbsp soy sauce 100g soya unsweetened yogurt Cook the split peas as per packs instructions, rinse and set aside. Sauté the onion in a little oil until softened then add the garlic and ginger. Continue to cook for a few more minutes then add the tomato purée, curry powder, cinnamon, fenugreek, nigella seeds and cook for 2 more minutes then stir in the stock. Add in the sweet potato, peppers and carrots and simmer for about 10 minutes then pour in the split peas and soy sauce, stir and cook for a further 5-10 minutes. Season to taste then blitz until smooth or blitz half then add back into the saucepan if you prefer some chunks.

So not sure what this is called if it even has a name?! lol basically it’s a chilli pie I think 🤔 I just used a portion I had in the freezer and added some mashed potatoes on top with some vegan cheese then baked in the oven for 30 minutes 💚 I used half regular potato and half a white fleshed sweet potato and honestly it was sooo good 👌🏻 made a change from having it with rice or a jacket anyway ☺️

I found a Chana Saag in the deepest depths of the freezer so we had that for dinner. Served with rice and a homemade naan I also found in the freezer 💚 no idea what I would do without a freezer lol Chana Saag 1 onion, chopped 2 cloves of garlic, minced 15g fresh ginger, finely chopped 2 carrots, diced 1/2 tablespoon curry powder 1 tsp garam masala 1 can of chopped tomatoes 1 tablespoon tomato purée 2 cans of chickpeas 1 vegetable stock cube 75g spinach Salt and pepper to taste Fry the onion in a little oil until softened, add in the carrot, ginger and garlic and cook for another 2 minutes. Stir in the spices and cook for another couple of minutes then add in the tomato purée and mix well. Pour in tomatoes and chickpeas and simmer for about 15 minutes. Stir through the spinach and season to taste. Once the spinach has wilted take the curry off the heat and serve.

Lemon tagine with Quorn pieces, veggies and flatbread 💚 new recipe and it was delicious even if I did add too much harissa paste for my liking 😂 I need to remember 1/2 tablespoon is plenty for me lol ended up adding a little coconut milk, apple cider vinegar, sugar, tomatoes and finally a little smooth peanut butter 😂 got there eventually and probably changed the whole recipe but at least we can eat it now lol So as I made this yesterday I waited until today to add the Quorn pieces while reheating. You can any kind of protein source to it though. Lemon tagine 1 onion, chopped 1/2-1 tablespoon of harissa paste 2 cans of chopped tomatoes 1 teaspoon of dried oregano 2 tablespoons of rice syrup 2 preserved lemons - flesh removed and skins chopped finely 1 meat free chicken stock cube 200g giant couscous Sauté the onion in some oil until softened. Add the Harissa paste, tomatoes, oregano, preserved lemons and rice syrup. Fill half of one of the tomato tins and add, season then stir well. Cover and simmer for around 10-15 minutes. Add the couscous and cook for another 10 minutes until the couscous is cooked. You may need to add a little more water.

A new one for us but have to say it was tasty even if I did forget to put the sugar in 🙈😂 healthier anyway lol it’s mad just by pulling the tofu apart rather than cutting in cubes changes the texture?! Actually resembles chicken that way 🤷🏼♀️strange but give it a go lol I halved this recipe as it’s just the two of us but would normally serve 4. I made a batter for the tofu then fried until crispy then added it to the sauce 👌🏻 Orange tofu 1 cup of orange juice 1/3 cup of sugar 2 tablespoons soy sauce 2 tablespoons rice vinegar 2 teaspoons crushed ginger 1 teaspoon of crushed garlic 2 tablespoons cornflour Zest of 1 orange Stir all ingredients together then heat in a pan until thickened. Stir in tofu and serve straight away.

Chilli on jacket potato 💚 always a hit with us both so I made a big batch yesterday for the freezer👌🏻 Dylan tried the salad but handed it back and said he will like it when he’s older 😂 he did eat every last bit of the chilli though ☺️ Tex Mex Chilli 1 onion, chopped 2 garlic cloves, minced 2 sweet peppers, cut into chunks 1 tsp smoked paprika 2 tsp mild chilli powder 1 tsp cinnamon 1 tin of chopped tomatoes 500g jar of passata 1 tin of red kidney beans 300g vegan mince (I like Linda McCartney) Approx half a pack of mushrooms, chopped 300mls cold water First heat some oil in a big saucepan. Then add the onions, garlic and peppers. Fry for 5 minutes until softened, add in the cinnamon, paprika and chilli powder. Stir and cook for 2 more minutes, add in mushrooms, tomatoes, passata, kidney beans, mince and water. Mix together and bring to the boil then simmer for around 20 minutes. This freezes very well.

A one pot korma I had in the freezer with veggies and pitta. Dylan enjoyed this, always a winner but he especially liked stuffing some in the pitta 💚 I’ve posted this recipe a lot but incase you missed it 👇🏻 One pot korma 1 onion, diced up 1 garlic clove, crushed 2 tablespoons korma curry paste 3 tomatoes, chopped 1/2 pack chopped mushrooms 1 cup of basmati rice 2-3 cups of water 1 vegetable stock cube 1 tin of chickpeas, drained 1/2 cup of raisins 50g pine nuts 100g spinach Fry the onions, mushrooms and garlic in a little olive oil until softened. Add the curry paste and tomatoes and cook for 30 seconds, add the rice and cook for another 30 seconds. Add the stock cube and water - start with 2 cups and add another in later if needed. Bring to the boil. Add in the chickpeas and raisins, turn down the heat to a simmer and cook for 10-15 minutes until the rice is cooked and most of the water has been absorbed. Add the pine nuts and spinach, stir until the spinach has wilted. This freezes well 👍🏻

We had lentil cottage pie for dinner with veggies. I tried a different recipe and It was really nice, I was a little sceptical at first while cooking as never used cumin in one before. But it works 💚 photo doesn’t do it justice lol Dylan ate a good 3/4 so he enjoyed it too. Definitely worth a try and it’s pretty easy so that’s always a bonus ☺️ Lentil cottage pie 1 stick of celery, chopped 1 onion, chopped 200g chestnut mushrooms, chopped 4 garlic cloves, crushed 250g dried red lentils 1 tbsp dried mixed herbs 1 tsp smoked paprika 1 tsp cumin 2 tins of chopped tomatoes 1 tbsp tomato purée 500ml vegetable stock 1 tsp marmite 2 tbsp soy sauce Salt and pepper to taste Sauté the onion until softened then add the garlic, celery and mushrooms. Cook for 5 minutes until all the mushroom liquid has been absorbed. Add the rest of the ingredients and simmer for around 25 minutes until the sauce and thickened and lentils have softened. While that is cooking peel and chop up as many potatoes as you will need. For Dylan and myself I used 1 regular potato and 1 white fleshed sweet potato. Boil for about 20 minutes then drain and mash with a little milk, butter and season. Spoon as much of the cooked lentil mixture into an ovenproof dish as you need for that meal. Then top with the potato, fluffing it up with a fork. Cook in the oven at around 180 for 25-30 minutes until the lentil mixture is bubbling up and potato is browned. Any leftover lentil mix can be frozen for another meal 👌🏻

I decided to chop the mushroom up and stir it through just before serving because had a feeling it would be refused 🙈😂 Recipe below incase you missed it before👇🏻 Chinese chicken curry 2 medium onions - 1 roughly chopped and 1 chopped into big chunks 3 garlic cloves, minced 1 tsp garam masala 1 1/2 - 2 tbsp mild curry powder 250g chopped butternut squash 150g potato, peeled and chopped 1 tbsp tomato purée 1 vegan chicken oxo cube Vegan chicken ( I used the vegetarian butcher What the Cluck) 1 red and 1 yellow pepper, chopped (I used one as Dylan isn’t the biggest fan) 150g sugar snap peas 1 1/2 tbsp soy sauce Put the roughly chopped onion, garlic, spices, potato, butternut squash, tomato purée, stock cube and 400ml water into a saucepan. Bring to a boil and cover then cook for 20 minutes. Fry the chicken as per the packet instructions, then stirfry the peppers and onion in a frying pan for around 4 minutes. Remove the potato and squash mixture and whiz until smooth in a food processor. Add the sauce to the peppers, onion and chicken then stir through the soy sauce. I also added some frozen peas at this point. Cook until boiling then season to taste.

Spaghetti bolognaise with peas and garlic bread 💚 nice and easy dinner today as grabbed it from the freezer 👌🏻 Dylan ate 3/4 which is good considering it’s pasta! Lentil Bolognaise 100g dried red lentils 1 onion, chopped 1 small leek, sliced 1 celery stick, chopped 300g mushrooms 3 garlic cloves, minced Small handful of parsley stalks, chopped 2 tablespoons tomato purée 2 tablespoons balsamic vinegar 1 cup of vegetable stock 2 tins of chopped tomatoes 1 cinnamon stick 1 bay leaf 1 teaspoon dried thyme Salt and pepper to taste Soak the lentils in a bowl with water. Roughly chop all veg then put in a food processor, might need to do it in two lots. Pulse until you have a rough dice. Heat some olive oil in a saucepan and add the vegetables, put the lid on and cook for 20 minutes. Stir occasionally. Add the tomato purée, balsamic vinegar, stock, tomatoes, cinnamon stick, bay and thyme. Stir and season generously. Simmer for 30 minutes then drain the lentils and add them to the pan. Cover and cook for another 15 minutes or until the lentils are cooked. Remove the cinnamon stick and bay leaf and serve.

When Orion first started on solids, and for the first couple of years of him eating, I was horribly smug about how 'well' he ate...we did BLW and he ate ALL the vegetables, loads of spice, would try anything you put in front of him and usually loved it! I'm less smug these days as he's gradually got to the stage of telling me he doesn't like ANY vegetables, and has a very limited list of favourites. I keep hoping he'll start eating more of a variety again, and I regularly add small bits of whatever veg I'm having to his plate for him to ignore, hoping one day he'll surprise me! His lunch today was vegan 'chicken' dippers, rice, vegan cheese shapes, and avocado...and ketchup. Bring to a boil and cover then cook for 20 minutes. Fry the chicken as per the packet instructions, then stirfry the peppers and onion in a frying pan for around 4 minutes. Remove the potato and squash mixture and whiz until smooth in a food processor. Add the sauce to the peppers, onion and chicken then stir through the soy sauce. I also added some frozen peas at this point and some extra water because it was a little too thick for my liking. Cook until boiling then season to taste.

Dylan had quinoa chilli today for dinner with some flatbread 💚 luckily I found it lurking at the deepest depths of the freezer because I don’t feel well today 🙈 This has been a firm favourite since the beginning of Dylan’s weaning journey 💚 I found it to be a nice gentle way of introducing chilli to babies palette 👌🏻 Quinoa chilli 1 onion, finely chopped 2 cloves of garlic, minced 100g of mushrooms, finely chopped 1 sweet potato, peeled and chopped into small cubes 1 red pepper, finely chopped 1 tsp mild chilli powder (1/2 if you it milder) 1 tbsp tomato purée 1 can chopped tomatoes 1/2 cup of sweetcorn 1/4 cup quinoa 1 can of black beans Fry onions in a little oil until they have softened. Add the garlic and cook for another couple of minutes. Add the chilli powder and tomato purée, stir then put in the pepper, mushrooms and sweet potato. Mix together and cook for a few more minutes then add the beans, tomatoes, quinoa and 1 cup of water. Turn up the heat and bring to a boil. Turn down to low, pop a lid on and cook for around 45 minutes stirring occasionally. This freezes well in little portions.

Sweet potato, butternut squash and lentil soup 💚 we spent yesterday afternoon at the walk in centre because he was covered in a rash and poorly with it! Luckily wasn’t Scarlett fever but an upper respiratory virus with something called Stridor which makes sleeping difficult. So homemade soup today for lunch to get some goodness in him 💚 we spoke about food being a great medicine and he ate it all which was good. Fingers crossed a quiet couple of days rest will get back up and running. Curried butternut squash, sweet potato and Lentil Soup 1 onion, chopped 1 garlic clove, crushed 1 carrot, peeled and chopped 1 large sweet potato cubed 1 butternut squash, cubed 3/4 cup of red lentils 1 teaspoon ginger, minced 1 teaspoon ground turmeric 1 tablespoon mild curry powder Good grind of nigella seeds Salt and pepper to taste 500ml veggie stock Fry the onion in a little olive oil until softened then add the garlic and ginger. Cook for another couple of minutes then stir through the curry powder, turmeric, nigella seeds. Cook for 2 minutes then add the lentils, carrots, sweet potato, butternut squash and stock. Simmer for around 15 minutes or until the veggies and lentils are soft. Leave to cool for abit then blend until smooth. Add salt and pepper to your taste. This freezes well 👍🏻
