𝘽𝘽𝙌 𝙂𝙡𝙖𝙯𝙚𝙙 𝙏𝙤𝙛𝙪 𝙎𝙩𝙚𝙖𝙠 𝘽𝙖𝙤 𝙎𝙡𝙞𝙙𝙚𝙧𝙨 By @alittlepositivityeveryday 𝐓𝐡𝐞 𝐒𝐥𝐢𝐝𝐞𝐫𝐬: ~ Home made bao or store bought (scroll down my feed for the recipe) ~ BBQ glazed tofu steak (see recipe👇) ~ Pickled purple cabbage & onions (see recipe👇) ~ Thinly sliced cucumber, spring onion & chili 𝐓𝐡𝐞 𝐁𝐁𝐐 𝐆𝐥𝐚𝐳𝐞𝐝 𝐓𝐨𝐟𝐮 𝐒𝐭𝐞𝐚𝐤: ~ 450g extra firm tofu ~ 2-3 tbsps corn starch ~ 1 tbsp vegetable oil ~ 1 spring onion, thinly sliced ~ Half thumb of ginger, thinly sliced ~ S & P to taste 𝐓𝐡𝐞 𝐒𝐚𝐮𝐜𝐞: ~ 3 tbsps light soy sauce ~ 2 tbsp mirin ~ 1 tbsp maple syrup ~ 1/2 tbsp tomato paste ~ 1 tsp smoke paprika ~ 1 tsp corn starch ~ 2 tbsp water 𝐓𝐡𝐞 𝐏𝐢𝐜𝐤𝐥𝐞𝐬: ~ Half palm size of purple cabbage, thinly sliced ~ Half of a red onion, thinly sliced ~ 1/2 cup apple cider vinegar ~ 1 cup water ~ 2 tsp salt ~ 1 tsp sugar ~ Few whole coriander seeds, star anise, peppercorns 𝐓𝐡𝐞 𝐌𝐞𝐭𝐡𝐨𝐝: ~ Pre-heat oven to 180 Celsius ~ Pat tofu dry, cut into big chunks and coat with corn starch evenly ~ In a baking tray, place tofu in and drizzle vegetable oil and bake for 20-30 mins until lightly golden ~ While tofu is baking, in a bowl, combine all the ingredients for the sauce ~ Heat up a pan on medium high heat and sauté spring onion and ginger until fragrant ~ Add baked tofu and sauce into the pan, let the sauce simmer and reduce and toss to combine ~ For the pickles, in a bowl, place thinly sliced cabbage and onoins with spices and ina pan, bring the rest of ingredients to boil and simply pour over the veggies (allow cool down) ~ Assemble bao sliders with tofu steak , pickles, thinly sliced cucumber and garnish with spring onion, chilli and sesame seeds. #veganskt #veganbowls #plantbasedrecipes #tastyvegan #veganbaking #veganvideo #veganchocolate #veganpancake #highcarbvegan #veganrecipeideas #vegancooking #veganbodybuilder #vegandinnerideas #veganrecipe #bestveganfood

Blackened Chili Lime Tofu 🌿by @realizing_fitness 1 block firm tofu, pressed and cubed 2 tbsp neutral oil of choice, divided 1 tbsp tamari 1 bell pepper, sliced 1 onion, sliced 2 cloves garlic 1 tbsp ancho chili powder, divided 1/2 tsp smoked paprika, divided 1/2 tsp salt (or to taste) 2 limes, juices 2 tbsp maple syrup 1/4-1/2 tsp red chili flakes 1/4 tsp pepper cilantro, chopped jasmine rice In a frying pan, heat 1 tbsp oil. Add tofu and cook on all sides until golden. Season with tamari and add 1/2 both chili powder and paprika. Cook until crispy and slightly blackened. Transfer to a bowl. In the same frying pan, add remaining oil. Heat and add garlic and onions. Cook for a few minutes and then add peppers. In a small bowl, combine salt, pepper, remaining chili powder, smoked paprika, lime juice, maple syrup and red chili flakes. Add tofu back into your frying pan and cook for a few minutes. Pour in sauce ingredients and fry. Add a little water, if necessary and adjust seasoning to suit your preferences. I served mine with more fresh lime and cilantro on a bed of jasmine rice. "GALLETAS RED VELVET VEGANAS" Cuando quieres veganizar las galletas que más triunfan entre mi familia y amigos, y consigues que no noten la diferencia. Tarea cumplida. Además de ser veganas, al no llevar lácteos también son aptas para intolerantes a la lactosa. Por cierto, el descubrimiento del preparado sustituto del huevo del Lidl, todo un descubrimiento. Y el colorante rojo lo hay vegano (en internet hay varias marcas que los tienen, no lo he encontrado en tiendas físicas en León). INGREDIENTES: -50 g. de azúcar -100 g. de harina común -1 cucharadita de polvos de hornear -30 g. de mantequilla vegana derretida -1/4 de sal -Preparado de huevo vegano -1/2 cucharadita de chocolate puro en polvo -Ralladura de naranja -1/2 cucharadita de vinagre de manzana -1/2 cucharadita de colorante rojo -Un puñado de chispas de chocolate negro -Azúcar glas para rebozar PREPARACIÓN: -Mezclamos la harina tamizada con la levadura, la sal, el azúcar y el cacao. -Agregamos el resto de los ingredientes y mezclamos bien. -Añadimos las chispas de chocolate. -Refrigeramos una hora en la nevera. -Hacemos bolitas, las pasamos por azúcar glas, y horneamos a 180º unos 8 o 10 minutos. -Dejamos enfriar en una rejilla. "Einfach & vegan" ist ein veganes Kochbuch von @linisbites / @eileen_pesarini aus dem Thorbecke Verlag , was schnelle glutenfreie Rezepte für jeden Tag verspricht. Entdeckt habe ich die Autorin, da sie glutenfreie Riegel und Pralines herstellt und diese in unserem @alnatura zu kaufen sind. Auch in diesem Buch der Autorin habe ich mir wieder sehr viele Rezepte anmarkiert. Der erste Eindruck war also schon Mal mega positiv. Das Kochbuch beginnt mit ein paar allgemeinen Einleitungen - ihre Liebe zur gesunden Küche, ihre Ernährung, Tipps für gesunde Ernährung im Alltag und eine Einkaufsliste. Diese Einleitung finde ich kompakt und informativ, besonders die Alltagstipps haben mir gefallen. Danach folgen die Rezepte unterteilt in Basics, Frühstück & Brunch, Meal Prep, Feierabend-Express, Vegan Soulfood, Eileen Favoriten und Süßes Ende. Zu jedem Rezept gibt es ein ansprechendes Bild, was einem direkt das Wasser im Mund zusammen laufen lässt. Super finde ich auch, dass man auf einen Blick sieht, wie viele Portionen das Rezept ergibt. Zu vielen Rezept gibt es auch noch einen Tipp der Autorin - zBsp. man das Rezept abwandeln kann. Besonders begeistern konnten mich unter anderem folgende Rezepte: Brötchen, Linsen-Bolognese, Nudelsalat, Kürbis-Kichererbsen-Curry, Süßkartoffel-Erdnuss-Curry, Linsen-Dal, Mac'n'Cheese, Pad Thai mit crispy Tofu, verschiedene Pastasaucen, Banoffee und Brownies. Natürlich sind auch Pancakes und Waffelrezepte enthalten, die ich unbedingt noch ausprobieren muss. Das Süßkartoffel-Erdnuss-Curry habe ich direkt ausprobiert und liebe es. Insgesamt vergebe ich 5 von 5 ⭐ Sternen. 🌱 Chilli Sin Carne Zuaten: 1 EL Öl 250g veganes Hack 100 ml Wasser 500g passierte Tomaten Chilligewürzmischung 1 Zwiebel 1 Paprika 1 Dose Mais 1 Dose Kidneybohnen 1 Dose weiße Bohnen Jalapenos Baguette 1 EL Creme Vega Zubereitung: Die Zwiebel, Jalapenos und Paprika in keine Stücke schneiden und mit dem veganen Hack in Öl anbraten. In einem extra Topf die passierten Tomaten mit Wasser und der Gewürzmischung köcheln lassen. Bohnen und Mais abtropfen und in dem Topf dazugeben. Dann das Hack dazu schütten und gut umrühren. Vegan gravy 😊🌱 so this here can be used as a really delicious vegan gravy for roasts, or as a standard base mix for different types of flavoured dishes….. just make this as a base and add in extra things at the end…. Such as curry powder or kimchi etc (you can get creative!) I have already made a few different types of dishes so check out my feed 💛 So the ingredients list I have provided. Simply Add everything to a large non-stick skillet (except coconut yogurt) and simmer on high heat for approx 15-20 mins or until all the liquid has reduced right down and thickened. Once it’s thickened, then add in coconut yogurt + a very small amount of lemon juice (optional) & a drizzle of balsamic glaze (tip- add the balsamic glaze first & if it tastes just right then do not add anything else 😉) 💥🌱… and you have a super tasty vegan gravy. Mediterranean pasta salad By @helens_vegan_kitchen Serves 4 Ingredients 325g large pasta shells 1/2 cucumber, chopped 12-15 cherry tomatoes, quartered 2-3 roasted red/yellow peppers, thinly sliced 15-20 black olives, sliced 2-3 spring onions, sliced 2 courgettes, sliced 9-10 chestnut mushrooms, sliced 1 tbsp olive oil Handful of toasted pine nuts Handful of basil leaves Dressing Juice of a lemon 1 tbsp agave or maple syrup 2 tbsp olive oil 1 tbsp chopped basil Salt and pepper 1️⃣ Boil the pasta as per packet instructions 2️⃣ Whilst the pasta is boiling, griddle the courgettes and mushrooms using about 1 tbsp of oil 3️⃣ Once the pasta and veg are ready, add to a large serving bowl with the other ingredients 4️⃣ Mix the dressing ingredients together and mix well and serve #Veganrevolution #Veganweightloss #Vegancookies #Veganburger #Vegansnacks #Veganrecipe #Planteater #Recetasveganas #Veganinspo #Veganmeatballs #Veganideas #Vegancooking #Veganthanksgiving #Vegandrinks #Veganbowl

Mango spring rolls stuffed with tempeh By @terianncarty INGREDIENTS Rice Paper for rolling 1 Ataulfo mango thinly sliced 1 red pepper thinly sliced 1/4 of a long cucumber thinly sliced 1 cup baby spinach 1/2 cup pickled red cabbage 1 block steamed then marinated tempeh (tamari, sesame oil, rice vinegar, sriracha & garlic) Handful fresh basil and mint Sprouts (optional) METHOD Steam tempeh from frozen for 8 minutes. Cut into strips and marinate for 2 hours. Heat oil in a nonstick pan and sear tempeh strips until browned and crispy. Set up your station for rolling the wraps. Place all your ingredients into separate bowls to keep things neat and tidy. Wet 2 kitchen towels and place them on a large cutting board. Pour hot water (not boiling) into a large bowl. Take 2 rice paper sheets and dunk them into the hot water (2 sheets works better than 1. They roll way easier and stay together much better!). Wait for them to soften and then place them onto a separate cutting board or clean working surface. Layer your ingredients in the centre of the circle being careful not to over stuff. Fold edges in towards the middle and then roll into a tight burrito style shape. Place the rolls in between the damp kitchen towels. Repeat until all the ingredients are gone. Dip into spicy peanut sauce and enjoy! PEANUT SAUCE 3 tbsp peanut butter 2 tbsp tamari 1 clove garlic minced 1 tbsp sesame oil 1 tbsp sriracha Pinch chili flakes Pinch salt 3-5 tbsp warm water Add everything but water into a bowl. Stir to combine. Add in water slowly until you reach your desired consistency. The thicker the peanut butter the more water you will need. 10-Minute Chilli Oil Noodles 🌶 by @thrivingonplants Serves: 1 Time: 10 mins Ingredients 1 serving of noodles (I used fresh wheat noodles) Protein & veg of choice (I used tofu puffs and bokchoy) The Sauce Base: Light soy sauce Dark soy sauce (optional, see method 3) Sweetener of choice eg. brown sugar Sesame oil Chinese chilli oil Optional add-ins: Fresh minced garlic and/or ginger Sesame paste if you want it to be creamy A splash of black vinegar for an extra kick of flavour + tartness A few toasted sichuan peppercorns, ground up finely (HIGHLY RECOMMEND THIS) 1. Bring a small pot of water to the boil. How did your noodles and cook according to packet instructions. In the last minute I add in the bokchoy. Drain, rinse with cold water and set aside. 2. In the meantime, fry up your tofu or protein of choice. You can also just add thinly sliced pieces of firm tofu to the boiling noodles instead (even quicker!). 3. In a large bowl, add in about 1 tbsp light soy sauce, a tiny splash of dark soy sauce (for colour), sweetener to taste (around 1-2 tsp), sesame oil (1/2-1 tsp) and as much chilli oil as you’d like. Here you can also use any of the recommended add-ins as mentioned in the ingredients list above. Whisk well until combined. 4. Add in the noodles, greens and tofu and mix until well coated. Garnish with sesame seeds, green onions, and cucumber. Tofu curry with noodles and purple sprouting broccoli By @helens_vegan_kitchen Serves 4 Ingredients for the tofu: 1 large block of firm tofu, pressed 1/2 tsp ground turmeric 1 tsp mild curry power 2 tbsp coconut oil Salt and pepper Other ingredients: 1 tbsp coconut oil 1 large onion, diced 3 cloves of garlic, minced 1/2 red chilli, finely chopped Thumb sized piece of ginger, grated 200g french beans, chopped 200g purple sprouting broccoli 400ml tin of coconut milk 400ml vegetable stock 1 tsp ground turmeric 1 tbsp mild curry powder Juice of a lime 4 nests of noodles Fresh coriander and chilli to serve Method 1️⃣ Drain and press the tofu (or pat dry if you don’t have a press) then cut into bite size pieces and mix with the other tofu ingredients. Fry for 7-8 minutes then remove from the frying pan 2️⃣ In the same pan, fry the onion, garlic, chilli and ginger in the remaining coconut oil for 4-5 mins and then add the other vegetables, the coconut milk, stock, lime juice, some salt/pepper and the spices. 1️⃣ or 2️⃣? What recipe do you like the most? By @Hey_renu 1️⃣ Sweet potato recipe 👇🏽 Garlic lemon sweet potato airfryer easy dinner ❤️Save recipe You’ve got to try this recipe! I’ve had it twice already and polished the full plate myself!! Full of flavour, easy and addictive 🫶🏽 Ingredients: -1 large sweet potato, peeled and cubed -2 tbsp olive oil + 2 tbsp for drizzle @odysea_ltd -1/2 lemon -1/2 garlic bulb (4/5 cloves) -1 spring onion sliced -Seasoning 1 tsp of : salt @blackthornsalt pepper, smoked paprika @lachinatasmokedpaprika za’atar, oregano, cumin powder. Method: -Wash, peel slice the sweet potato, chop into cubes. -Add to a baking tray and drizzle with olive oil, and seasoning. Mix well. -My potato was large so I batched half for a mid week meal, ready and prepared. -Add the lemon and garlic and airfry for 20-25 minutes on roast option on 180c I used my @ninjakitchenuk megazone. -Half way through, shake the potatoes and remove the lemon and garlic. -Remove lemon skin and add to a bowl, squeeze the garlic or mash with the back of a knife. -Add the sliced spring onion and 2 tbsp of olive oil -Optional, I add 1/2 tsp Za’atar, salt and pepper for extra flavour. -Mix well. Awdd to roast sweet potato coat well. 2️⃣ 6 minute airfryer oat cookie ❤️Save recipe You need to try this delicious 6 minute chocolate cookie, easy single serve, eat it for breakfast, or serve with a scoop of ice-cream for a cheeky dessert 🤌🏽 Ingredient: -80g oats (1/2 cup) -small banana should fill 1/3 cup -1 tsp baking powder -1 tbsp coconut oil @bionaorganic or avocado oil -1 tbsp oat milk @get_mighty -Handful chocolate chips -1/2 tsp cinnamon optional (I love cinnamon) Method: -In a bowl add all measured ingredients together. -Form into a ball -Flatten with spoon and make a round flat cookie -Add more chocolate chips to top. (Optional) -Preheat airfryer and cook for 6 minutes on 180c, or oven for 10-11 minutes, rest for a few minutes. @ninjakitchenuk -Optional, highly recommended a drizzle of maple syrup as oats can get very dry! 🤌🏽 -Make a batch and freeze!

And I’ve made a few 🙊🌶These cauliflower nuggets are coated in crispy cornflakes and homemade spicy buffalo sauce. 1 cauliflower, 400g. 1 dl. flour 1,5 dl. oat milk (or other plant milk) 2 teaspoons of paprika 100g. cornflakes (not sweetened) 
Chop the cauliflower into bouquets. In a bowl mix flour, milk and paprika. Mash the cornflakes into small pieces in a blender. Dip the cauliflower bouquets in the flour mix + cornflakes afterwards until we’ll coated. Place on a baking tray and bake for 20-25 min. at 200ºC. Buffalo sauce: 
3/4 dl. plant butter, melted 1/2 dl. hot sauce (hot chili sauce or tabasco) 1 teaspoon of apple cider vinegar 1 pinch of garlic/onion powder Mix all the sauce ingredients together and set a side until the cauliflowers are done. Pour on top of the cauliflower or use for dipping. Serve while crispy. 2️⃣ tomato & garlic toast 🍅🧄 toasted on the pan with olive oil until super crunchy, covered with garlic, and then I spread with cream cheese, add the tomatoes, cress, salt, pepper, chilli flakes and lemon juice. my latest go to breakfast or lunch (also very good with avocado on top) 🥰 ps, I use violife cream cheese for this one + basil leaves on top, but parsley or spinach works great too! . .

hi y'all, the month has flown by with the slow but sure start of spring here, and our speedy move to another district within the park - which is a groovy, spacious, sunny change of pace so far. so! let me catch up with where I left off in the NW + pre-move & tidy up March meals before April zooms on out. more in depth stuff on the 'scrap in due time. : ) descriptions per photos below... 1)  making heart-shaped eyes at this gorg bounty of farmers market kohlrabi (and yes, I bought some & brought a couple back in my carry-on) 2) make-shift ma po-inspired tofu, purple sprouting broccoli, spicy microgreens (hi radish, hi), brown jasmine 3) the mizuna-basil pesto from my 'last post' (and real life) w/ trofie pasta from TJ's - what a novelty, and a big, big, big side of wilted greens 4) the soothing thrill of 'just' picking up a few things from an asian market that includes actually, seriously, truly fresh thai basil <3 5) dusk glow bison on the drive back home from bozeman upon my return - one just sauntered past the front windows at our new place for the record 6) sichuan chili oil ramen stir-fry, tatsoi raab, pickled radish, chili crisp (etc) soy curls 7) thai black pepper + basil stir-fry, kohlrabi + carrot som tam, baked tempeh 8) kale/beluga/lemon/wg dijon salad situation 9) borlotti beans, fab greens, roasted potatoes + sunchokes (one of these jules resists, howev they travel so well!! and also, spring!! roots!! trendy!!), miso tahini hot sauce situation, noochy buttered toast 10) when in doubt, spaghetti - and then doubt is gone and dinner is in the precious pasta bowls, twirl twirl twirl more to be continued soooooon enough so I can continue this casual, culinary catch-up, yadda yadda. <3 for the record I have been out of cabbage for weeks and that is A-OK right now. oh and dinner duo photos by jules, of course. wishing y'all well, as ever. especially if you read these typed out words. ; ) #vegan #vegancooking #dinnerdiaries  #kohlrabi #cookingeveryday #wyomingvegan #spaghetti #homecooking

Bang Bang Tofu Ingredients: 15.5 ounces Extra-firm Tofu 1/4 cup Cornstarch 1/4 cup Panko breadcrumbs 2 teaspoons Garlic powder 1 cup Vegan Mayonnaise 2 tablespoons Sriracha 1/2 teaspoon White Sugar 1/4 teaspoon Salt Directions: Remove extra firm tofu from its packaging and drain all excess water. Wrap in a clean kitchen towel or paper towels and gently press to extract moisture. Place a light weight on top for at least 5 minutes. Preheat the oven to 400º Fahrenheit. Slice the pressed tofu into about 32 cubes. In a mixing bowl, combine cornstarch, panko breadcrumbs, and garlic powder. Toss tofu cubes in the mixture until evenly coated. Line a sheet pan with parchment paper and spread the tofu cubes evenly. Bake at 400º Fahrenheit for 40 minutes. While baking, mix vegan mayonnaise, sriracha, sugar, and salt in a bowl to make the bang bang sauce. Once baked, toss the crispy tofu in the sauce until well coated. Serve as desired with garnishments like red pepper flakes and chives. 🌟Cheezy Queso Brown Rice Casserole with Broccoli and Beans 🥦 🫘 (by @vegan.sisu, inspired by Gena Hamshaw) LOVED this dish!! The oil-free, vegan cheezy sauce was divine. Meg cut the fat in half by subbing in white beans 👍. Even though this dish is lower fat, it’s rich, filling, and satisfying. Just like the name, this recipe is loaded with so many healthy ingredients. Her changes also lowered the salt too ❤️. Meg’s post (April 17, 2024) shows the original recipe in photos. WHITE BEAN AND FARRO SALAD By @betterfoodguru RECIPE Serves 4-5 Ready in about 30 minutes * 2 cups cabbage shredded * 1 cup cherry tomatoes halved * 1 cup grapes halved * 8 oz farro cooked and cooled * 1/4 red onion diced * 3 roasted baby bell peppers * 1 avocado chopped * 1 can white beans drained * 2 persian cucumbers chopped * 1 handful fresh dill chopped * 2 tbsp fresh mint chopped * 3 tbsp vegan yogurt * 1 lemon squeezed * 1 tbsp date syrup * salt and pepper INSTRUCTIONS * Cook farro according to package, drain, rinse with cold water and let drain well for salad. * Roast peppers by adding to a sheet pan whole and cooking at 400 degrees for !5 minutes. Set aside to cool. Deseed and chop into small pieces. * Make dressing by combining yogurt, lemon, date syrup, a pinch of salt and pepper and mixing well. * To a large mixing bowl, add cabbage, tomatoes, grapes, onion, cucumbers, beans, farro, avocado, dill and mint and peppers. CREAMY COCONUT, CHICKPEA & POTATO CURRY 💛 By @nourishingalex Serves 4 - 1 medium onion, diced - 3 tsp garlic granules - 1 & 1/2 tsp ground ginger - 2 tsp ground cumin - 2 tsp ground coriander - 1 tsp dried chilli flakes - 1 tsp of turmeric - 1/4 tsp ground cinnamon - 1/4 tsp nutmeg - 650g baby potatoes, halved - 1 large carrot, sliced - 500ml veggie stock - 1 can of chickpeas, drained & rinsed - 1/2 can full fat coconut milk - salt & pepper to taste Method 1. Cook onion in a large saucepan or pot using a little olive oil (or water for oil free) on a medium heat setting for 8 mins until soft and translucent. 2. Add in all the spices including the garlic granules and cook for 1 minute until fragrant. 3. Add in the potatoes & carrot & chickpeas, then pour in the veg stock. 4. Bring it all to boil, give it a good stir, cover then leave to simmer on a lower heat setting for 15-20 mins until potatoes are soft enough to poke a fork through without breaking them apart. 5. When the potatoes are soft, pour in the coconut milk, cook for a further 15 mins with the lid off until the liquid has reduced a little. 6. Taste and season with your desired amount of salt and pepper. 7.
