A day on my plate 🍽️✨ I always said I would NEVER do one of these because people must know what they eat. On the other side, I find these posts very inspirational regarding meal ideas, given that the person actually eats enough and isn’t on some crazy diet. So I want to contribute to a healthier standard of these. An achievable day of eating that feels nourishing and abundant rather than restricting 🍓🍦 Seriously, with some of these people, I just end up thinking “What? Aren’t you still hungry?“ because they eat so little and it makes me sad to think that others then feel like they should be eating less too. Nope! Eating is joy, it’s fun and it’s fueling you so you can go out there and live your best life 💫 Meals from that day: - Chocolate protein overnight oats - Flat white at the coffee shop - Crispy chicken salad bowl - Blueberry banana bread with peanut butter - Tomato pasta with vegetable meatballs and burrata - Mochi balls & dark chocolate with almonds The portion sizes of these meals always vary and I might go back for seconds or thirds! Japanese curry chicken udon noodles 🍜 We wanted something warm and cozy tonight so yesterday I prepped and made Japanese curry with chicken wings. For Rika’s I have a kid friendly curry but diluted it more with water so it’s not so thick. For vegetables there’s carrot, potato and pumpkin, I’ve also deboned the chicken wings and given her thinner udon noodles, as requested by the boss. I always try to make the curry the night before to ensure it’s flavourful for the meal the next day. We usually use chicken wings as we like meat on the bone. Because this was made the night before it was a quick reheat and heated up the noodles and voila! Tonight’s dinner! Pot roast, mashed potatoes and gravy, corn I got the roast reduced to $3 a lb. I paid a little over $7 for it I seared it in a cast iron then cooked in the pressure pot with some leftover chopped onion, 1/2 a packet of ranch seasoning and about 5 pepperocini peppers (and of course salt,pepper, garlic powder) I had several Yukon gold potatoes leftover from last week so I made mashed potatoes with those and a bit of potato flakes I added a bit of heavy cream that was left in the fridge I just cooked three cans of corn that have been in the pantry a while #frugalfood #pantrymeal #momlife #frugalmom #simplemeals
