I was thrilled to have the opportunity to have a chat with chef and restaurateur extrordinaire, Guy Grossi @guygrossi for the latest episode of ExtraVirgin. (LINK to listen in bio.) Guy has carved out a distinguished career and made a significant contribution to the hospitality scene over the last forty years, both as a restaurateur and chef. In fact, in 1996, he was awarded the L'insegna Del Ristorante Italiano by no less than the president of Italy, for his dedication to presenting and promoting "La Cucina Italiana" and the Italian lifestyle. He’s written four cookbooks and has been on a slew of television programs, from "Food Safari" and Iron Chef, to "My Kitchen Rules." He also runs a small empire of highly regarded restaurants countrywide, including his flagship, Grossi Florentino as well as our very own Brisbane outpost, "Settimo." Guy and I chat all things food and hospitality, as well as Italian travel. We discuss why Italians don’t like penne lisce and the difference between fast and slow- dried pasta, what’s wrong with the hospitality scene and how the financial crisis is affecting it, as well as his favourite dishes from his Pugliese father and Venetian mother, who he'd invite and what he'd serve at a fantasy dinner party and more. We've been so lucky with the weather. All my previous Eiffel Tower photos are shrouded in mist, with grey skies, but today was perfect. We spent our last hours on the left bank mainly, walking 14kms through the upmarket shopping streets, picnicking on bread and cheese, having last beers, breathing in Paris and saying "adieu" until next time. Potato latkes always remind me of my grandmother. Honestly, there were very few people in my life who used oil with as little insouciance as she did. I can still remember the smell and telltale heat shimmer coming off the fry pan before she'd drop the coarsely grated potatoes in to a great sizzling and splattering. Everything she ever made was simple but absolutely flavour-bombed and these were no exception. They'd come with with some pale, soft bits and others that had dark golden crispy shreds of fried potato and we'd add great dollops of sour cream. Here, Zuza Zak, author of cookbook 'Amber & Rye - A Baltic Food Journey (Murdoch Books RRP $55.00) makes them Lithuanian-style, with smoked sausage and spinach.  This would make a super weekend breakfast dish but would be equally good at dinner. Personally, I'd still be inclined to dollop a little sour cream on top, just for nostalgia's sake.
