The real deal is akin to the original recipe here on Donna Hay’s website. My thermomixified version is as follow: * joint a whole chook in 4 pieces. * in Thermomix bowl, add all ingredients for the chicken marinade + 1/4 cup of chicken stock. Blend 10 sec/speed 6. * Pour over chicken and set aside until ready to bake (ideally a few hours in the fridge, but not a problem if you're cooking it straight away) * Don't bother with the broccoli marinade, this yield plenty. * Make boiled rice in your unwashed Thermomix bowl. Most of this zucchini is mixed with eggs, ricotta, Parmesan, milk and kale. Throw it in a baking dish. Drape the rest of the zucchini on top and bake the thing for 45 minutes. Very tasty with smoked ham (not too much) and some leftover arugula leaves. Not heavy food because ricotta is nice and lean, and lots of vegetables on our plate 💚 And this is how I used that spiral cutter, which is often useless in the cupboard 😉 ‘The New Zucchini Frittata’ - One Pan Perfect - Donna Hay - page 120 🇳🇱 Frittata 2.0 😋 Courgette in linten gesneden met de spiraalsnijder en omgeschept met olijfolie, verse munt en peper. Così quando l’altro giorno a colazione ci dividevamo una fetta di pane ridacchiando su qualche sciocchezza, o ci interrogavamo a cena sulla luce migliore per fotografare una pavlova, mi sono detta che non esiste mai l’impossibile. Bananen Kokos Kuchen mit 3erlei Milch . Dieses Rezept habe ich als Teil meiner Rezension von „MODERN BAKING“ von Donna Hay auf meinem Blog veröffentlicht. Noch heute ist ihr Buch (obwohl ich inzwischen echt eine beachtliche Sammlung an Backbüchern habe) eines meiner liebsten! Ein paar Anmerkungen zum Rezept hab ich aber noch: Wie oft mit Rezepten aus englischsprachigen Ländern ist auch in diesem für meinen Geschmack (und den meiner Bakannten) etwas zu viel Zucker drin, ich würde euch empfehlen, nur 275 g der gesüßten Kondensmilch zu nehmen und den Rest durch Kokosmilch zu ersetzen. Außerdem dürft ihr bei diesem Kuchen nicht mit allzu viel Kokos rechnen, da die Nuss nur als Kokosmilch und etwas Kokosflocken oben auf dem Kuchen vertreten ist. Die Bananen kommt dafür umso besser durch, wenn ihr gut gereifte verwendet. Ich habe unter meine geschlagene Sahne übrigens noch Mascarpone gehoben, da die Creme so etwas stabiler wird und sich länger hält. Ach ja und die Backzeit war bei mir etwa 20 min länger als angegeben, was ich nicht schlimm finde, denn ich hoffe jeder von euch macht vorher eine Stäbchenprobe, bevor ihr einen Kuchen aus dem Ofen holt. . . So here’s another one from the one-pot book. Tikka herbs mixed with yoghurt and the cauliflower, lentils, onion and chickpeas stirred in. Spread the whole thing on the baking tray. I didn’t have any paneer but I did have a piece of halloumi to put on top. Bake for 45 minutes in the oven. Served with yoghurt, young spinach leaves, lemon and fresh coriander. After frying the aubergine the slices are sandwiched with a ricotta and Parmesan filling and placed in the tomato sauce. Covered with Parmesan bread crumbs and baked half an hour in an hot oven. It is delicious! ❤️❤️❤️ I’m just wondering how the tomatoes in the book can look so bright and fresh after twenty minutes simmering to make a sauce and another thirty minutes in an oven… 😉 ‘Summery Aubergine Parmigiana’ - One Pan Perfect - Donna Hay - page 98 🇳🇱 Makkelijke parmigiana van Donna Hay’s One Pan Perfect 😋 Het maken van de saus, met kerstomaatjes, en vooral het bakken van de aubergineplakken duurde wat langer dan in het recept staat, maar was zeker de moeite waard. Na het bakken van de aubergine worden de schijven gevuld met een vulling van ricotta en Parmezaanse kaas en in de tomatensaus gelegd. Parmezaanse broodkruimels erop en een half uur in een hete oven zetten. Added garlic and celeriac and fried briefly. Pour in vegetable stock and simmer for half an hour, then puree. Serve with hazelnuts, tarragon (because that’s already growing vigorously in the garden), and a dash of buttermilk. It was way too much, more for eight people than for four, but delicious! So the rest will be gone as well today ❤️❤️❤️ ‘Celeriac-Fennel Soup with Hazelnuts and Tarragon’ - One Pan Perfect - Donna Hay - page 164 🇳🇱 ‘k Stond ervan te kijken hoe smaakvol, fris en zacht deze soep werd met maar een paar ingrediënten 😋 Venkel en ui worden een kwartier gesmoord in olijfolie. Mealprep Sunday We hadden nog wat soep over dus dat moet ik pas later volgende week maken. Wat maakten we dan wel : Wieland maakte Wortelcake met speltbloem, amandelmeel en ahornsiroop van Donna Hay als gezondere dessert. Minthe en Wieland maakten pannenkoeken traybake van Rutger bakt als tussendoortje voor school. Grimm maakte worstenbroodjes met sesamzaad om in de vriezer te steken (altijd handig om een hartige snack in de vriezer te hebben zitten voor een druilerige dag) Het eiwit dat ik daarvan over had stak ik in een zakje in de diepvriezer zodat ik daar meer restjes eiwit in kan verzamelen tot ik genoeg heb om schuimpjes te maken. Ook staken we twee porties gehakt voor later in de vriezer net als porties kip. Tom maakte appelflappen met walnoot van Sandra Bekkari als tussendoortje en ook de healthy chocomouse (avocado -banaan ) van Claudia Van Avermaet net als havermout ontbijtjes voor Minthe en mij voor de rest van de week. En voor mij staken we zes porties witloof in bloemkoolsaus van Sandra Bekkari in de vriezer 🥰. De dochter heeft examens deze week dus dan voorzien we wat gezondere desserts die ze uit de vriezer of koelkast kan nemen. Zo is er nog pompoenbrownie en pompoenwafels en amerikaanse pannenkoeken die ze zo uit de vriezer kan nemen. En er is voldoende verschillende soorten fruit en snackgroenten in huis zoals gewoonlijk. En voor haar staat er alvast komkommer en hummus klaar want dat eet ze graag als tussendoortje en gekookte eitjes voor ons allemaal. Kwestie van genoeg zoet en hartig in huis te hebben allemaal 😉. En voedsel dat voor genoeg 'crunch' zorgt want blijkbaar stimuleert dat het brein 😉... Extra gezonde dopamine aanmaken. Pineapple 🍍 upside down cake A classic American cake with a modern twist. I make a few tweaks to the original recipe from Donna Hay. The cake is buttery moist & still sweet to my palate. May be I will add some lemon zest ( some rum too ) next time, to balance the sweetness. Foodnotes: - In 1920s, Dole held a pineapple recipe contest.
