PASTA FOR BREAKFAST is not weird. It’s delicious. I made so much pasta dough the other day that I had enough to make cherry VARENIKI, just like we did with my mum and grandmother. These are sweet and make a lovely breakfast when you serve them with a dollop of yoghurt and some fruit spread or agave. I also like to go all fancy with a sprinkle of lightly toasted ground almonds or walnuts. A little crunch just adds something. And if you want a traditional version, swap the yoghurt of proper crème fraiche or a little melted butter. Make the pasta using the recipe from my previous post, roll out thinly, cut out circles, put a cherry (fresh or frozen) in a centre and then shape into half-moons like I did or simple tortellini. Bring the water to boil, drop the pasta in, cook until they rise to the surface, drain and serve. You can also put them in a single layer on a tray dusted with flour, cover and freeze. Then store in a bag and use within 3 months. Easter Sunday morning, I decided to make bagels which I hadn’t done since late 90s. (Pics 1-2) I can’t exactly say it was like riding a bike or as easy as baking the bread I’m accustomed to. Anyway, I tried and found it a fun but laborious task. The short is I had some hiccups with the technique and I knew that with practice comes improvement. I thought about what I would do differently next time and told myself to make bagels a couple of times a month. So today I had at it again. (See pics 3-4) I wasn’t actively thinking on anything philosophical; just focusing on my task and getting the bagels into the water bath. I so wanted to incrementally improve my bagel making and was happy with my progress so far. While I was working, my spirit was stirred with this idea of “process”and carrying the lessons forward. This whole idea of trust the process. Sometimes, all the time, we’re being processed. Even when we’re unaware and think we’re struggling or going nowhere or not doing anything significant - we are in process. And what I thought may have been insignificant was a critical component to my training and competency. We’re born equipped by GOD. And it’s when living, (truly living) that we’re being trained, developing gifts and talents; refining our equipment so to speak. Just look back and see it and how it relates to your dreams and the destiny before you.
