Roncal – Erronkari, which is also a municipality, is located in the province and autonomous community of Navarre, northern Spain. It is part of the Roncal Valley mancomunidad. The Roncalese dialect of Basque was historically spoken within this valley, but went extinct during the last century. Today, a number of Basque speakers of other dialects of the language are living there. “The Basques are a Southwestern European ethnic group, characterized by the Basque language, a common culture and shared genetic ancestry to the ancient Vascones and Aquitanians. Basque is the last surviving Paleo-European language spoken indigenously in Europe. Carolina’s seen it all. Conceived in the wake of Sabin Arana’s conception of Catholic Basque nationalism, in 1936 she felt Bilbao’s aerial bombardment and subsequent occupation by Franco’s troops. Whispers of ETA drifted her way in the 1950s just as industrial iron production started laying siege to the green of Bizkaia, the city stained black. Behind that glass countertop, throughout the 60s she heard the stories of the struggle for independence really hotting up. None the less, Bilbao was growing, and the late 70s brought Carolina the great British intellect trying to clean the stains of prosperous industry, steering Bilbao into a modern, urban future. August 1983 and Carolina had to learn to swim. Up to the height of heads, the historic centre was inundated with toxic water. ETA were already showing differences of opinion and prisoners were well accumulated around the Spanish state. Strategically distanced from their loved ones, Carolina watched as graffiti was sprayed and the banners hung – ‘presoak kalera’, ‘presoak etxera’ - calling for prisoners to be brought home, named terrorists by those who command armies of professional murderers. She called the names of those that struggled against a vanguard, but no-one remembers. Come the 90s and she watched as Inaki Azkuna, puppet of conservative Basque politics, had an idea. Storytime with the Guggenheim Foundation and in ‘97 Carolina was present at the great unveiling. 2012, the city already lost in essence, and Carolina hears the shots from near the stadium of San Mamés. Iñigo Cabacas was dead, laid down in cold blood by the Basque police. Bilbao eternally wrung dry by the constant struggle for power, Carolina still sits with her old friends ‘bollo de mantequilla’ and ‘pastel de arroz’, joking at the latter having never seen a grain of rice in its life, and watches as the French pastries crowd in on their fun. At the end of the day, she’s a meringue sitting atop a pastry case. The ‘talo’, a flat, unleavened corn bread cooked without the use of an oven, is the Basque version of those endless variations that one associates with Latin American cultures. Indeed, the use of corn in the Iberian north took off after a significant movement of people to the Americas in the 16th century, largely due to the difficulty of cultivating wheat and barley in their home land. High humidity and mountainous terrain combined with a period of far greater self-sufficiency and reduced logistics caused corn, a crop not scared of a drop of water and from which a greater quantity of fruit is harvested proportionally, to be a staple all along this northern Atlantic coastline. Historically, the talo would have been the bread of the ‘baserri’. Whilst wheat can produce breads that last a family for days, those made solely from corn are far from durable. As such, just as the beloved nacho is leftover corn bread that is then fried, uneaten talos were often broken up and cooked with milk to create a kind of porridge to be eaten for dinner. These days, talos are seen rarely in the Basque Country, their presence generally being limited to festivities such as Santo Tomàs on December 21st, a day that historically marked the beginning of winter. “Food is a state’s treasure. Weapon’s are a state’s claws. Walls are a state’s means of defending itself. These three things are ‘instruments’ of the state” said Mo Zi, a Chinese philosopher born around 470 BC, noted by @fuchsiadunlop in the wonderful #invitationtoabanquet . Simplistic as these statements may seem, their relevance continues to ring true to this day. Despite their proclamations of traditional Basque cuisine, a set menu at Bilbao’s Gure Kabi doesn’t stand out as being ferociously Basque, but then what is? After centuries of oppression on behalf of both the French and Spanish states, that which has taken the form of anything from the illegalisation of regional practices, including the speaking of Basque, to state-sanctioned mass murder, it is of no surprise that whatever ‘Basque’ cuisine was is being steadily incorporated into a regional variation of ‘French’ and ‘Spanish’ cuisine. “Croquettes are French” she said, and his heart sank. With croquette recipes coming from as far away as Sri Lanka, it takes a truly imperialist approach to believe that the French invented croquettes. Alongside said fried balls of glory, one of Gure Kabi’s ‘special menus’ offered cured meats, tuna belly salad, fish soup and steak, all of which are standard dishes of an Atlantic region also capable of grazing animals. Culinary history resembles geography and historic trade routes much more than it does nation states but, as one of the obelisks culture, any given nation state needs to own the national cuisine in order to own, and subsequently trade in its own culture. How else could a city like Madrid, free of both coastline and rivers, celebrate a calamari sandwhich as one of its regional specialities? Gure Kabi do offer the handful of dishes that the Spanish culture industry has permitted to known as Basque, but one can easily navegate away from them, even unintentionally. Regardless of what one believes their level of Spanish to be, on stopping for lunch at an inland Basque taverna, one might find themselves thoroughly confused as to the meaning of a dish on offer. ‘Sopa de ajo’, or garlic soup, is known across the Iberian peninsula, and although understood to be regionally nuanced, its Basque counterpart is unrecognisable by name. The Basque language being endless in regional variations, ‘zurrukutuna’ originates from the Basque verb ‘zurrupatu’ or ‘zurrukutu’, meaning to slurp or suck. It’s a ‘sopa de ajo’ in the sense that garlic and bread are two fundamental components, but it goes on to further define itself through the inclusion of salt cod and the pulp of red peppers known as ‘pimientos choriceros’, the latter still seen hanging to dry en masse from the rafters of traditional ‘baserri’ farmhouses. Once rehydrated in hot water, the pulp is scraped out to form one of the backbones of Basque cuisine. As with all Atlantic facing peoples, the Basques have a long, involved history with cod. They’ve been catching, salting and bringing it home for at least 500 years, profitably venturing as far as Newfoundland on the now Canadian east coast. Revered seaman, they were once regarded as masters of the Atlantic, approached for advice by other nations for being ‘the only people who understand whaling’. If such a thing as a traditional recipe exists, zurrukutuna would be made with a type of bread known as ‘sopako’, ‘sopa’ meaning soup or broth, the declination - ‘ko’ - referring to it’s origin or use. In short, ‘bread for soup’. A thin baguette oval in shape, ‘sopako’ is designed to have a large surface area of dark crust in order to give soups flavour and consistency. The Basque Country, said in English, sounds like a simple reference to a region of Spain. Paìs Vasco, the literal translation in Spanish and the name of one of seventeen administrative Spanish regions, sounds equally free of confusion. However, the slightest of critical looks at this convenient simplicity embarks us on a long, complicated journey of land and language, people and power. Paìs Vasco, or Euskadi in Basque, both being the area recognised by the Spanish state as Basque, is made up of three regions: Bizkaia, Gipuzkoa and Araba. However, Euskal Herria, the left-leaning choice of name for the Basque Country, that which makes reference to the ‘Basque-speaking people’, consists of the three regions mentioned previously plus Nafarroa, but goes on to include the three regions on the French side of the Pyrenees in Iparralde: Lapurdi, Behe Nafarroa and Zuberoa. This historic process of separating people, places, language and culture has been intentional on the part of European imperialist powers and carries a long, bloody history that is far too complex to summarise here. Nafarroa is often regarded as the home of the Basque Country, despite it being a separate region according to the Spanish state. One reason for this is that at its largest the Basque Country spanned the Pyrenees, stretching as far as Leòn to the west and Catalonia to the south-east, the seat of power was Iruña and the area was known as the Kingdom of Nafarroa. Basque, or Euskera, was an official language, it being spoken by kingdom officials. Nafarroa is now a large, inland region that continues to be very Basque speaking in the north but less so in the south. Iruña is a city famous for its yearly abuse of bulls and Tudela for its artichokes. It has no coast and, stretching into central Spain, is very dry in parts. Sounds like home to a regional cuisine of river fish and cured pork, right? ‘Trucha a la Navarra’ or Nafarroa-style trout is exactly that. Culture, it was once said, is like holding a fish fresh out of water. You think you’ve got it clearly in your hands, only for it to wriggle its way off again, escaping definition. This can not be said for the Basque ‘irrintzi’, a call or wail originating amongst the mountain folk of Euskal Herria. When it happens, you know exactly what it is, horrible, the only question left unanswered being ‘why?’. Many cultures have a call or shout they regard as traditional, the Basque irrintzi – literally translating as ‘shout’ or ‘wail’ – being characterised by its sharp, high pitched nature, performed in one single breath. These days, its use as an inter-valley communication tool is unsurprisingly in decline, it now being somewhat relegated to celebratory use, be that at a fiesta or after the accomplishment of some feat or other. Here, at @irrintzibilbao in Bilbao’s Casco Viejo, the only similarity between it and its namesake is that it can get a little noisy. Brimming with pintxos of the most untraditional nature, it’s a good spot for vegetarians as their choice is increased beyond a mere tortilla. Some of them become unnecessarily unconventional but, it being popular, they’re nearly always fresh. With all the pride and glory they feel towards their region’s culinary brilliance, it’s incredible the number of taverns here that are more than happy to let a jamón sandwich sit on the bar all day, stale since 11am. It’s a quintessentially Basque affair. This toothpick laden with three simple ingredients, regularly combined across all territories that touch the Mediterranean, has been endowed with a glory completely disproportional to its culinary originality. Despite it’s size and simplicity, the gilda has become one of the most emblematic representations of Basque cuisine. It’s been said that @robinfood is the ambassador of the gilda, but he’s not, the gilda is the culinary ambassador of the Basques. Green olives, anchovies and pickled chilies: these are the ingredients that constitute a classic gilda. Pickled anchovies, known as boquerones, and spicy peppers from La Rioja are a welcome divergence but, as one can imagine, the variations extend, exponentially, into the use of other ingredients. Octopus, pickled onions and salt cod are fixtures commonplace in the more upmarket pintxo bars of Donosti, and it comes as no surprise that the likes of Martin Berasategui et al. have made attempts at deconstructing this wonderful hit of flavour into spheres and foams. Divine, sure, but not a gilda. Legend has it that, towards the end of the 1940s in Donosti, a local known as Txepetxa in Asador Casa Vallés took the liberty of combining onto a toothpick some of the various snacks available on the bar. Around this time, a film directed by Charles Vidor had been released, premiering at the Donosti Film Festival in 1948. Rita Hayworth’s protagonist, ‘Gilda’, described as “green, salty and spicy”, seemed an appropriate namesake for a snack of equal allure and, as such, the gilda was born. Beautiful, yes, and well made, absolutely delicious, but let’s be happy with that. Gildas are not to be served on plates or turned into foams, debated at conventions or turned into spheres. The cold has well and truly arrived here in the Valley of Txorierri, a once natural paradise now engulfed in the smog of Biscay’s industrial history. Cold demands comfort, warmth, and that knowing that dinner won’t be necessary (but you’ll eat it anyway). For that, there’s gazpachos manchegos. Although far from being Basque, the croquette, or ‘croqueta’ in Spanish, is a staple of any pintxo selection. Along with a good, just-set tortilla and a solid jamón sandwich, you’d struggle to pass a decent bar in the Basque Country that, around noon on any given day, doesn’t have any on offer. With classic fillings of jamón and leek, squid and its ink or wild mushroom, it’s hard to knock a freshly fried ball of bechemel sat a top a slice of (preferably fresh, but often not) baguette. Rumours even echo through the alleyways of Bilbao’s old town that some bars add a bit of yeast and let the mix ferment, but this is yet to be verified. This particular croqueta was enjoyed at Begotxu Jatetxea in the village of Armintza, a stone’s throw from Bilbao’s eastern beaches. Continuing along the coastal road, one soon encounters the abandoned Lemoniz nuclear power plant, so close to completion that its reactors were already in place before the project was canceled. The official story is that construction was abandoned due to a change in government, but upon little digging it is clear that a broad, anti-nuclear social struggle and regular attacks on the part of ETA in the late 1970s and early 80s were factors of significant contribution. Given the locations environmental importance and proximity of local populations, it is no bad thing that, for whatever reason, it’s been left to rot. Basque Cultural Day 2023 on Oct. 21 was so inspiring. We heard behind-the-scene reports of life at Basque boardinghouses and there was lots of discussion about how women are carrying on Basque traditions. The day was full of stories and information about Basque culture. We are a little late, but want to spread awareness of Plaza Urrutia which is now being considered by History Colorado to become a historical property!! Despite being built in 1978, it is the only Basque handball court, known as a pelota, in the state of Colorado, making it a unique cultural landmark. The Basque handball court, Plaza Urrutia is a cornerstone of Canyon View Park since 1978. It was built in the barnyard of Basque rancher and businessman Jean Urruty. In 1990 the fronton (court) was considered to be demolished for parking spots, but because of the cultural significance and strong advocacy, the handball court has stayed and been a unique experience for visitors. A Basque handball court is where people can hit a ball against a wall with either their hand, racket, or bat. The Basque community has a long and fruitful history on the Western Slope. Now that it has been recognized as a historic designation, there are hopes to bring people form all over the world and have events to further educate and experience the rich history in the area. Jose Bengoechea, Joe to his friends, built his residence and boarding house in Mountain Home, Idaho in 1910. He travelled to America from the Basque Country in 1881, eventually making a killing in the "sheep business" in Nevada before moving to Idaho. By 1917, Joe was the richest man in Idaho. However, after the end of WWI, the price of sheep dropped significantly and Joe had over-invested. He died broke in 1921. Joe's hotel still sits in Mountain Home and we know someone who lives there! @cosmiccalista Strange activity goes on in the old hotel it has been oft reported, and Idahistory's friend has some of her own stories to tell! ❓Have you ever heard of the remarkable "Bateleras”? 🌊At the end of the 16th century, women of Pasajes San Juan demonstrated great skill in handling boats. At the time galleons sailed to Newfoundland to fish for cod or hunt whales, often leaving behind no men. Women perfectly replaced them to tow ships or galleons to port and to transport goods and passengers. 👑In 1659, King Philip IV of Spain visited the port of Pasajes. There, he witnessed quite a spectacle. Several war frigates were concentrated in the channel, the galleon Roncesvals and the Royal Capitana with 1,500 tons and over 91 guns. More than 200 boats followed the King's barge, all managed by local women, who impressed the king with their rowing skills and their colorful attire. 👒According to texts from the time, they wore a straw hat surrounded by a wide black, red, or blue ribbon with anchors at the ends that fell over their shoulders, low-cut straight neck, but covered with a silk scarf with a sailor bow. The chocolate-colored outer skirts were tucked away to make the job easier. They were almost always barefoot. 🚣🏾‍♀The gradual modernization of the boats made the old boat trade disappear. Just a few steps away from the crowded Parte Vieja of Donostia, we found this hidden gem. An exhibit of frontones (Basque handball courts) throughout the Basque Country at the Institute of Architecture of Euskadi. We loved the Pilotalekuak exhibit and the museum. We got practically a private tour because barely anyone was there and I don’t understand why. It’s lovely, a modern setting in a historic building. The museum is fairly new. The handball court exhibit will be there until Oct. 1, so if you are in Donosti and you like handball or Basque history, check it out!
