Happy New Year! I tried a cold-sear on some Ribeyes tonight for the first time. Pretty good, and will definitely try again even though I overcooked mine a tad for my taste. Served with a broccolini sautéed in garlic and red pepper with a squeeze of fresh lemon; baked potato with crispy, salted skins and fluffy insides served wit Irish butter, sour cream, freshed-snipped chives from the yard, and cracked black pepper; Campari tomatoes; mushrooms and onions sautéed in the steak skillet and deglazed with a splash of red wine; and a glass of Stones & Bones red wine from Portugal to go with the steak. After a loooong week w/hosting and speaking at an event and then a work trip to Philly, I thawed the steaks yesterday...only to realize I had NO energy to grocery shop for sides OR cook. So, I spent the day on the couch and tried again today. My fridge is now full and so are our bellies. Grilled NY Strip. Tender and juicy and SUUUUPER overcooked for my preference. Roasted garlic-rosemary baby potatoes. Asparagus simply grilled with lemon zest, EVOO, S&P. Caramelized onions and baby portabellas. It's officially SPRING in our house the moment the first perfectly vine-ripe, just-pict from the fields, strawberry from @porter.farms hits my lips. That happened yesterday. Today, I made pancakes to properly respect these beautiful berries. I made this batch of pancakes with cornmeal, whole wheat, and white flours; maple syrup; vanilla; @countrycrock vegan butter; and, as always, whipped egg whites folded in at the end tonkeep them light and fluffy - even with the added whole grains. I served mine with @icelandicprovisions plain Skyr; Maple Butter from @aldiusa ; and of course, plenty if fresh strawberries which I rested in a sprinkle of raw sugar to draw out the juices. Pancakes served this way is a nod to @pamelasdiner in Pittsburgh that introduced me to strawberries, sour cream, and brown sugar on pancakes nearly two decades ago. SCRUMPTIOUS! Starting my day with delicious @cafemilagro coffee beans - freshly grown and roasted in Costa Rica thanks to my seester @ellenzamo. Yum!!! Currently I use a @staresso.official to hand press two shots of esspresso and add milk and hot water from my @cosoricooks gooseneck electric kettle to make a delicious double Americano au lait. Christmas Baking & Candy Making: 2022 Gluten-Free Edition I spent Christmas with FOUR Gluten-free family members, so I made all of my treats GF. 1) Gluten-free Baklava with homemade Gluten-free phyllo dough: this was the most tedious and ambitious project I have taken on. The Baklava recipe is my mom's mom's recipe which she allegedly learned from her Lebanese neighbor in Weirton, WV. 2) Gluten-free Cracker Toffee: this recipe was a favorite of my Dad's mom, and seemed fitting to include so both grandma's were honored. I replaced the traditional saltine crackers with @scharglutenfree table crackers. These ended up being my favorite. 3) Rocky Road Fudge - I was told my niece likes fudge. My dad loves fudge too, and rocky road ice cream used to be his favorite, so I decided to make rocky road fudge. I topped my basic fudge recipe with mini marshmallows and chopped walnuts. The fudge was creamy and the toppings were a great addition. Unfortunately, I didn't photograph it until I returned home and snapped a picture of the leftovers I had refrigerated, so you can see the texture is off in the picture. In real life it was a win. 4) Crispy Chocolate Covered Peanut Butter Balls - these are always a crowd favorite and are another recipe from my mom's mom that I updated with a twist from a former coworker. We were gifted a huge, frozen smoked turkey drumstick at Thanksgiving (thanks, momma @kdallen2000) + I was craving a baked potato + I still had a bag of fresh cranberries in the fridge from Thanksgiving = this "Thanksgiving Classics with a Twist" meal. Roasted potatos with salt, pepper, butter, sour cream, and mushroom gravy. Smoked dark meat turkey served doused in mushroom gravy. Fresh cranberry sauce flavored with fresh orange juice and zest, vanilla, nutmeg, and O3 orange liqueur. Stovetop green bean casserole with dried shitake mushrooms and onions, lots of butter, cream, milk, and a variety of gourmet cheeses with lightly steamed grean beans topped with a ritz cracker crumble.
