✡️✡️✡️✡️✡️✡️✡️✡️ Today’s post from ethnojunkie.com: The Fifth Question On a very recent visit to Brooklyn’s Brighton Beach, I stopped by a modest bakery and was surprised to see that they were displaying their own rendition of what appeared to be chocolate coated matzos. I knew chocolate coated matzos to be a Passover specialty that always came in a box branded Streit’s or Manischewitz – which prompted me to wonder, “Why is this chocolate coated matzo different from all other chocolate coated matzos?” So I bought one to take home. In deference to the holiday season, I will avoid the word “miraculous” but it was unexpectedly delicious. So much so, in fact, that I returned the next day to purchase another four – in case of breakage in transit, I told myself, but I wasn’t fooling anybody. And the answer to the fifth question? The first bite communicates rich, milk chocolate with a little matzo as a counterpoint. Manischewitz (on the right) tastes like matzo with a de minimis layer of chocolatey glaze; it’s okay if it’s all you’ve ever sampled, but the blob of chocolate on the left plate is a clue to its nature. Of course, that unpredictable dollop comes with a price: with that much chocolate, matzo is bound to sacrifice its crispness as compared with the matzo-ex-machina perfection of the packaged version, but it’s one well worth making IMHO. And yes, of course I will reveal the provenance of this unusual delicacy. Easy Zucchini Butter 🥒🧈 Ingredients: 2 to 4 tablespoons extra-virgin olive oil, divided 2 1/2 pounds (3 medium-large) zucchini 3 cloves garlic, smashed and peeled 3 to 6 sprigs fresh thyme Salt, to taste Freshly ground black pepper About 1 teaspoon fresh lemon juice Method: Get the pan going: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Prep the zucchini: Trim the ends of the zucchini and grate them using a box grater or food processor. Add the grated zucchini to the skillet as you go. Add the aromatics and season: Bury the garlic cloves and thyme sprigs in the skillet with the grated zucchini. Sprinkle generously with salt and stir. Cook it down: Stir the zucchini occasionally as it cooks. If it starts to brown too much, reduce the heat and add a splash of water if needed. It may take 20 to 45 minutes to cook down to a jammy consistency. Finish and season: Once the zucchini is reduced and cohesive, remove the skillet from heat. Remove thyme stems and mash the softened garlic cloves. Stir in additional olive oil, pepper, and lemon juice. Taste and adjust seasoning as needed. Store: Allow the zucchini butter to cool, then transfer it to an airtight container. Refrigerate for up to 1 week or freeze for up to 6 months. Peach Frangipane Puff Pastry Tarts 🍑🥐 Ingredients: 1 sheet all-butter puff pastry (14 to 16 ounces), thawed 1 cup almond flour 1/2 cup sugar 1/8 teaspoon salt 5 tablespoons unsalted butter, at room temperature, sliced 1 large egg 2 tablespoons all-purpose flour 1 tablespoon amaretto or 1 teaspoon pure almond extract 1 teaspoon vanilla 1 1/2 pounds (about 4 medium) ripe peaches, cut into 1-inch wedges 2 tablespoons turbinado sugar 3 tablespoons apple jelly or apricot jam 1 tablespoon water Special Equipment: Food processor Method: Preheat the oven to 375°F and line a baking sheet with parchment paper. Unfold the puff pastry on a lightly floured surface and roll it slightly to even it out. Cut the pastry into 9 pieces to make squares or rectangles. Make the simple syrup: In a small saucepan, combine granulated sugar, water, and rum. Cook over medium heat until sugar dissolves. Set aside to cool. Combine dry ingredients: In a medium bowl, whisk almond flour, all-purpose flour, and salt until well combined. Soda Bread Biscuits Ingredients: 3 cups all-purpose flour 1/4 to 1/2 cup sugar (adjust to taste) 1 teaspoon baking soda 1 teaspoon Kosher salt 1/2 cup (1 stick) unsalted butter 2 teaspoons caraway seeds (optional) 1/2 to 1 cup raisins (optional) 1 1/4 cups buttermilk Instructions: Preheat your oven to 425°F (220°C). Butter a standard muffin pan. In a large bowl, whisk together the flour, sugar, baking soda, and salt. Cut the butter into tablespoon-sized pieces and add them to the bowl of flour. Use your fingers to work the butter into the flour until the mixture resembles coarse meal. If using caraway seeds, raisins, or other add-ins, mix them into the flour mixture. Ohn No Khauk Swe (Coconut Chicken Noodles) - a dish that proved to be a popular group choice for this month's #aroundtheworldin80dishes visit to Myanmar (formerly Burma) hosted by Claire @thecultiveater and co-hosted this month by Ciara @countrylifegoddess !  My version was a slight variation of this classic Burmese dish as I had to substitute Coconut and Ginger Rice for the traditional egg noodles - but the end result was absolutely delicious, beautifully tender chicken in an amazing soupy sauce. Cheddar Bay Biscuits Ingredients: 2 cups all-purpose flour 1 tablespoon baking powder 2 teaspoons granulated sugar 1/2 teaspoon garlic powder 1/4 teaspoon salt 1/2 cup unsalted butter, cold, cubed 1 cup shredded cheddar cheese 3/4 cup buttermilk 2 tablespoons chopped fresh parsley (optional) 2 tablespoons melted butter 1/2 teaspoon garlic powder Instructions: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it. In a large bowl, whisk together the flour, baking powder, sugar, garlic powder, and salt until well combined. Add the cold cubed butter to the dry ingredients. Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs. Stir in the shredded cheddar cheese until evenly distributed throughout the mixture. Pour in the buttermilk and stir until the dough comes together. Be careful not to overmix. Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the biscuits are golden brown and cooked through. While the biscuits are baking, mix together the melted butter and garlic powder. Once the biscuits are done, brush the tops with the melted butter mixture. Sprinkle chopped fresh parsley over the biscuits, if desired. Serve the cheddar bay biscuits warm. 😋🌶️ Kofta-Style Chicken Stuffed Peppers with Yogurt Mint Sauce 🌶️😋 Ingredients: 1/2 cup whole-grain bulgur 1 tbsp extra-virgin olive oil 1 medium chopped yellow onion 4 large cloves garlic, minced 2 tsp ground cumin 1 tsp ground coriander 3/4 tsp red chili flakes 1 1/2 tsp kosher salt 1 lb ground chicken 2 medium diced tomatoes (or one 15-oz can diced tomatoes, drained well) 1/2 cup chopped fresh cilantro 1/2 cup chopped fresh mint 6 medium red, yellow, or green bell peppers For the yogurt sauce: 1 1/2 cups non- or low-fat plain Greek yogurt 2 tbsp extra-virgin olive oil 1 1/2 tbsp fresh lemon juice, from 1 lemon 1/4 cup finely chopped fresh mint 3/4 tsp kosher salt Method: Preheat oven to 400°F. Cook the bulgur: In a medium saucepan, bring 1 1/4 cups water to a boil. Add bulgur, stir, cover, and simmer until tender, about 12 minutes. Set aside. Make the filling: In a large skillet over medium-high heat, add olive oil. Sauté onion and garlic until tender, about 5 minutes. Add cumin, coriander, chili flakes, salt, chicken, and tomatoes. Cook until chicken is done, about 7 minutes. Stir in cilantro, mint, and cooked bulgur. Remove from heat. Prepare the peppers: Cut the tops off the bell peppers and remove seeds and membranes.
