7/2/24 • 热干面 Reganmian, literally "hot dry noodles", is Wuhan's most famous breakfast food: sesame paste, soy sauce, pickled long beans, pickled radish and pork mince are tossed through thin noodles. Grain Gallery (previously Mr Yu's Noodles - same restaurant, same menu, just a name change?) offers topping choices of braised beef, pork intestine, beef tripe, beef tendon, or all of the above. We went for tendon. It turns out the 热 re ("hot") refers to the temperature the noodles are served at (as opposed to 凉面 liangmian ("cold noodles"), rather than chilli heat. However, there is self-serve chilli oil by the front register, and the noodles were all the better for it! The flavour was otherwise a tad bland (needed more sesame paste, but also a bit more of everything, really). Two other Wuhanese breakfast specialties we tried (though we had them for our dinner) are mianwo 面窝 and doupi 豆皮. Mianwo is a savoury doughnut-shaped morsel made of flour, rice milk and soy milk with green onions and sesame. It has a moist, spongy texture that reminds me of a tres leches cake that's been soaked in milk, except a mianwo not actually wet, just thoroughly moist in a self-contained way. Doupi reminds me of Taiwanese danbing 蛋饼 or Heilongjiang's kaolengmian 烤冷面 in appearance: it's a tofu skin crepe topped with a layer of sticky rice - the interesting thing was that the tofu skin is only on one side, rather than 2 pieces sandwiching the rice. I loved it because I love sticky rice. Not so Wuhanese but we also tried their 盐酥鸡, (Taiwanese) popcorn chicken and 地瓜球, mini sweet potato balls filled with taro.

🍜Hot Dry Noodles (Règānmiàn, 热干面) 🍝 Hot Dry Noodles originated from Wuhan city in Hubei province. Unlike other noodle dishes commonly served in soup, hot dry noodles are eaten dry and are often enjoyed for breakfast. The dish was first created in 1932 by Li Bao, a noodle vendor who made a living selling bean jelly and noodle soup. However, on a hot summer day, his noodles would go bad very quickly, and he still had a lot of leftovers. So he decided to boil them and lay them out on the table. He accidentally knocked over his sesame oil onto the drying noodles and couldn't bring himself to waste such precious ingredients, so he decided to mix the noodles with the sesame oil and added the same seasonings he would use for his other dishes, such as sesame paste and spring onion. Tossed in a rich sesame-based sauce and adorned with scallions, cilantro and pickled 🫛veggies, they were delicious. Especially with a drizzle of 🌶️chili oil, which was seriously lethal in a good way. This was accompanied by a cold 🥣broth that 🧩puzzled me in terms of how to consume it. I wasn’t sure if I should sip it or add it to the noodles. In South-Central China’s landlocked Hubei province, the capital city Wuhan is beloved for its breakfast staples and snacks—chief among them 热干面 (règānmiàn) “hot dry noodles.” Served steaming and soup-less in to-go bowls with a barely-saucy coat of ground sesame paste and simmered house stock, #reganmian is now regarded as one of China’s Four Big Noodles. Reganmian is, unsurprisingly, Wuhan’s most emblematic food. This is no small distinction in the Breakfast Capital, where a saying goes that you can eat a different breakfast every morning for a month and not eat the same thing twice. In Wuhan, you don’t just have breakfast. Instead, you “过早 (guòzǎo),” as the locals call it. This fast-paced, vibrant breakfast culture evolved from the needs of dock workers, a fixture of the port city at the intersection of the Changjiang and its tributary Hanjiang (Yangtze and Han Rivers). Carb-heavy meals like noodles, dumplings and fried breads were extremely popular to #guozao, “pass the morning.” Reganmian, at its core, is comprised of alkaline wheat noodles, the all-important sesame oil and sesame paste sauce, mixed with a little light and dark soy for base flavor, a touch of fermented white pepper, pickles and scallions. Over the years, braising stock became a fixture too. And for spice lovers, a dose of house chili oil is standard. One is “passing the breakfast.” Since Wuhan is the center of transportation in eastern China, people here need to finish their meals for work as quickly as possible. Therefore, you may see them eating breakfast while walking or cycling. Another is celebrating breakfast. The Wuhan adage “having the same breakfast as the emperor’s” shows that the Wuhanese treasure their breakfast and want to make it a ritual. Staple food, meat, and protein appear the most on their table.
