Lancaster County has five Mason-Dixon line markers along her southern border. I recently posted about an easy to get to one at the intersection of Grubbs Corner Road and Pilottown Road. Another is located inside Lancaster Conservancy's Rock Springs Nature Preserve. I attempted to find it once before but was defeated by an incredibly dense briar patch. Last weekend I tried again. This time wearing thicker pants and leather work gloves. Not only did I find it, but the marker proved to be an elusive "crownstone." . While there is a stone marker every mile, larger crownstones are found every fifth mile. These prominent crownstones boundary monuments included two coats of arms. On the Pennsylvania side is William Penn's coat of arms, while the opposite shows the coat of arms of Maryland's founding Calvert family. Not far from the 0.0 mile trailhead of the Allegheny Trail, I visited my second Mason-Dixon Line marker. P on the Pennsylvania side. WV on the West Virginia side. 1885 on another side - presumably when this marker replaced what was originally there. Unidentifiable characters on another side. Perhaps the characters showed the year that Mason and Dixon passed along here during their surveying from 1763 to 1767. Another marker that’s on publicly accessible land is @masondixonhistoricalpark in Core, WV. JAMBALAYA | SHRIMP | CHICKEN ANDOUILLE SAUSAGE Winter down South is so unpredictable. February could be a deep freeze, or temps reaching the 80s. I love winter, and I dread the days the heat creeps back up towards 100. I especially love the foods of winter, and to me, Jambalaya is a winter eat. It’s really hearty, stick to your ribs kind of fare. I prefer mine without tomatoes— it’s a preference, not an argument, although I do cook a tablespoon of tomato paste in with the trinity of vegetables before I add the fat, the rice, and the stock. If there’s seafood in the mix, I like to use homemade shrimp stock if I have it on hand, and I reduce it to double strength. This version is Shrimp | Chicken | Andouille Sausage and gets a liberal finish of fresh chopped parsley and sliced scallions tossed in just as the lid is removed. I’ll check the pot for seasonings and add a little Creole seasoning if it needs it, but wait to add heat until it gets to the table, where I’ll pass all three of the traditional favored hot sauces: @tabasco, @louisiana_hot_sauce, and @crystal.hot.sauce— everyone has their favorite. Me? I want a garlicky, lemony, cheesy-crisp Sensation Salad. None of the trendy lettuces. This isn’t where you’re going to get your healthy greens. We’re going for the crunch of iceberg and maybe romaine if you have to be fancy. I like parsley in mine, probably because I’ve lived away 25+ years and I’ve gotten fussy, but not fussy enough for frilly lettuce in this particular salad which is damn near perfect the way it is. If you want to try it, stop by, because I make the dressing about once a week, and it’s freshest on Saturday-Monday (on Red Beans day.) If you’re not off white flour, let me fix you some garlic bread, and iced tea, too. About that, I guess y’all have figured out that most of us below the #MasonDixon line drink #icedtea year-round. If you’re my age, and from my area, you drank milk at the dinner table almost until you left home. Kool-aid for lunch. How about y’all? Where are you from and what did you drink? I’m curious!
