Here's how I meal prep our 2B mindset nutrition breakfast & lunch using 2 of the recipes in the program while being dairy free. I use the servicing size as a guide for getting the correct portion. Breakfast: Bacon & egg bites. 3 per serving 4 egg cups each serving. I doubled the recipe to give me 5 days with a little extra that I'll freeze for another week. I used dairy free cheese & did the cauliflower rice option instead of quinoa rice. Lunch: Overfilled Taco Salad Bowls. I'll say.. inspired by. I used spinach because I had it at home & didn't want to waste. I used ground chicken instead of lean ground beef because I like it better. I used daily free cheese. I made the tortillas flat & sliced instead of making them into a bowl shape. That's more practical for me taking my lunch to work. The recipe is 4 servings so that = 4 days. I made 2 pounds of ground chicken so I'd have enough for 5 days. I'll use the leftover for another recipe if someone else in my home doesn't use it. After seeing my pictures from my hike this past weekend I saw that my body was bloated. I've been emotionally bla lately due to sessional depression. I've had major brain fog. Not feeling myself at all! I'm trying to get back to me. So Monday I expanded my nutrition to all the yummy veggies & incorporating plant based protein. Yes, I'm still eating animal protein as well. ◀️ The picture on the left is Saturday- literally this past Saturday. ▶️ The picture on the right- this morning, 4 days into focused gut health. 😃 My mood is more positive 🌚 I'm getting good sleep at night. 💩 My bowel movements have improved. 😊 redness in my face has improved & my acne is going away. 🤌🏻 I have reduced swelling in my wrist, hands, feet, & ankles. 🥳 Energy to carry me through the day Gut health has become my jam yall!
