This dish was a long time coming... Last Summer Maya from @littlebig.farm planted some Green Bee Tomatoes. They harvested through September. They have a very firm skin and tart interior. We dredged and fired them in cornmeal. They were fantastic. . We also lacto-fermented 22qts of unripened ones in October. We let them go for 180 days outside of refrigeration. They took on an extremely different and delightful texture and flavor. Funky, sweet, sour, briney like capers. So good. . We pulsed them up into a Green Sauce Vierge with blanched asparagus, wild mint, wide leaf Italian thyme, and pickled green garlic. Currently served as a part of our local Halibut dish. Succulent comes from the word “sucus”, which means juice or sap. This makes sense since the water stored in the plant's leaves enables the plant to survive for weeks without water. This is why you do not need to water them that often. Many people think succulents are from a single family but they are actually from more than 60 different families. Across these families, there are around 20,000 varieties. These families include Cactaceae (cacti) and Crassulaceae (aeonium and sedum). Just remember all cacti are succulents, but not all succulents are cacti. When people think of succulents they think of shades of green but there are succulents that are shades of blue, orange, pink, purple, red, and yellow. Closing out the April @gilbertmarket strong with today’s purchases: Parsley, cilantro, basil, strawberries, green onion and carrots from @rogue_rhino. I got most of the produce I need for this week’s dinners from Rogue Rhino. Look at how beautiful it all is! My meals will be better for incorporating everything you see here. (Side note: The carrots and strawberries are for snacking. Those berries will probably be gone by end of day. We love them so much!) Salmon sushi from @my_sushi_party. I’ve loved everything I’ve eaten from this place, so I happily grabbed something for today’s lunch. If you like spicy tuna rolls and California rolls, those were also available for sale. Multigrain sandwich bread from @noblebread. Locally baked bread is the way to go when possible, and Noble makes terrific bread! I’m already envisioning avocado toast with egg for tomorrow’s breakfast. By the way, this multigrain makes a great PB&J too.
Today I am thoroughly enjoying my last Saturday to sleep in before 5:30 am market mornings start next weekend. I am absolutely looking forward to getting back to my market village and family but I'll also unabashedly admit that I'm not a morning person at all and I enjoy the winter break. Actually I enjoy the seasonal flow of the whole year. I feel lucky that I get to have a job that shifts many times through the calendar. It keeps it feeling fresh and makes it easy to find enthusiasm again for the next round. In the fall I am totally knackered by the long harvest season and really grateful for 'Frostmas' to kill off the last of the crops so I can curl up with a good book. The stack of books is endless and my cat and I have done some real deep dives into subjects that interest us. The dog does his best to keep up but he gets drowsy in front of the fire. But Spring is a very alluring friend and she always gets me to stretch my lazy ass out of the armchair to go see what's happening out there. And then I'm hooked and excited about the promise of the new season.
