🥣💚 The only season (by a VERY close margin) better than Spooky Season is SOUP SEASON!!! 👏 I’ve been obsessed lately with @frontiersoups! They sell TONS of soup starter kits for all diets — vegetarian, vegan, gluten free, high-protein and more. 🫘🫛 My fave right now is the Texas Wrangler Black Bean Soup. I did make a few modifications from the recipe on the bag: - Swapped orange juice for lime juice - Added more seasoning, including chipotle powder, nutritional yeast, smoked paprika and oregano 🖤🖤 Been eating this soup all week and it’s so tasty. I like to top with cilantro, green onions and a bit extra lime.

💚 There’s a reason I call this my Magic Pasta!!! Spinach Pesto Pasta that’s 100% toddler approved. Made with @eatbanza (chickpea pasta) cavatappi, the sauce includes 6 oz. spinach, 1 c. almonds, 1/4 c. nutritional yeast, a can of white beans, 1/2 c. olive oil, basil, lemon juice, white wine vinegar, 3 cloves garlic and salt + pepper to taste. 💥 TONS of plant-based protein + healthy fats — perfect for a 2-year-old who is in a “peanut butter only” phase. He fell for this pasta with ZERO coercion! 🤔 Note — pictured here is MY plate, which inclues sautéed Brussels sprouts and mozzarella pearls.

BBQ Chickpea Pizzas — trust me, you need these in your life this weekend! 😋 Be sure to pick up two items from Trader Joe’s: Frozen Garlic Naan and Sriracha & Roasted Garlic BBQ Sauce. INGREDIENTS - Trader Joe’s Frozen Garlic Naan - Trader Joe’s Sriracha & Roasted Garlic BBQ Sauce - 8 oz. can of tomato sauce - Shredded sharp cheddar & mozzarella cheeses - Diced red onion - Diced yellow bell pepper - Chopped green onion - 2 cans of chickpeas, drained & rinsed - Garlic powder - Onion powder - Salt & pepper 1️⃣ Preheat the oven to 400 degrees. Line a baking sheet with foil or a silicone baking mat. Place two frozen naans onto the mat. Cook for 20 minutes, flipping every 5 minutes. **Note — this is WAY longer than the package says to cook the naans. However, this method gets them crispy vs doughy, which is what you want in pizza! 2️⃣ Add the chickpeas to a bowl. Pour in a bit of BBQ sauce — just enough to coat the chickpeas without drowning them. Season with salt, pepper, garlic powder and onion powder. Toss well to combine. 3️⃣ Pour some BBQ sauce in another bowl and gradually pour in the tomato sauce, tasting as you go. You likely will not use the whole can of tomato sauce — it just helps cut the sweetness in the BBQ sauce. Stir well to combine. 4️⃣ Add a layer of the sauce mixture to the naans. Sprinkle with mozzarella cheese, add the red onions and yellow bell peppers, then top with cheddar cheese. Finish with a layer of chickpeas, and sprinkle a bit more cheese over the chickpeas if desired. Cook until the cheese is melted, then finish in the broiler (be sure to watch the pizzas carefully so they don’t burn). 5️⃣ Top the pizzas with the chopped green onions, finish with a drizzle of BBQ sauce if desired and dig in!

The perfect #MeatlessMonday recipe, courtesy of the Made In Oklahoma Coalition @miocoalition. Pasta with Sweet Corn & Mushrooms 🌽🌽 Cozy up with this pasta mixed with corn, garlic and sauteed mushrooms. Starting with Della Terra – a small-batch artisan pasta maker – is the key. Della Terra’s campanelle pasta holds onto to all the tasty ingredients in this bowl. Sauteing a variety of J-M Mushrooms, including shiitake and cremini, adds great flavor. This combination, along with the onions, corn and garlic, makes a dish you won’t want to stop eating. INGREDIENTS: - 1 package Della Terra @dellaterrapasta Campanelle Pasta - 2 teaspoons olive oil - 1 small bunch green onions, chopped using only whites - 4 ears corn, shucked and kernels sliced off - 2 cloves garlic, chopped finely - 12 ounce sliced mixed J-M Mushrooms @jmfarmsmushrooms: Shiitake, Cremini and Button Mushrooms - 4 tablespoons cold Hiland @hilanddairy Unsalted Butter, cut into pats - 2 teaspoons apple cider vinegar - 2 1/2 tablespoons Cheatwood’s Pure Raw Honey - Kosher salt and freshly ground black pepper - Scissortail Farms @scissortailfarms Basil Leaves, chopped for serving DIRECTIONS: 1. Fully cook the Della Terra pasta according to directions on box. Reserve in a large mixing bowl. 2. In a large heavy skillet, saute the onions, corn and garlic in the oil, allowing for even browning by slowly turning for about 4-5 minutes. Add this mixture to the pasta. 3. Saute the mushrooms in a little butter until golden brown. Return pasta mixture to the skillet, and heat adding the butter in small pats. Add cider vinegar and honey, stirring until combined. You know I love a good Cauliflower Crust Pizza — here’s one using refrigerated crust via @traderjoes! 👇 Topping suggestions & cooking tips below. 🍕 Use a vented tray and spray first with nonstick cooking spray. 🍕 Top with pizza sauce, lite mozzarella and Mexican cheese (all via Trader Joe’s). Finally tried Manna - Cuisine of India (off NW Expressway & MacArthur) last night because it’s now conveniently located around the corner from our NEW HOUSE! ❤️🏡 Been moving/unpacking since Friday, so a big bowl of Paneer Tikka Masala + Garlic Naan was sorely needed. 🚨It was delicious, but word to the wise — was asked if I wanted it mild or medium, and went with medium. 🔥 Big mistake!! I genuinely like spicy food (a bottle of sriracha is usually within arm’s reach), but this was next level. I will FOR SURE order mild next time!

Dined in at @thesauceesicilian the other day & absolutely loved it!! ❤️ 💚 Def recommend the Genovese — Red Sauce / Mozzarella / Mushroom / Marinated Artichoke / Caramelized Onion / Black Olive / Roasted Garlic A couple things to note: - They don’t have ranch - They don’t serve tonic because the owner is allergic to quinine - A bit under-staffed, but our server was absolutely amazing Will be back!

This hearty, greens-packed dish uses just FOUR ingredients from @traderjoes! 👏 Extra-Spinach Tortellini is one of our new favorites. ⬇️ Recipe below. INGREDIENTS - 1 package Trader Joe’s Spinach Tortellini - 1 jar Trader Joe’s Roasted Garlic Marinara Sauce - 6-ish ounces fresh spinach - Parmesan cheese - Black pepper & red pepper flakes, to taste STEPS 1) Pour the marinara sauce into a pot and heat on low for 10 minutes. 2) Add the tortellini and toss well. Cover with a lid and cook on medium heat for 5 minutes. Remove the lid every minute to quickly toss the tortellini, ensuring it doesn’t burn. 3) After 5 minutes, remove the lid and tear the spinach, adding gradually to the pot. Toss well until the spinach is fully wilted. 4) Serve and top with Parmesan, black pepper and red pepper flakes, if desired.

The secret to a killer quiche? 👀 Using puff pastry for the crust! ⬇️ Here’s my fave Broccoli Cheddar Quiche recipe we whipped up today to devour during the Bahrain Grand Prix. INGREDIENTS - 1 sheet puff pastry, thawed - 1 yellow onion, diced - 1.5 T. garlic, minced - 12 oz. frozen broccoli, chopped - 1 T. ground mustard - 2 t. smoked paprika - 1 T. nutritional yeast - Lots of black pepper - 6 eggs - 1/3 c. milk - 1 T. butter - 4 oz sharp cheddar, shredded 1. Preheat the oven to 350 degrees and microwave the broccoli according to package directions. Chop into small pieces when done cooking. 2. Heat a large skillet over medium heat and melt the butter. Add the onion and sauté until it’s translucent, about 4 minutes. 3. Add the garlic and spices. Sauté for 1 minute. 4. Add the broccoli and toss well. Sauté for 2-3 more minutes. Remove from heat. 5. Whisk the milk and eggs together. 6. Use a rolling pin or glass to flatten and lengthen the puff pastry. Grease a round pie dish and press the puff pastry into the dish, using your fingers to bring it up the sides. Tear off any excess dough. 7. Add the broccoli mixture to the crust and use a spoon or spatula to spread it evenly. Pour the egg mixture over the broccoli. Mix the eggs and broccoli together and spread evenly again. Top with the cheddar cheese. 8. Bake for 30 minutes. Suggest serving with your favorite hot sauce!

BAKED BROCCOLI BITES * 3 cups riced broccoli (about two small broccoli heads) * 4 eggs * 1/2 c. almond flour * 1 c. sharp cheddar cheese * 1 t. garlic powder * 1 t. onion powder * 1 t. mustard powder * 1 t. paprika * 1/2 t. cayenne * Salt & pepper, to taste
 1) Preheat the oven to 400 degrees. If you bought pre-riced broccoli, then you’re a step ahead! Otherwise, chop the broccoli heads into smaller pieces and add them to a food processor. Pulse until the broccoli is in tiny pieces (or what looks like rice). 2) Whisk the eggs in a large bowl. Add the broccoli, almond flour, shredded cheese, and seasonings. Add a pinch of salt and season well with lots of freshly cracked black pepper. Use a spatula (or your hands) to combine the mixture until it starts to stick together. If it refuses to stick, add another egg or two. You need it to stick enough to be able to form bite-sized balls. 3) Line a baking sheet with parchment paper. Form the broccoli mixture into bite-sized balls and place them on the baking sheet. Cook for 35-40 minutes or until the outsides are fully browned.

Oldie but a goodie — Cauliflower Chickpea Tikka Masala. 😋 It’s DELISH and VEGAN and SO EASY to throw together! ⬇️ Recipe below. 2 T. garam masala 1 t. ground cumin 1 t. turmeric 1 t. smoked paprika 1/2 t. cayenne 1 T. olive oil 1 yellow onion, diced 4 cloves garlic, minced 2 T. fresh ginger, minced 1 head cauliflower, cut into florets 1 - 15 oz. can chickpeas, drained & rinsed 1 - 15 oz. can tomato sauce 3/4 c. vegetable broth 1 - 15 oz. can light coconut milk Salt & pepper, to taste 1) Heat a large Dutch oven or pan over medium heat and add the olive oil. Once hot, add the onion, garlic and ginger and cook, stirring occasionally, for 5 minutes. 2) Add the spices and toss well to coat. Add the cauliflower, and again, toss well to coat. As soon as everything is tossed together, immediately pour in the vegetable broth so the mixture doesn’t start to burn. Season with salt and pepper, then reduce heat to medium-low and cook for 8 minutes, stirring every couple of minutes. 3) Pour in the tomato sauce, coconut milk and canned chickpeas. Allow to simmer for 15 minutes or until thickened. Serve the tikka masala on its own or with rice, naan or quinoa.

💛❤️ BUTTERNUT QUESO SHELLS ❤️💛 This dish may look (and sound) truly decadent, but looks can be deceiving! The sauce for this pasta dish is 100% plant-based — made with butternut squash, @roteltomatoes, nutritional yeast, unsweetened almond milk & plenty of spices, it’s like your favorite @velveeta queso but totally healthy-fied. Plus, we used @eatbanza shells (made with chickpeas) to increase the protein factor — no blood sugar crash with this veggie pasta dish! Top with your favorite hot sauce (I used @franksredhot) and you’ll be good to go. ⬇️ Recipe below! INGREDIENTS - 2 lbs. cooked butternut squash - 1 can of Rotel (diced tomatoes & green chiles) - 1/2 red onion, diced - 6 T. nutritional yeast - 2 c. unsweetened almond milk or plant milk of choice - 2 T. minced garlic - 4 t. chili powder - 1 T. ground cumin - 4 t. freshly cracked black pepper - Olive oil cooking spray - 8 oz. box of shells (we used Banza) - Hot sauce of choice 1. Spray a bit of olive oil cooking spray into a pan over medium heat. Add the red onion and sauté until translucent. Set aside. 2. Use an immersion blender or regular blender to blend together the cooked buttoned squash, nutritional yeast, almond milk, garlic, chili powder, ground cumin and pepper. Season with a pinch of salt. Transfer to a saucepan over medium heat. 3. Stir in the Rotel and red onion and heat until warm. 4. While the sauce is cooking, boil your pasta. 5. There will be MUCH more sauce than you need, so when you’re ready to eat, spoon the pasta individually into each bowl, then top with sauce and toss. Finish with your favorite hot sauce. Use the sauce within the next 3-5 on your favorite pasta, over rice & beans or even by itself as a soup (trust me, it’s delicious)!

Vegan Zoodles with Romesco Sauce — it’s my latest plant-based obsession! 😍 Minimal ingredients make this a super easy yet savory lunch or dinner. Recipe below! ⬇️ VEGAN ZOODLES W/ ROMESCO SAUCE * 2 zucchinis, spiralized * Nonstick cooking spray * Salt, black pepper, garlic powder & red pepper flakes, to taste * 1 (16 ounce) jar roasted red bell peppers, drained * ⅓ cup slivered almonds * 1/3 c. water * 2 tablespoons tomato paste * 1 tablespoon extra-virgin olive oil * 3 garlic cloves, minced * ½ lemon, juiced * 1 tablespoon dried parsley * 1 tablespoon dried basil leaves 1. Combine the red bell peppers, almonds, water, tomato paste, EVOO, garlic, lemon juice, parsley and basil in a food processor and blend until smooth. Taste and season with salt and pepper as desired. Blend again to combine. 2. Preheat the oven to 350 degrees. Spray a baking sheet with nonstick cooking spray. Add the spiralized zucchini evenly across the sheet. Season with salt, black pepper, garlic powder and red pepper flakes. Bake for 10 minutes, remove and toss, then bake for 15 minutes. 3. While the zucchini is cooking, add the romesco sauce to a small pan and heat over medium-low heat until warm. 4. Toss the zucchini with romesco sauce (only as much as you’d like) and finish with a sprinkle of nutritional yeast, if desired.

BROCCOLI & PEAS MAC N’ CHEESE • 16 oz. pasta • Drizzle of olive oil • 8 oz. sharp white cheddar, shredded • 8 oz. gouda, shredded • 2 T. butter • 12 oz. can of evaporated milk • 2 T. nutritional yeast • 1 t. garlic powder • 1 t. onion powder • 1 t. mustard powder • 1/2 t. smoked paprika • Freshly ground black pepper, to taste • 12 oz. frozen broccoli • 12 oz. frozen peas 1️⃣ Cook the broccoli and peas according to package directions. Drain and set aside. 2️⃣ Cook the pasta according to package directions. Drain, drizzle with olive oil and set aside. 3️⃣ Melt the butter in a large pot or Dutch oven over medium-low heat. Add the evaporated milk and the spices. Season well with pepper and whisk together. 4️⃣ Once hot, add the shredded cheese a little bit at a time, whisking the sauce frequently until the cheese is melted. 5️⃣ Chop the broccoli into smaller pieces if desired. Add the broccoli, peas and pasta to the pot. Toss everything together until the pasta is thoroughly coated in the sauce.

🍕 There are tons of low-carb/gluten-free pizza crust options at the grocery store… but why go with something frozen or shelf-stable when you can make a FRESH crust with just 3 ingredients (not including spices)?? 💪 Enter in my FAVORITE High-Protein, Low-Carb pizza crust made with (1) riced cauliflower, (2) eggs and (3) almond flour. Add some spices + your favorite toppings & you’ve got a hearty meal in ~30 minutes! ⬇️ Recipe below. HIGH-PROTEIN, LOW-CARB PIZZA CRUST - 16 oz. riced cauliflower - 8 eggs - 2 cups almond flour - 1 T. nutritional yeast - 2 t. garlic powder - 2 t. onion powder - 2 t. Italian seasoning - 1 t. red pepper flakes - Salt & pepper 1️⃣ Preheat the oven to 425 degrees. Add the almond flour and riced cauliflower to a large bowl. Whisk the eggs in a separate bowl, then pour them over the almond flour/cauliflower. Add the remaining ingredients and stir well to combine. 2️⃣ Spray non-stick cooking spray over a large baking sheet. Add the wet dough to the sheet. Cover with a piece of wax paper, then use a rolling pin or your hands to flatten the crust so it’s thin and covers the entire baking sheet. Remove the wax paper. 3️⃣ Cook the crust for 20 minutes. Remove from oven, add desired toppings, then cook another 10 minutes. Finish in the broiler to brown the cheese, if desired.

My current go-to when I’m craving tacos = Lentil Walnut Taco Meat. 🌮 This plant-based recipe is PERFECT for recreating basic #TacoBell-style tacos — but you can also dress it up with grilled tortillas, fresh cilantro & much more! ⬇️ Snag the recipe below. 🌶️ LENTIL WALNUT TACO MEAT * 1 pat of butter or 2 T. olive oil * 3 large carrots, peeled & shredded * 1 yellow onion, diced * 1 green bell pepper, diced * 1-2 T. minced garlic * 1 T. vegetarian Worcestershire sauce * 1 T. apple cider vinegar * 2 t. ground cumin * 2 t. chili powder * 2 t. dried oregano * 1 t. chipotle powder * 1 t. smoked paprika * Black pepper, to taste * 6 oz. chopped walnuts * 8 oz. tomato sauce * 1/2 c. vegetable broth * 2 c. cooked brown lentils * 14 oz. tomatillo enchilada sauce (I prefer the @granluchito brand) 1️⃣ Melt the butter or olive oil in a large skillet or wok over medium heat. 2️⃣ Add the carrots, yellow onion and green bell pepper and cook for 6 minutes, stirring occasionally. 3️⃣ Add the garlic and cook for 2 minutes. 4️⃣ Add the Worcestershire sauce, apple cider vinegar, cumin, chili powder, chipotle powder, smoked paprika and oregano. Season with black pepper. Stir well to combine. 5️⃣ Add the walnuts, tomato sauce and vegetable broth. Reduce heat to medium-low and simmer for 10 minutes, stirring often to prevent the mixture from sticking. 6️⃣ Add the lentils and enchilada sauce. Reduce the heat to low and simmer the mixture for 10 minutes, or until most liquid has been absorbed/evaporated. Continue to stir often so the mixture doesn’t stick. 7️⃣ Serve with your favorite tortillas and toppings!

Here’s a yummy, umami-packed recipe for everyone participating in #Veganuary: Lentil Quinoa Broth Bowls. 🌱 I personally love how it’s a bit spicy, a bit tangy and oh so filling! ⬇️ Recipe below. LENTIL QUINOA BROTH BOWLS * Small yellow onion, chopped * 2-3 garlic cloves, minced * 1 c. cooked brown lentils * 1/2 c. uncooked quinoa * 2 1/2 T. tomato paste * 2 1/2 T. gochujang * 1 T. low-sodium soy sauce * 2 T. sesame oil * 1 T. ground ginger * 1 t. garlic powder * 2 t. smoked paprika * 1 bay leaf * 4 c. vegetable broth * 1 1/2 c. chopped kale * Juice of 1/2 a lemon or lime * Sliced lemons or limes, to garnish 1️⃣ Cook the lentils according to package directions and set aside. 2️⃣ In a large bowl, combine the vegetable broth, tomato paste, gochujang, soy sauce, 1 T. sesame oil, citrus juice, ginger, garlic powder and paprika. Whisk well. 3️⃣ In a large pot over medium-high heat, add the remaining tablespoon of sesame oil and sauté the onions and minced garlic until the onions are translucent. Pour in the vegetable broth and add the quinoa and a bay leaf. Bring the mixture to a boil. 4️⃣ Once the mixture boils, cover the pot and bring the heat down to low. Allow to simmer for about 20 minutes until the quinoa is fully cooked. 5️⃣ Before serving, remove the bay leaf and stir in the lentils and kale, allowing the kale to wilt. Scoop into a bowl and top with lemon or lime slices.

Hitting the gym this #January? 💪 I prefer working out at home and have REALLY been digging @nourishmovelove’s 35-minute HIIT series (available for FREE on YouTube). 🔥 Here’s my go-to post-workout fuel: Cheesy Egg White Veggie Cups! Today I served them on @daveskillerbread English muffins with salsa & sriracha. ⬇️ Recipe below! 🧀🫑 CHEESY EGG WHITE VEGGIE CUPS - Liquid egg whites - Veggies of choice, diced (I used red onion and green + yellow bell peppers) - Shredded cheese of choice (I used Swiss) - Black pepper 1️⃣ Preheat the oven to 350 degrees F. Spray nonstick cooking spray in a muffin tin. 2️⃣ Fill each space of the muffin tin about 2/3 with veggies. Pour liquid egg whites over the veggies, not quite to the top. Finish with shredded cheese and sprinkle with black pepper. 3️⃣ Bake for 25 minutes. Enjoy!

Thanks to @the_winstonpub for having us out to try their vegetarian brunch options! 🍳🥑 Loved the hearty, flavorful Shakshuka. I’m not a big fan of sunnyside eggs, so they were kind enough to swap with scrambled. The eggs + avocado are served over roasted tomato stew and corn cakes and topped with creamy feta. Plus, can’t go wrong with Avocado Toast! Smashed avocado + eggs on sourdough toast alongside greens with a tangy lemon vinaigrette.

BBQ pizza, but make it low-carb & vegetarian! 😋 1️⃣ First, roast 2 cans of chickpeas in a skillet w/ olive oil over medium heat for about 5 minutes. Add 1 teaspoon each of chili powder, cumin, paprika, garlic powder & onion powder. Sprinkle w/ salt & sugar and season with black pepper and cook another 4-5 minutes. Remove from heat when crispy. 2️⃣ We used @caulipower frozen crust & spread on a mixture of pizza sauce and @rednecklipstick original gluten free BBQ sauce. Topped with mozzarella, cheddar, red onion, yellow + green bell peppers and the chickpeas. Cook at 425 degrees for 15 minutes. 3️⃣ When the pizza is done cooking, finish with green onions & drizzle with sriracha!
