Unlike the usual soft winter wheat used in vodka production, Altamura wheat is durum, giving the vodka distinct characteristics reflecting the wheat and the Altamura region's terroir. The vodka boasts a smooth and creamy texture, described by the Italian term "Morbida," along with a unique umami taste derived directly from the wheat. Altamura sources all their wheat from a single family with a centuries-old farming tradition in Altamura.
