Halwai style Khatte Meethe Kadu/ Pumpkin Kaddu Ki Sabzi is a sweet and savory Indian-style pumpkin stir fry. In North India it is also known as Bandare wale Khatte Meethe Kadu or Pethe Ki Subzi. Kadu is a Hindi name of the humble vegetable pumpkin. It is highly nutritious, rich in potassium, phosphorus,vitamins and minerals . Is also high in dietary fiber and high antioxidant level and beta carotene. The seeds of pumpkin are also edible and are full of nutrients. The combination of sweet, spicy, and savory flavors makes this pumpkin sabzi unique.The heat of red chilies and the warmth of spices are balanced by the sourness of mango powder and the sweetness of sugar. ‘Khatta’ is the Hindi term for sour, and ‘Meetha’ is for sweetness. Hence this pumpkin sabzi got the name because of its sour and sweet flavors. This yummy and delicious sabzi is typically served in homes as a side dish with Roti or Poori or Paratha during lunch or dinner but also tastes amazing with Kachoris. So glad and appreciative to the committee of the @tasteofthekimberley for believing in me and giving me the opportunity to hold my first ever stall at their #Feastival and what a night it was. Pumpkin stir fry sabzi. This is the first time we tried cooking pumpkin and it turned out delicious! We bought pre-cut pumpkin cubes which made it easier - no chopping for a change!! The pumpkin is mildly sweet - so you can adjust the spices as per your preference- add more amchur (dry mango) powder to mask the sweet flavour. Also different pumpkins vary in the amount of time they take to cook. So keep checking at regular intervals- or else it will become too mushy!! 😁

✨PUMPKIN SKIN CHUTNEY✨ So… if you know about the #peanutchutney the dry one… that is easily found in most #maharashtrian homes… you can imagine this ridiculously delicious, spicy, crunchy goodness 🤩 • I have been throwing away a lot of pumpkin skins lately… thanks to all the orders for the #pumpkinsubzi on @foodst • • So decided to try this recipe to avoid all that food waste! Coz it bothers me 😬 while back home, growing up in India… I’ve had the wet chutneys…but never tasted this dry version. So decided to give it a go n tried making this today! • • • What you see before you is a picture of finely chopped pumpkin skins….swipe to see the after pic 😁 that’s the chutney. • • Pumpkin is a seriously nutrient dense veggie and is particularly high in fibre and vitamin A. Like other fruits and vegetables, a lot of the nutrients can be found concentrated in the skin itself, which is why it’s so beneficial. • • • There are many different types of pumpkin, I mostly use the Kent pumpkins. What also helps is that with this variety of pumpkin, the skin isn’t as tough as other varieties such as butternut; making it not only edible, but also yummy! • When cooked this way the skin becomes a little crunchy and caramelised, adding big flavour and texture. • • • The flesh is rich in beta-carotene, an antioxidant that gives fruits and veggies their orange pigment, which works to give you healthy skin and reduce the risk of some diseases! • • I wish I had a beautiful picture of the pumpkin skin… I remember seeing one on @aliceinframes ‘s feed. I hope she won’t mind if I mention her here 😁 coz I had also mentioned about this chutney when I saw that picture! 😍 🙏🏼 • • Coming back to this… it’s so darn delicious that I can’t stop munching on it! Rasam is a staple in every southindian household. My mom used to make really nice rasam and in summer when my grandpa stayed with us, he would drink it as is. I think a dedication post has to be done for the humble rasam. But for now I’ll concentrate on the masaledara pumpkin Palya/subzi that will pair equally well with Roti or Rasam. This recipe is a keeper. Ingredients: Sweet pumpkin - 1 small (peel the skin) Oil - 2 to 3 tbsp Mustard- 1/2 tsp Cumin seeds - 1/2 tsp Fenugreek seeds - 1/2 tsp Turmeric - 1/4 tsp Onion- 1 medium size finely chopped Chilly powder - 1 tsp Daniya & Jeera power- 1 tsp Garam masala - 1/4 tsp Aamchur powder - 1/4 tsp Salt Recipe: Semi cook pumpkin on stove top with little salt. In the meanwhile in a pan add oil and once hot add in mustard seeds, cumin seeds, fenugreek seeds and let it splutter (fenugreek will give a nice aroma). Add onion and fry until caramelised. Add masala and give it a good stir. Then add pumpkin and stir so that it mixes with all the masala. Cover and cook for a few more minutes until fully done. Iam getting "Pump'ed" up with this comforting heart warming Kaddu Ka Subzi or Pumpkin Subzi . IN FRAME: PUMPKIN SUBZI/ KADDU KA SUBZI This vibrant warm nutty flavourful Kaddu ka subzi is great for this changing season and prepares our body for the coming winters . This subzi has the essential fats from coconut, peanuts , sesame & poppy seeds and rich with vitamins & minerals from the vegetable itself . ~PROCESS ~ 1: Heat 3tbsp mustard oil in a pan,add 1/4 tsp mustard seeds ,1/4tsp Fenugreek seeds,2 Bay leaves, 2 onions sliced ,1/2 tsp ginger- garlic paste & saute . 2: Once it gets a bit brown , add 1tbsp coriander powder , 1 tsp chilli powder, 1/4tsp Turmeric powder & salt per taste . 3: Add the cubed pumpkins with its skin ( approx. 500 gms ) and saute . Add 1/2 cup water and cook covered on low flame till almost done . 4: Make a coarse powder of roasted 1/4 cup peanuts,1/4cup coconut, 2tbsp sesame seeds ,3tbsp Poppy seeds . 5: Add 1/4 cup of grinded powder to the pumpkin subzi , 1 tbsp of jaggery , 1/4 tsp of amchur or tamarind and 1tsp of garam masala and cook for 5mins more . Serve hot with garam garam chapatis/ rotis/ parathas or flatbread of any kind . A truly fusion thaali . From left to right ..groundnut chutney ,Jawar roti, salad , arhar dal and greens palya , petha subzi , falafel dough shaped and steamed like muthia ,and beans upkari . Not in the picture were rice , saaru , jackfruit papad , lime pickle and curd . And to finish the meal .. a home made falooda ! Now I need a nap !
