Hearty and Flavorful Instant Pot Three Bean Chicken Chili Ingredients: 1 lb boneless, skinless chicken breasts, diced 1 onion, chopped 3 cloves garlic, minced 1 red bell pepper, diced 1 green bell pepper, diced 1 (15 oz) can black beans, drained and rinsed 1 (15 oz) can kidney beans, drained and rinsed 1 (15 oz) can cannellini beans, drained and rinsed 1 (15 oz) can diced tomatoes 1 cup chicken broth 1 tbsp chili powder 1 tsp cumin 1 tsp paprika Salt and pepper to taste Optional toppings: shredded cheese, sour cream, avocado, cilantro, lime wedges Directions: Set the Instant Pot to "Saute" mode. Add a drizzle of oil and sauté the diced chicken until browned on all sides. Add the chopped onion, minced garlic, diced bell peppers, and a pinch of salt and pepper to the Instant Pot. Cook until the vegetables are softened, about 3-4 minutes. Add the drained and rinsed black beans, kidney beans, cannellini beans, diced tomatoes, chicken broth, chili powder, cumin, paprika, and additional salt and pepper to taste. Stir to combine. Miso Soba Noodle Salad 🌱 Full recipe below!⁠ ⁠ If you are looking for a quick dinner idea, you are in the right place! We used tofu but it would be delicious with chicken or fish too. ⁠ ⁠ Try it ASAP! x ⁠ ⁠ Ingredients:⁠ - 150g (5.3oz) soba noodles ⁠ - 200g (7oz) firm tofu, sliced into cubes ⁠ - 1 (200g) capsicum, sliced into thin strips ⁠ - ½ (70g) carrot, cut into thin sticks, or grated/shredded⁠ - 1 (130g) cucumber, sliced thin⁠ - 3 spring onions, finely chopped⁠ - ½ cup edamame⁠ - ¼ cup (30g) cashews⁠ - ¼ bunch mint leaves, finely chopped, or coriander ⁠ ⁠ For the miso dressing: ⁠ - 1 heaped tbsp miso paste ⁠ - 2 tsp tamari, or soy sauce⁠ - 2 tsp sesame oil ⁠ - 3 tsp maple syrup ⁠ - 1 lime, juiced ⁠ - 1 tsp chilli flakes⁠ - 1 small garlic clove, minced ⁠ ⁠ Method:⁠ Cook the noodles as per the packet instructions. Once drained, add to a mixing bowl and drizzle 1 tsp sesame oil on top to prevent the noodles from sticking together. ⁠ ⁠ Whisk together the dressing and season to taste with sea salt and black pepper. ⁠ ⁠ Heat a non-stick frying pan over a medium high heat and grease lightly with oil of choice. Pat the tofu dry with paper towel and then add the tofu to the pan. Season with sea salt and black pepper and cook for 3-4 minutes or until golden on all sides. Pour half of the miso dressing over the top and cook for a further 2 minutes. ⁠ ⁠ Add the rest of the salad ingredients to the bowl with the soba noodles. Pour the remaining dressing over the top and toss to coat. Finally sharing my latest fave dinner! Easy one pan pesto Parmesan pasta with lemon salmon! Pesto Salmon Pasta = the dinner I have been making on repeat!⁠ 🌱 ⁠ ⁠ I shared this on my stories a few weeks back and had lots of requests for the full recipe... so here it is! ⁠ ⁠ Here’s what you’ll need...⁠ - Pasta of choice (we love spelt, pea pasta or rigatoni pasta for this)⁠ - 1 tbsp extra virgin olive oil ⁠ - 2 cloves garlic, crushed⁠ - 1 punnet baby tomatoes, sliced into quarters ⁠ - 2 zucchini, sliced into half moons ⁠ - 2 salmon fillets⁠ - 2 lemons, sliced ⁠ - 2-3 tbsp of quality pesto⁠ ⁠ Method: ⁠ Cook your pasta as per the instructions. ⁠ ⁠ Heat the olive oil in a large non-stick frying pan. Add the garlic to the pan and sauté for a few minutes or until fragrant. Add the sliced zucchini and baby tomatoes. Season with sea salt and black pepper. Sauté for 8-10 minutes or until the zucchini is golden brown. ⁠ ⁠ Whilst the vegetables sauté, season the salmon fillets with sea salt and pepper. Place a few slices of lemon on top of the salmon and any herbs of choice. Air-fry at 180°C or 350°F for 10 minutes or until cooked to your liking. Note: you can also bake or pan-fry the salmon. ⁠ ⁠ Once the pasta is cooked, add it to the pan with the vegetables. Mix everything well. 2 - Form small truffles out of the dough. Acabo de hacer una infusión y os voy a contar cómo la he hecho Es una infusión de jengibre, limón, lima y naranja. Quizás le he puesto demasiado jengibre, porque ha quedado un sabor podemos decir intenso, recio....pero me gusta Necesitamos: una naranja, un limón, una lima, un trocito muy pequeño de jengibre Pelar la naranja, el limón, la lima y el jengibre y cortar todo en trocitos pequeños. Batir con la batidora Poner la mezcla en una cacerola añadir 1 litro de agua y dejar hervir durante 20 minutos Colar con un colador para eliminar la pulpa y ya está. Yo lo toma sin ningún tipo de endulzante, pero puedes añadir alguno si así te resulta difícil. 🌟Nota adicional sobre la taza y la jarra, fueron un regalo de boda de mi madre tienen 64 años😱😱 Dios mío!! Stir in the onion and garlic, and sauté until lightly browned. Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer for 20 minutes. Stir in frozen corn during the last 5 minutes of cooking. Mix in the black beans and cilantro. Heat through. CRISPY BAKED SALT AND VINEGAR POTATOES✨ Credits @olivia.adriance Ingredients: 2 lbs small yellow potatoes, halved 1 1/2 cup apple cider vinegar + 3 tbsp 2 tbsp sea salt, divided 2 tbsp avocado oil Garnish: chives + flaky sea salt Directions: Add the potatoes to a large pot and cover with about an inch of water Stir in 1 1/2 cups of apple cider vinegar and 1 tbsp sea salt Bring to a boil then reduce to a simmer and simmer for about 20 minutes until the potatoes are fork tender Preheat your oven to 425 Drain your potatoes and let them cool for 5-7 minutes (they will continue to steam and release more water - this is great for ensuring they get crispier in the oven) Stir in 2 tbsp avocado oil and 1 tbsp salt, ensuring the potatoes are evenly coated Add the potatoes to a baking sheet, being careful not to overcrowd the pan (you want space in between them so they will crisp and not steam - you may need to use two baking sheets) Flip the potatoes so that the flat side is facing down Roast in the preheated oven for 45 minutes, until crisped to your preference Remove from oven and toss with remaining 3 tbsp vinegar Return to the oven for another 10-15 minutes Remove from the oven and season generously with flaky sea salt ENJOY! Não tenho feito, pois tenho seguido à risca o lema do “zero açúcares”, mas partilho convosco esta delícia! 300 grs de flocos de aveia grossos 80 grs de sementes de abóbora 50 grs de sementes de girassol Nozes partidas grosseiramente Avelãs partidas grosseiramente Amêndoas partidas grosseiramente Canela a gosto 1 cs de óleo de coco 3 cs de mel Juntar num recipiente os flocos, as sementes, a canela e os frutos secos. Num pequeno tacho, juntar o óleo e o mel e aquecer ligeiramente até diluir um com um outro e envolver. Verter por cima dos ingredientes secos e envolver bem. Espalhar a mistura em cima de um tabuleiro e levar ao forno a 150 graus cerca de 40 mins. Envolver de tempos em tempos para ficar uniformemente dourada. Retirar e deixar arrefecer completamente antes de colocar num frasco. It's no wonder why I love starting my day with a delicious breakfast that's packed with these little powerhouses!⁠ ⁠ Ingredients:⁠ ⁠ 2 small leeks, sliced - white part only⁠ 1 garlic clove, minced⁠ 2 scallions, sliced⁠ 1/4 cup no-salt-added vegetable broth⁠ 4 eggs, lightly beaten⁠ Dried dill to taste⁠ 2 Tbsp water⁠ 1 (3.5 ounce) can artichoke hearts, rinsed and sliced⁠ 6 black olives, pitted and minced⁠ 2 Tbsp cilantro, chopped⁠ 1 tsp fresh lemon juice⁠ ⁠ Instructions:⁠ In a medium, nonstick skillet, sauté leeks, garlic, scallions, and broth until leeks are soft. Spread evenly over the bottom of the skillet.⁠ �⁠ Mix dill and water with eggs and pour into the skillet. Ingredients- Modified from original recipe 1 cup Your choice of Flour (I used Gluten free baking flour) 1 cup UMP Vanilla Protein 2 TBSP Truvia or other sweetener 4 teaspoons Baking Powder 1/2 teaspoon Salt 1 3/4 cups Milk or Unsweetened Almond milk 1/4 cup Fresh Lemon Juice (Squeeze it) 1 large Egg 1/2 cup Olive oil or less. 1 teaspoon Vanilla Extract (or lemon extract) 1-2 Tablespoon Lemon Zest (more if you desire) Recipe from Homemade Lemon Pancakes Recipe | The Recipe Critic Blueberry drizzle-just heat up blueberries in a skillet (I used frozen) Whisk: In a mixing bowl whisk together Your choice of flour, UMP Vanilla Protein, Truvia, baking powder, and salt. Set aside. Stir: In another mixing bowl, whisk together milk, lemon juice, egg, oil, and vanilla until incorporated. Stir in the lemon zest. Add Wet Ingredients to Dry Ingredients: Stir the wet ingredients into the dry ingredients. Whisk just until combined. Strawberry Avocado Salad 🍓🥑 Ingredients: 6 cups mixed salad greens 1 pint strawberries, hulled and sliced 1 ripe avocado, peeled, pitted, and diced 1/4 cup sliced almonds, toasted 1/4 cup crumbled feta cheese 2 tablespoons balsamic vinegar 1 tablespoon honey 2 tablespoons extra-virgin olive oil Salt and black pepper, to taste Directions: In a large salad bowl, combine the mixed salad greens, sliced strawberries, diced avocado, toasted sliced almonds, and crumbled feta cheese. ΚΑΛΑΜΑΡΙ ΓΕΜΙΣΤΟ ΜΕ ΣΑΛΤΣΑ ΝΤΟΜΑΤΑΣ & ΚΟΥΚΟΥΝΑΡΙ! Φτιάξτε και εσείς τα πιο νόστιμα καλαμάρια γεμιστά με ρύζι, ντομάτα και κουκουνάρι! Το απόλυτο κυρίως γεύμα με άρωμα καλοκαιριού για την περίοδο της νηστείας και όχι μόνο! Υλικά (για 4 μερίδες) 600γρ. καλαμάρι 2 μέτρια ψιλοκομμένα κρεμμύδια 25γρ. κουκουνάρι 1/2 κ.γ. νιφάδες τσίλι 3 κ.σ. ελαιόλαδο 250γρ. μαγειρεμένο ρύζι 75γρ. φρέσκο κόλιανδρο 1 σκελίδα ψιλοκομμένο σκόρδο 5 ώριμες ντομάτες 1/2 κ.γ. ζάχαρη Αλάτι Πιπέρι Εκτέλεση 1️⃣Σε ένα μικρό κατσαρολάκι τσιγαρίζουμε το ένα κρεμμύδι και το σκόρδο σε μέτρια φωτιά. Μόλις τα υλικά ροδίσουν προσθέτουμε τις ντομάτες, τη ζάχαρη, το πιπέρι και το αλάτι και μαγειρεύουμε για περίπου 10 λεπτά ανακατεύοντας συνεχώς. 2️⃣Σε ένα πάγκο κοπής κόβουμε τα καλαμάρια αφαιρώντας τα πτερύγια και τα πλοκάμια. Αφήνουμε ένα μικρό άνοιγμα στο σώμα για την τοποθέτηση της γέμισης. Σε ένα δεύτερο μικρό κατσαρολάκι τσιγαρίζουμε με λίγο λάδι το δεύτερο κρεμμύδι και λίγο ακόμη σκόρδο για περίπου 6 λεπτά. Προσθέτουμε τα περιμετρικά μέρη του καλαμαριού που κόψαμε και συνεχίζουμε το μαγείρεμα για ακόμη 2 λεπτά. 3️⃣Στην συνέχεια, προσθέτουμε το κουκουνάρι, το τσίλι και τον κόλιανδρο και ανακατεύουμε τα υλικά μέχρι να ενωθούν. Τέλος, προσθέτουμε το μαγειρεμένο ρύζι και συνεχίζουμε το ανακάτεμα. 4️⃣ Προθερμαίνουμε το φούρνο στους 180 βαθμούς. Γεμίζουμε το κάθε καλαμάρι με τη γέμιση και το τρυπάμε με μια οδοντογλυφίδα για να παραμείνει σταθερή η γέμιση στο εσωτερικό. Τέλος, ψήνουμε τα γεμιστά καλαμάρια στο φούρνο προσθέτοντας περιμετρικά τη σαλτσα ντομάτας για περίπου 40 λεπτά.
