Weekend roundup Saturday: had a beef olive for dinner which was delicious. Ran another 10km. Weighed myself and I am finally back to losing weight 👌 Sunday: day in London! a balanced week ❤️ - I decided I’m not too fussed about loosing anymore weight and want to focus more on just having healthier habits like being consistent with the gym & my step count rather than calorie counting. The last couple of weeks I’ve just not wanted to be on plan & i’m really bored of tracking and planning what I eat around my calories. I still have my sisters wedding that I am bridesmaid for & 2 holidays coming up so perhaps I’ll calorie count for a couple weeks before then but for the majority I’m just going to be mindful of my meals, still meal prep and ensure my output stays consistent 🏋🏼‍♀️🏃‍♂️ I could definitely look better and lose more weight but I’m happy enough with my progress and will finally wear shorts to the gym! Zucchini Lasagna (Lasagne) - Low Carb 📋 Ingredients: 🥒 4 medium zucchini, sliced lengthwise into 1/4-inch thick strips 🍅 1 tablespoon olive oil 🧅 1 onion, diced 🧄 3 garlic cloves, minced 🥩 1 lb ground beef (or ground turkey) 🍅 1 (14.5 oz) can crushed tomatoes 🧂 Salt and pepper, to taste 🌿 1 teaspoon dried basil 🌿 1 teaspoon dried oregano 🥛 1 (15 oz) container ricotta cheese 🥚 1 egg 🧀 2 cups shredded mozzarella cheese 🧀 1/2 cup grated Parmesan cheese 📝Instructions: 🔹 1. Preheat oven to 375°F (190°C). 🔥🔘 🔹 2. Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic, and cook until softened, about 5 minutes. 🧅🧄 🔹 3. Θα το λατρέψετε! ⭐Για το παγωτό: 2 μεγάλες ώριμες μπανάνες σε κομματάκια (κατεψυγμένες) 1 φλιτζ. του τσαγιού κρέμα καρύδας (κονσέρβα) 1 κσ βούτυρο αμυγδάλου 1κσ μέλι 👩Ρίχνουμε όλα τα υλικά σε ένα μπλέντερ για smoothies και δημιουργείται μια κρέμα. Τοποθετούμε την κρέμα σε θήκες των Muffins και αφήνουμε στην κατάψυξη για 2 ώρες. ⭐Για τα μπισκότα: 75 γρ αλεύρι βρώμης (αλέθουμε καλά τη βρωμη 75γρ αλεύρι ρυζιού 40 γρ ζάχαρη καρύδας 2 κσ αλεύρι αμυγδάλου 1κγ baking powder 2κσ λάδι καρύδας 4κσ γάλα αμυγδάλου 1 κγ κανέλα Κεϋλανης Ανακατεύουμε όλα τα υλικά μαζί μέχρι να δημιουργηθεί ένα μαλακό ζυμάρι. Το απλώνουμε σε μια λαδόκολλα με τα χέρια και τοποθετούμε άλλη μια από πάνω για να μπορέσουμε να το ανοίξουμε με τον πλάστη. ❗Μην το κάνετε λεπτό.❗Με τη βοήθεια ενός ποτηριού δώστε στρογγυλό σχήμα. Να ταιριάζει όμως με το μέγεθος από τις θήκες των Muffins. Γίνονται 10 μπισκότα. Ψήνουμε σε προθερμασμενο φούρνο στους 180 ° για 15 λεπτά.
