Had a much needed cheeky trip to Portugal this week. Sunshine, good friends and some space to contemplate after a difficult few weeks. We found this awesome vegan restaurant near the hotel hubbie was staying in for work @restaurantetheden. What a find! I ordered this ‘salmon’ dish served with super filling whole grains and veggies. Amazing! And as for dessert - couldn’t resist this awesome ‘cheesecake’. It’s even better than my recipe 🤣. VEGAN AFRICAN PEANUT STEW 🌱🌱 This spicy African peanut stew from @veganfoodandliving is perfect for a chilly night, hearty and warming with a side of roti. 1 large onion, peeled and chopped 1 inch piece of fresh ginger, peeled and chopped 1 large red chilli, chopped 4 cloves garlic, peeled and chopped 2 tsp ground cumin 1 tsp paprika 1 tsp mild chilli powder 4 tbsp tomato puree 120 g natural peanut butter 720 ml water 1 cube vegetable stock 2 ripe tomatoes, roughly chopped 2 sweet potatoes, cut into chunks 60 g toasted peanuts A couple of handfuls of fresh spinach Sea salt and black pepper, to taste Fresh coriander, to garnish 1) Add the onion, ginger, chilli and garlic to a saucepan with a splash of oil and a pinch of salt. 2) Cook until the ginger is fragrant and the onions have softened. 3) Next add the paprika, cumin and chilli, if using, to the pan and cook for a minute, stirring. Meal prep for the win. Being an old school vegan, meal prep is something I have done for years as there just wasn't the options that we have now. The main vegan option where I work is still chips and beans.... I cooked up some garlic, red onion, thyme, oregano, mushrooms, aubergine and plum tomatoes in a pan and added a tin of tomatoes and green lentils.
