They are easy to make ahead and great for meal prep as will last in the fridge for about 3 days. They’re refined sugar free and just sweetened with the banana and contain no protein powder. I like to put in the fridge so the texture is firmer but you can also blend and eat straight away if you prefer. ✅ Save to try Serves 3 Pudding ingredients: 1 large banana 1/2 cup (60g) shelled hemp seeds 1/3 cup (55g) chia seeds 1/4 cup (25g) cacao powder 2 tbsp almond butter 1.5 cups (375ml) unsweetened soya milk Topping ingredients: 6 tbsp soya yoghurt Sprinkle of cacao nibs Banana slices 1, Put all the pudding ingredients in a blender and blend until smooth. It is THAT good… For all my fellow raw vegan dessert lovers, or any dessert lovers, this one if for you - you are going to love it! Base ingredients; - 1 cup of walnuts - 1 cup of dates (pitted and soaked in hot water for 30 minutes) - 1 tbsp maple syrup - 1 tbsp coconut oil Cashew cream layer; - 2 cups of cashews (soaked in hot water for 30 minutes or more) - 1/2 cup coconut cream - 1/4 cup maple syrup - 1 tbsp coconut oil - 1 pinch of vanilla - 1 tbsp of 🍋 Directions; - Blend the base and set in a square tin - Blend the cashew layer and put it on top of the base - top with frozen raspberries (or any fruit of your choosing) and shaved dark chocolate - put it in the freezer to set, cut it, then keep it in the freezer (this dessert stays in the freezer). That’s it! You would think it’s complicated because of how beautiful it looks, but nope…easy peasy 😮‍💨 2️⃣ RAW SALTED CARAMEL SHORTBREAD BARS ✨ RAISE your hand if you love shortbread but cannot eat them because you’re gluten and dairy free 🙋🏽‍♀️ These shortbread bars will genuinely make you fall in love. The contrast between salty and sweet is just *chefs kiss* Base; - 2 cups almond flour - 3 tablespoons maple syrup or honey (if not vegan) - 2 tbsp coconut oil *put the base in the freezer to set while you make the caramel Caramel; - 1/2 cup almond butter - 1/4 cup tahini - 1/4 cup coconut sugar - 1 tbsp coconut oil *Melt all of this together using the double boiler method, then add on top of the base. Pumpkin Samosas (Uzbek Samsa) By @naturallyzuzu Makes 14-15 samosas Homemade Dough 2 cups all purpose flour 1 teaspoon Salt 2-3 tablespoons avocado oil 1/2 cup hot Water 3 tbps of non dairy yogurt one handful Sesame Seeds Filling 1 medium size Butternut Squash (about 2 cups) 1 large red onion 5-6 fresh curry leaves (optional) 1 teaspoon Salt 1/2 teaspoon Pepper 1/2 teaspoon Cumin 2 tsp of coconut or date sugar 3 tablespoons Avocado Oil Method: Preheat oven to 380 degrees F. In a stand mixer, combine flour, hot water, non dairy yogurt, and salt and kneed dough for 5 minutes until dough is smooth. cover and rest for 30 minutes. Meanwhile, mince onion and pumpkin. I used my food processor to mince all the filling ingredients coarsely. Mix with salt, pepper, cumin, sugar and oil. Divide the dough into 12-15 pieces. Make a ball, dust the surface lightly with flour and roll out each dough ball into 4-5 inch diameter. Repeat the process with each dough pieces. They don’t have to be perfectly round. Fill each dough with. 2 tbsp of pumpkin mixture and fold it in triangle. Watch my highlights for step step instructions. Fill all dough wrappers with the pumpkin filling. Line cookie trays with some parchment paper. Place the samosas with folder side down on the cookie tray. My goal with making conscious cuisine was always to express the light of my soul and to let it shine so that those with whom I cross paths with are reminded of the light of their soul too. My other goal was to show people how delicious ‘compassionate plant-based’ food can be and help to make the world a bit of a better place, because of that. So that’s where I am coming from with my conscious cuisine. Everything is energy. The energy we are experiencing at the time of preparing food can make a big difference to the final outcome of a dish. If we feel ‘light’ and spacious within, then we essentially infuse ‘light’ into the food. If we feel dark and heavy then we infuse that energy into the food. When we eat the food we not only absorb the nutrients, but also the ‘energy’ infused into it. As well as the physical body, the energy of food also sustains us on mental, emotional and spiritual levels. One-Skillet Baked Greek Lemon Chickpeas and Rice by @crumbs.and.caramel 🌿A simple and tasty recipe, perfect for sharing! Get the recipe below! 👇🏼 Ingredients 1 tbsp olive oil 1 yellow onion, diced 4 garlic cloves, minced 1 tsp dried oregano 1/4 cup white wine 1 cup long-grain white rice, rinsed 2 cups cooked chickpeas, drained and rinsed 1/2 cup sun-dried tomatoes, oil packed 1 tbsp oil from oil packed sun-dried tomatoes 2 tbsp fresh dill, chopped 1/2 tsp salt 1 large lemon, sliced and seeded 2 1/4 cups vegetable stock, boiling 1/3 cup Kalamata olives, pitted 3 cups baby spinach 1 pint cherry tomatoes, sliced in half salt, pepper and chili flakes, to taste Instructions Preheat the oven to 375°F. In a large cast-iron skillet over medium, heat the olive oil. Add the diced onion and cook until soft and translucent, about 5 minutes. Add the garlic and oregano. Cook for another minute, then deglaze with the white wine. Cook for another minute until the wine has reduced but things still aren't starting to stick to the pan. Stir in the rice, stirring to coat. Add the chickpeas, sun-dried tomatoes, oil from the tomatoes, dill, and salt. Mix well. Carefully pour the hot stock over the mixture and gently mix. Wedge the lemon slices into the mixture. Cover tightly with tin foil, and bake for 35-40 minutes, or until the rice is cooked. Carefully remove the foil, and stir in the spinach, olives and cherry tomatoes (or serve them over the top). Let sit for 5 minutes so the spinach wilts. Creamy One Pot Lasagna! By @plantbased.traveler Ingredients: 6 lasagna sheets 10 oz vegan mince * 2 heaping tbsp tomato paste 32 oz can crushed tomatoes 32 oz vegetable broth or water (simply use tomato can 👆🏼 to measure) 1 cup unsweetened plant milk (I like extra creamy oat milk) 1 medium sweet onion 3 garlic cloves 1 small carrot 1 celery stalk 1 tbsp olive oil 2 tsp Italian seasoning 1 tsp dried basil 1 tsp paprika 1/2 tsp crushed fennel seeds Salt and pepper to taste Method: Finely dice peeled/washed onion, garlic, carrot and celery. Heat up a small dutch oven (or non stick pot or deep sauté pan), cook vegan mince until browned and crumbled, then set aside. Add olive oil, and sauté diced vegetables for 5-10 minutes until fragrant and softened, then add mince crumbles back to the pot. Add tomato paste, stir for a minute, then add crushed tomatoes, plant milk, broth/water, herbs, and spices. Break lasagna sheets in 2-3 pieces, add them to the pot, and bring everything to a boil. Simmer for 20 minutes, stirring occasionally, or until pasta is al dente. Enjoy! BLACK OLIVE TAPENADE PASTA🖤 By @terianncarty Ingredients 400 grams gf fusilli 3 tbsp olive oil Pinch chili flakes 1/2 onion diced 2 cloves garlic minced 3 cups cauliflower florets 7 cremini mushrooms 8 brussel sprouts trimmed and halved 1/2 cup chickpeas 1 cup cherry tomatoes 1 cup green olives 3/4 cup tapenade Fistful spinach 1/2 cup pasta water Sea salt and cracked pepper 1/2 cup vegan Parmesan Sprouts (optional) Method Preheat oven to 400. Toss cauliflower and brussels sprouts in olive oil and season with salt and pepper. Spread onto baking sheet and bake for 25 minutes. Set aside. Cook pasta in salted water. Reserve pasta water. Heat olive oil and chili flakes in a large pan. Cook onion until translucent. Add mushrooms and cook until soft. Add garlic, cooked cauliflower and BS, add in spinach tomatoes, olives and cooked pasta. Scoop in tapenade and toss to combine. Add pasta water to create sauce. Season the cheese, salt and pepper. Pumpkin Soup with Coconut & Ginger By @beferox Serves 4 Ingredients: •800g Hokkaido pumpkin, washed, deseeded and cut into pieces •600g carrots, peeled and sliced •1 onion, cubed •5 cm ginger, peeled and thinly sliced •2 tbsp. vegan butter or margarine •1 liter vegetable broth •1 can (400ml) coconut milk •Salt, pepper and soy sauce to taste •Juice of 1 lemon Directions: •Heat 2 tbsp. vegan butter in a big saucepan over medium-high heat. Add pumpkin pieces, carrots, onion and ginger. Cook for 5 minutes, then add vegetable broth •Reduce heat to medium-low. Cover pot with a lid and cook for 20 minutes or until vegetables are soft •Remove saucepan from heat and finely puree the soup with an electric mixer. Add coconut milk and lemon juice. Vegan Black Pepper Tofu By @foodpassionical Prep time: 10 minutes Cook time: 10 minutes (2 servings) Ingredients: 1 block tofu (400g), cut into cubes 3 cloves garlic, sliced 1 onion, roughly chopped 1 small carrot, sliced 2 stalks scallions, cut into 1 inch 2 tbsp cornstarch 1 tsp black pepper 2 tbsp oil for cooking Sauce mixture: 1 tbsp shaoxing wine 1 tsp sesame oil 1 tbsp soy sauce 1/4 tsp dark soy sauce 1/2 tsp mushrooms powder 1 tbsp vegetarian oyster sauce 1 tsp sugar 4-5 tbsp water Method: 1.) To squeeze out the water from the tofu, wrap the tofu in a clean towel and put heavy burden on top. Cut the tofu into cubes, coat with cornstarch and set aside. 2.) In a small bowl mix together all the sauce ingredients and set aside. 3.) Heat oil in a frying pan on a medium heat, pan fry the tofu till golden brown and set aside. 4.) In a same frying pan, add in the garlic and onion sauté till fragrant. Add in carrot and cook for 2 minutes, then add in the sauce mixture, tofu and black pepper. Stir to mix well, lastly add in the scallions. Stir fry to combine everything and remove from the heat. By @Gigi_goes_vegan 1️⃣ COFFEE CHOCOLATE PROTEIN MOUSSE Protein per serve 19gr IS THIS A COMPLETE PROTEIN ?! yes Although it is good to note that tofu is a touch low in methionine compared to the other amino acids, which is why I added hemp seeds to the recipe. INGREDIENTS (makes 3 small jars or 2 medium ones) 300gr block silken tofu 90gr melted dark chocolate 1 Tbsp hemp seeds 5gr instant coffee (feel free to add more if you like coffee flavour) Sweetener optional (2 tbsp maple syrup should do) but recommended if 1) you use chocolate that is 80%- 90% cocoa 2) are a sweet tooth. METHOD -In a blender, combine silken tofu, hemp seeds, coffee, sweetener, and melted chocolate. Pro tip: add 1 tsp of coconut oil if melting the chocolate in the microwave. This helps quicken the process and prevents the chocolate from burning. -Blend the ingredients until smooth. -Pour the mixture into jars and refrigerate for at least two hours, or ideally, overnight (if you can resist that long). -Before serving, top it with chocolate flakes, or get creative and add your favourite toppings!
