With the arrival of spring comes so many tasty foraging opportunities - and Fiddleheads are a favorite! Check out this Fiddlehead Focaccia 🌿 by @little.sitka.kitchen ❤️ “I used a tried and true recipe from @bonappetitmag called “shockingly easy no-knead focaccia”. For the toppings I foraged fiddleheads - cleaned them, blanched them for 5 minutes in boiling water, and sautéed for 2 minutes with chopped garlic. I also used sliced shallot, baby heirloom tomatoes, and parsley - placing and lightly pressing all the toppings into the focaccia before baking. Another little known fact is that they are not “grizzlies”. A grizzly is a subspecies of brown bear and only found inland in Alaska. Fascinating to watch.
