CNY Spring Greens! (along w/ some chlorophyll-less Horsetails) These are some of the veggies I've been gathering recently, including Wild Leeks, Fiddleheads, Dame's Rocket, Garlic Mustard, Dandelion, Waterleaf + Trout Lily This is my first year eating dame's rocket, waterleaf + horsetails. When fried in olive oil w/ salt, the dame's rocket tastes awesome, similar to roasted pumpkin seeds. The waterleaf is milder and very good; I've only tried it raw and fried in oil so far, & it's good both ways, but frying is my preference due to the somewhat fuzzy texture of the raw leaves. Plus, when pan-fried in oil w/ a little salt, a waterleaf will maintain its shape & get crispy (pic 2). I suspect I'll be using waterleaf for reasons of aesthetics + flavor in many future dishes. I haven't decided how I feel about horsetails yet. The flavor of the fried shoots was savory + quite good, but the texture was meh. I did remove the woody bits before cooking & plan on experimenting w/ other prep methods. If anyone has any recommendations for horsetails other than pan frying, I'd love to know them! Please be ecologically mindful while foraging! Wild leeks + ostrich ferns, in particular, are vulnerable to overharvesting. In my immediate region, unknowledgeable foragers have been especially hard on fiddleheads recently. Be sure only to forage fiddleheads from areas where they haven't already been foraged. Only take a frond or two from each plant (assuming the plant hasn't already been foraged).
