When I worked at the pie shop, we a l w a y s made pie dough and rolled it out immediately, got it into (square) pie pans, and then refrigerated it up to a week. Dorie Greenspan said it too in an interview I heard several years ago, and it works well for double crusts too. I roll out both and just let them sit in plenty of plastic wrap on a sheet pan and then when pie time hits, it seems effortless. If it’s only a single crust pie, I’ll crimp it and just throw it in the freezer, which is even better. Thanksgiving doesn’t happen without @the_bojon_gourmet ‘s (GF) Chocolate Cranberry Pecan tart, and that tart dough freezes first too. Wishing I had a freshly baked, warm, gooey, orange zest infused morning bun in my hands on this chilly chilly day. I baked these as an extra special (labor intensive but oh so worth it) treat last month. I’m also currently listening to the audiobook 🎧📖 “The Secret History of Food” by Matt Siegel on @librofm right now and came across this quote… “Ever since the onset of farming, December has been peak comfort food season because it meant winter was coming.” With today being a largely single digit degree day in the Midwest, winter is definitely here. Repost • @the_publishers_daughter Some of you (let’s face it, it was three - I’m not that big an IG influencer lol) wrote for the recipe so I’m posting the blueberry filling here for you all, in case you were just too busy to write. It’s adapted from a recipe I found on @saveurmag earlier this year. Blueberry Pie Filling 3 Tbsp. all-purpose flour 1 teaspoon finely grated lemon zest 1/2 tablespoon lemon juice ½ cup sugar ½ tsp. ground cinnamon ¼ tsp. nutmeg ¼ tsp. kosher salt 6 cups blueberries (fresh or frozen, I used fresh this time) 1 tsp. vanilla extract 1 Tbsp. butter, cut into small pieces Preheat oven to 400 In a large bowl, add flour, sugar, cinnamon, nutmeg, lemon rind and salt and stir. Add the blueberries, lemon juice and vanilla and toss to coat. Let sit about 15 minutes for everything to blend together, then transfer filling to the pie shell. Dot with the butter and then do whatever crust you like to do on top. Put in oven for 20 minutes at 400, then lower to 350 and cook for another 30-40 or until bubbling. Blueberry Pie Filling 3 Tbsp. all-purpose flour 1 teaspoon finely grated lemon zest 1/2 tablespoon lemon juice ½ cup sugar ½ tsp. ground cinnamon ¼ tsp. nutmeg ¼ tsp. kosher salt 6 cups blueberries (fresh or frozen, I used fresh this time) 1 tsp. vanilla extract 1 Tbsp. butter, cut into small pieces Preheat oven to 400 In a large bowl, add flour, sugar, cinnamon, nutmeg, lemon rind and salt and stir. Add the blueberries, lemon juice and vanilla and toss to coat. Let sit about 15 minutes for everything to blend together, then transfer filling to the pie shell. Dot with the butter and then do whatever crust you like to do on top. Put in oven for 20 minutes at 400, then lower to 350 and cook for another 30-40 or until bubbling.
