I don’t know what took me so long to get on the Cookie Butter train but HOLY.H*CK! I love everything about this cake! I love the Salted Caramel Cream the layers are brushed with, the Cookie Butter Swiss Meringue Buttercream, Crushed Biscoff Cookies, and Salted Caramel it’s filled with. The Cookie Butter Drips, Homemade Crunch Bar Pops, Stroopwaffles, Pocky, and Pizzelles it’s garnished with. But most of all, I love ending sentences with prepositions, and the sweet little girl I made this cake for. I cannot believe that I have now known her parents for half of my life! CREMA Metto in un pentolino il latte, la panna e il baccello di vaniglia aperto e porto quasi a bollore. Nel frattempo in un altro pentolino sbatto bene le uova con lo zucchero e il pizzico di sale. Aggiungo la farina setacciata e mescolo ancora un po', poi aggiungo il latte tutto di un colpo versandolo da un passino a maglie fitte. Metto a fuoco bassissimo mescolando sempre con una frusta a mano. Spengo quando la crema si è addensata bene. Coprirla con la pellicola a contatto e lasciarla raffreddare. PASTA FROLLA Tagliare il burro a pezzetti nella ciotola della planetaria, aggiungere lo zucchero e la vaniglia a azionare a velocità ridotta, lasciando lavorare la planetaria finchè diventa una crema. Aggiungere l’uovo intero e il pz di sale. Aggiungere la farina e lasciare amalgamare a velocità bassa e gradualmente aumentare fino a 4/5. L’impasto divenertà un tutt’uno. Raccogliere la palla, avvolgere in pellicola e mettere a riposare in frigo per almeno mezz’ora. Trascorso il tempo di riposo riprendere la pasta e rilavorala qualche minuto con le mani oppure in planetaria. Tagliare in due il panetto di frolla e stenderlo sulla carta forno, spolverata di farina. Una volta stesa la frolla della dimensione giusta per lo stampo utilizzato, capovolgerla al suo interno aiutandosi con la carta forno, sagomarla bene rimuovendo l'eccesso. Bucherellate con una forchetta il fondo e coprite con un foglio di carta forno e dei legumi secchi, che impediranno alla frolla di alzarsi. Cuocere in forno già caldo a 170 gradi, ventilato x almeno 20 minuti (dipende dal forno). Per fare la griglia ho utilizzato lo stampo apposito per crostate. Ho steso sopra la pasta frolla, rimuovendo l'eccesso con il mattarello e ho messo 10 min freezer. Poi l'ho sformata sulla teglia e cotta in forno come la base. Passiamo alla decorazione. Fare uno strato di marmellata (se non vi piace potete anche ometterla) e ricoprire con la crema. Tagliate la frutta che preferite e decorate a piacimento. Boom:. I made it a year...as a mom, as a doctor, as a wife & as ME! It was a huge challenge this year with all the things that were thrown at me but with the help of my village (as my hubby says), we made it! This past week has been one of the hardest for me. I am at peace with my decision now but I still feel so sad that our family was not in one space for Saraia! I know she won't remember this birthday, so I'm writing it down now & letting it go! This year has been great but COVID Sucks...it took our first year plans of travel & time of us being with our extended family away...BUT it also allowed me to learn to say NO...I've gotten quality time with MY FAMILY that I wouldn't have gotten without COVID making us slow down...so thank you!
