🫐Do you like pie?! I prefer cakes and cookies, but I made these blueberry hand pies, and I can’t get enough of them! I don’t think I could sit down and eat a whole slice of blueberry pie. These little travel size ones are more up my alley. (SAVE the recipe for later) What you need: - box of puff pastry (both sheets thawed) - 2 cups fresh blueberries - 3 tablespoons sugar - 1/4 teaspoon cinnamon - 1 1/2 tablespoons cornstarch or flour - 1/2 teaspoon of butter - 1 tablespoon fresh lemon juice - 1/4 teaspoon of almond extract - 1/8 teaspoon of salt - 1 egg yolk What to do: * Preheat oven to 400°, line 2 baking sheets with parchment paper * In a bowl, combine, blueberries, sugar, cornstarch, lemon juice, cinnamon, butter melted, almond extract, and salt * Unfold the pastry sheets and roll them out a little to smooth them. Cut each sheet into six segments and place them on baking sheets * Spoon about 1/4 cup of the blueberry filling onto half of each pastry * In a small bowl, whisk the egg yolk and use it along the edges as glue while you fold half the pastry over the other half where your blueberries are * Use a fork to seal the edges. Brush the tops with the egg wash and you can sprinkle with sugar if you like. * Cut slits in the top of each pie and bake for 20 minutes or until golden brown * Let them cool (if you can) before eating! I miss having itty-bitty ones to take trick-or-treating. Or even the medium size ones whose candy bags you can rifle through! My kids are 27 and 30 and live on the other side of the country. I have no excuse to consume Snickers, Reesie’s and all the other good chocolate candy bars this Halloween. I make sure not to buy it to pass out anymore, so I don’t loose my mind.
