Platters over platters over platters. You know I love platters, especially when they are homemade and 100% #glutenfree. No stress and hassle for cross contamination. We substitute the “traditional” water biscuits with gluten free rosemary crackers by @schaer.mt and everyone loves them! Tip: when building your own platter, I find it convenient to shop from @lidlmalta since most of their cheese and cold cuts are clearly indicated as gluten free. Alternatively if they are not, make sure to read the ingredients and note the allergies in bold. Prilejeme mlieko, prisypeme múku, prášok do pečiva, vanilkový cukor a všetko spolu dôkladne vyšľaháme. Ako posledný prišľaháme olej, ktorý ale vlievame do cesta pomaly a postupne. 3/4 cesta vylejeme do pripravenej formy (formu si vytrieme maslom a posypeme zľahka múkou, prípadne kokosom). Do zvyšnej 1/4 cesta primiešame kakao a vzniknuté tmavé cesto prilievame do formy k bledému cestu takým spôsobom, aby sme vytvorili typický mramorový efekt. Dáme piecť do rúry vyhriatej na 180 stupňov po dobu cca 50 min. Či je bábovka dostatočne upečená si overíme tak, že do stredu cesta vpichneme špáradlo. Ak je po vytiahnutí suché, bábovka je upečená. Ak sa však na špáradlo nalepilo cesto, pečieme ďalej, sledujeme však čas a teplotu, aby sa naopak nestalo, že nám bábovka prihorí. Na vrch môžete pridať citrónovú polevu. Dobrú chuť! 😊

Hai presente quando accumuli una manciata di biscotti secchi magari pure un po’ sbriciolati (ormai così poco invoglianti!) e che non sai più come utilizzare, al di là del solito trito e ritrito salame al cioccolato? Bene, mettili in ammollo in latte vegetale (io al momento resto fedele a quello di avena) aggiungi mezza bustina di lievito per dolci o in alternativa bicarbonato e poi tutto il composto nel mixer fino a quando avrà la consistenza di una crema liscia e senza grumi Passaggio finale in friggy a 160 gradi per 15/20 minuti , fare sempre comunque la prova stecchino, ed è fatta! Questa mattina #pancakesenzaglutine per una colazione sana, economica e gustosa. Pensiamo a quanto costano i biscotti senza glutine che si trovano in commercio, spesso superano i 4 euro per 200 grammi di prodotto, sono processati, contengono conservanti, ecc. Con molto meno si può preparare una colazione sana e nutriente. Questa ricetta richiede solo: 200 gr di farina di riso, 50 gr di zucchero (io lo preferisco di canna), un uovo, 200 ml di latte. Io l'ho condita con marmellata di arance e mirtilli, mio figlio rigorosamente crema di nocciole (novi, che è più sana della Nutella e i prezzi quasi si equiparano)
#ThrowbackThursday The year was 2009, and Jessica had just baked up three flavors of her gluten-free granola, packaged them up in sample bags (300 per flavor!) and started visiting stores nearby her home in Michigan to share the samples. The economy at this time was not doing well. Was she crazy for considering starting a business? Well, thankfully, there was a lot of support for small, Michigan-owned businesses. One store she stopped into to share her samples was Holiday Market. When the buyer tasted her granola, to Jessica’s surprise he said “I’ll take a case of each flavor!” This was SO exciting, but a little unexpected! Jessica went back to her warehouse to get granola, boxed it up, Googled how to create an invoice (because as a brand new business owner, she had no idea how to!), and delivered the granola that next day to Holiday Market. I’m a huge fan of jelly. Always have been and always will be. I used @hartleysfruit raspberry jelly cubes to make this raspberry jelly the other day. I used frozen raspberries and to ensure the jelly set, only used 3/4 pint of water rather than the suggested pint. Fruit jelly reminds me so much of my grandma, as she’d always have either a fruit jelly or bowl of stewed fruit in the fridge to use as a quick pud! I also like to make orange jelly (years ago you could get a tangerine jelly, which was delicious) and add tinned mandarins, using the juice from the tin to make up the required liquid, instead of adding cold water. The other night I quickly whipped up some cream to go with our raspberry jelly. Before whipping the whipping cream, I added a desert spoon of sugar and a drop of #gf vanilla extract and it was SO nice!! Today parents were invited to join in with a school meal at W's school... it gave me a unique opportunity to see how W's food was handled, presented, and served to her. She sits with space round her and her food is labelled and well protected. Her separate pudding was covered and clearly labelled with both her name and GF labels. She had some gluten free gravy also in a jug which was the same for the whole room. The chef came over and asked me how I felt her meals were going and I said that so far I'd been really happy and felt she was well looked after. The chef also stated she loved going shopping for new GF treats as puddings to make sure W and the other coeliac child in school get some variation. She's really clued up on allergens and cross contamination for coeliac disease; her knowledge was actually a big part of why we chose this school over another in our area.
