We had our last cold snap for 2024, I believe. Last night it got down to 30 F. I am running a couple space heaters in my greenhouse tonight, but it’s supposed to nearly hit 80 F this week, so I suspect that spring is about to jump out at us like a jack-in-the box! Today I pruned the blackberry bush to make cuttings for a hedge, mowed the garden enclosure, cleared the tomato bed, purchased some compost and bought a few garden tools. Kevin cleared some mesquite and used the tractor to plow for his grass seed. He’s trying to grow some new grass for the cows. We have one cow going to butcher this week, too. Small farming is never dull. Update on the garden 🐝 My eggplants are thriving this year, I have 4 large graffiti eggplants and 2 babies. I'm very proud and hope they continue to do well. They're also called striped eggplant. It's exciting because Eggplant is such a good meat substitute and I've been cooking with them already, moussaka is very doable. This variety is perfect for baba ganoush, so we have to try 💦 🍆 🐝 My main pest is flying leaf cutter fly type that decimated my okra serrano anaheim tomatillio and bell pepper. I got a few harvests out of each and they will likely bounce back with a vengence.. but for how long and is it worth it. A constant struggle 😏 🐝 The tomatoes are fabulous. I have this basil, thai and Italian, that has taken off so I got some mozzarella from the dang'ol HEB 😈. The farm has apparently become a chicken sanctuary. Friday, a friend showed up with three city birds which had never been free range before. They must think they died and went to heaven. We turned them loose in the pasture with the other birds. Everyone was fine since there’s so much room. Between these old girls and our sixteen chicks, we are now back up over 70 again, for sure. Something I haven’t shared too much about our farm business yet is the inclusion of a commercial kitchen to our operation. I think I’ve kept this aspect of the business a tiny bit under wraps because it may be a while until the kitchen is officially finished and operational. I don’t wanna hype it up only to have it take 3 years 😂 I wanted a place where I could get creative transforming our farm products as well as other local producers’ offerings into tasty edible meals, snacks, and treats. I’ve spent my whole life obsessed with food in general & making and sharing food with others. There’s nothing I enjoy more than bringing a smile to peoples’ faces with delicious, nutritious (or downright decadent) foods. My career in the kitchen started with my love for baking, which I will be doing a lot of the second I am unleashed in a regular sized kitchen. Trying to bake and cook 3 meals a day in an RV kitchenette has been quite depressing for me 😅 I’m not entirely sure where this part of the business will go. It’s something that I’m sure will evolve with time and different opportunities that present themselves. I found this photo of my place (that used to be grandpa and grandma’s before it was my mom’s). I found it the same day I picked the last of the zinnias. See the heart? The picture shows grandpa’s carport - which is now a garage with a greenhouse out back and the China berry trees in their prime (now gone) where my fenced garden and chicken coop now sit. We have only been here four years, and we have done so much. It’s crazy looking at the old photos. #tastytuesday Roasted Spatchcock Chicken As the temperature starts to cool, I start using my oven more. I love roasting whole chickens in my Dutch oven, but this was the first time I've done a spatchcock chicken in the oven. It was delicious with a crisp skin and took less time to cook. This recipe is from @spoonforkbacon Happy cooking and happy eating! Ingredients •1/4 cup unsalted butter softened •1 teaspoon salt •1/2 teaspoon black pepper •1 tablespoon lemon zest (from 1 large lemon) •2 minced garlic cloves •4 1/2 pound whole chicken •1 teaspoon minced thyme Garnish •2 tablespoons thyme leaves •2 tablespoons thinly sliced chives. 1. Preheat oven to 450˚F. 2. Place butter, salt, pepper, lemon zest, minced thyme, and garlic into a small bowl and mix together until evenly combined. Set aside. 3. Turn chicken breast-side down on a clean cutting board. Using sharp kitchen scissors, cut out backbone of chicken. 4. Turn chicken over and open back, so the legs are facing inward. 5. Place palms over the center of the breastbone and firmly press down to crack (this will allow the chicken to lay flat). 6. Using fingers, gently pull skin away from the meat throughout chicken. Then carefully and evenly spread half of butter mixture under skin of chicken. 7. Rub remaining butter evenly over entire skin of chicken. 8. Tuck wing tips behind chicken. 9. Place prepared chicken into a 12” cast iron skillet, turning legs inward. 10. Transfer skillet to preheated oven and roast for 15 minutes. 11. Reduce temperature to 400˚F and continue to roast for an additional 45 to 50 minutes or until the internal temperature reads 165˚F when a thermometer is inserted into the thickest part of the leg, and the juices run clear. 12. Remove skillet from oven and allow chicken to rest, about 10 minutes. 13. Top chicken with thyme leaves and sliced chives.

The holiday season is quickly approaching! Here on the farm we are getting our turkeys nice and plump and ready for their big day! Our turkeys are raised on un-sprayed green pastures, fed high quality feed, and are free to eat all bugs and grass and seeds they can get! Turkeys can get up to 40% of their diet from forage- which also makes them tastier- so we make sure our little guys get as much as they can, plus soak up all that vitamin D as well. Our turkeys average 10-14 pounds but we also expect to have a few larger ones with this batch. We will do our best to match you with a turkey of your desired size but as with all livestock, we cannot guarantee size. The past few mornings have been so pleasantly cool that I have almost enjoyed spending extra time getting turkeys back in and cows back out to where they each belong.
We found 2 guinea eggs yesterday! Overall I've enjoyed having guineas because I really think they've helped with our grasshopper infestation. However, it hasn't gone as smoothly as we had hoped either. We're down to only 5 guineas now (we started with 15). It requires more work on our part to get them closed up safely in their shelter each night, but we have a fairly good system for that now so that hasn't been the issue. The issue has come during the middle of the day. They'll roam around throughout the day and when they return in the afternoon one is missing. We lost 5 or 6 like this within a week and a half where they mysteriously disappeared - no carcass, feathers, nothing. We've never hatched eggs before, but we might actually try with some of these guinea eggs so we can replenish their population. If we can get a good setup for one of our broody hens, we might put one of them to good use, otherwise we'll look into a cheap incubator. We'll see!
Broiler batch 4 moved out to the pasture a few days ago to make room in the brooder for broiler batch 5 that arrived this morning. We're still working out a few kinks with our new broiler shelter, but we had our first successful move last night.

I recently took a tour of @bartonspringsmill and realized: 1. I know nothing about wheat 2. I know nothing about flour 3. I thought all mills were windmills . . This is not very impressive for someone who is serious about baking, so I tried to absorb as much information as I could on the tour. . . One of the most interesting things I learned is how different modern grains are from older (“heritage”) grains. Today we are able to genetically select for a shorter shaft, leading to a more calorie-dense product, more efficient for human consumption. Heritage grains have a really long stalk, comparatively. We don’t eat the stalk, though in an agrarian society the stalk is useful for animal bedding and other things. A long stalk also “shades out” opportunistic pests and other plants, where the modern grains require pesticides. . . Notes from the garden. It’s a miracle we still have flowers at all. Everything is so crispy! Marigolds even bloomed for the first time this weekend. Tomatoes are full and have blossoms but aren’t producing much fruit. Jalapeños are plentiful. Bell peppers are mutant-shaped big, and delicious. No filter, just spring roses. I think this was April. My bushes by the porch exploded in red roses. Too bad they don’t stay that way all year. Too bad they don’t smell wonderful. Grandma planted these, so I didn’t pick the variety. Reminds me of her when they are all in bloom. One day I’ll be a better rose mom. Right now I’m doing good just to keep all the plants alive in this extreme drought. We have had to start watering oak trees. I have a 300 year oak in the back pasture that is turning brown. That’s a serious lack of ground water, y’all. Not to mention we are feeding straight hay - no grass for the cows. Our herd is growing little by little. We're thankful for our family and neighbors who've given us bottle-calves over the past few months. We appreciate our small farm/ranch community that we have! The older two, Leroy and Annie, are weaned. In fact by the time we got them they were a few months old and would never take a bottle, but would at least drink the milk out of a bucket. We just got the younger ones this morning so haven't been able to try a bottle yet with them. We hope we can get them to take one soon. But if not, hopefully they'll take to a bucket too so they can start getting the nourishment they need to survive.
