Here's Mike putting the finishing touches to the caterpillar tunnel frame. To be skinned and planted up early next week. We have experimented with different summer crops in the cat tunnel over the years - tomatoes, fennel, celery, basil...). This year we're keeping it simple - it will be home to our whole pepper and chilli crop. We've always had the Padrons in there and they have loved it. They'll be joined by Amy (very early, pointed yellow pepper), Napia (prolific, main season, pointed red pepper), Police (my favourite chilli (large, fairly mild, tasty - a great CSA chilli!), and jalapenos (no explanation required). They will all be filling CSA veg shares from July onwards. We do have some spaces for new members - 15 spaces in fact. Ratatouille 🍆 🛒 Ingredients: 1 eggplant, thinly sliced 2 zucchinis, thinly sliced 2 yellow squash, thinly sliced 2 red bell peppers, thinly sliced 4 tomatoes, thinly sliced 2 onions, thinly sliced 4 cloves garlic, minced 1/4 cup olive oil Salt and pepper to taste 2 tsp thyme 1/4 cup fresh basil, chopped 🔪 Instructions: Preheat oven to 375°F (190°C). Spread onion and garlic at the bottom of a baking dish, and drizzle with some olive oil. Arrange slices of eggplant, zucchini, yellow squash, bell peppers, and tomatoes in a circular pattern on top of the onions, slightly overlapping. Drizzle with olive oil and season with salt, pepper, and thyme. Cover with foil and bake for 40 minutes. Remove foil and bake for another 20 minutes until vegetables are tender and lightly browned. All the sudden too many eggplants. Strangely harvested none over Summer, but then when the weather started to cool down the plants started to thrive and put on flowers and fruit. My first go to recipe are done, so now it’s time to save some excess for Winter. When dehydrating eggplants, make sure you peel them first, as the peel will be very tough even after rehydration. The dried fruit can be used in slow cooker meals like in my own creation using lamb roast, red capsicum, chilli tomato, eggplant and pumpkin. Today was an all over the place kind of day. My favorite. 🙃 I have a list that never stops growing of things I need to be doing + so I decided to ignore all that and spontaneously go buy corn and okra seed and till a small plot for them. Ya know, just living by the seat of my pants here. From an appt in Andalusia, a stop at Sweet South, to the flower field, to practicing arrangement making, to house keeping, to landscape additions, to a brand new garden, + planting/watering my existing veggies… and finally to rush off to get the kids to 4H practice! I’m finally becoming okay with people in public seeing me in my natural state - covered in dirt + wearing overalls + muck boots. 🫣 Only after they ran outside to remind me “WE GOTTA GO!” 🤪 This is what most of my days look like. I’m trying to take some advice I learned recently and just TAKE THE PICTURE. SHARE THE JOURNEY. It’s almost 8pm and today started full blast at 5:30am. 😴 I’m starving. Exhausted. And my feet hurt. I feel the zucchini might have known I was getting ready to pull it out and it has put on a heap of new growth and started setting more fruit. The seeds for this zucchini were started back in early September, and the stem of the plant is now over a metre long. I cant recall ever having a zucchini plant last so long, but while it is happy and producing it gets to stay. I will just need to plant the winter crops around it.
