Even without power, this family knows how to have a good time! ✨Short Story Time✨ Couple weeks ago; me, my brother, and ours special ladies, threw a surprise birthday party for my mom at this Airbnb themed as one of her favorite shows…that was the same night our little part of the world got hit by insane winds and people lost power for nearly a week. At the time we were hoping the power would only be out a few minutes and return…it did not. So we did, what I think, this family does best. We improvised! 🔥 Cooking with fire by the light of alternating phone lights, we still whipped up a complex and delicious dinner 😎 The only downside is that, because everyone was either using their devices for light (or trying to save battery) there’s no good pictures or video after the sun went down 🥲 but that’s ok, it wasn’t the first time this kinda thing has happened and I’m sure it won’t be the last. All in all I think it was a pretty fun birthday 🥳 🥩🥃

Cooking fun, yesterday. For dinner, I made cacio e pepe, with my handmade pasta, by candlelight, as there was a short power outage, just as I started cooking. I used pecorino romano and parmigiano reggiano cheeses. Paired with a fabulous Bordeaux wine from Chateau Cantin in the Saint Emilion Grand Cru region. The wine, which is a Bordeaux blend mostly of merlot grapes; was bold, dry and high acidity, with notes of eucalyptus and chocolate, and a long pleasant finish; and should be decanted an hour before serving. I’m calling this post “Fiona Eats…” For anyone not aware, the east coast of Canada was hit with a severe category 3 hurricane on Sept. 23rd. Nova Scotia and Newfoundland were hit hard and were left with devastating damage. I live in Cape Breton, N.S. and we were among the hardest hit. I have been without power for 5 days now (tomorrow will be day 6!) And it will probably quite a while longer yet before power is restored here. I actually can’t complain! We have a small generator and 2 single butane stoves, so we were able to keep everything in our fridge/freezers, have some lighting and hook up to wifi here and there. And do some cooking, of course! 😊 I’ve been getting creative in the kitchen with only the use of 2 stove tops and some small appliances! So far for dinners we’ve had Clubhouse sandwiches, bbq chicken pasta, bbq steak dinner, breakfast for supper, and spaghetti & meatballs in the slow cooker. Photo 1: BBQ Chicken Pasta. Rigatoni tossed with a homemade bbq style sauce, sautéed peppers, garlic and onions, and chopped bbq chicken. Topped with melted mozzarella and Monterey jacks cheeses. Made up on the fly, but will definitely come up with a recipe for this one! Photo 2: Bagel and lox. Cream cheese, candied salmon, sliced mini cucumber and red onion, chopped fresh dill, and s&p on a toasted sesame seed bagel. Photo 3: Slow cooker spaghetti and meatballs. I made the sauce and browned the meatballs on the butane stove before adding. Cooked the sauce and meatballs in a pot on the butane stove for about 45 mins, then transferred to the slow cooker and cooked for 2 hrs on high. Came out great and I was able to feed my parents and the neighbours with leftovers! The last few photos are just a snack tray! Power went out while I was cooking tonight. So... plot twist! ✨ Chicken Sausage ✨ Cheesy Cabbage & Hashbrowns ✨ Dill Pickles I was originally going put the cheesy cabbage and hashbrowns in a baking dish and top with breadcrumbs and broil for a crunchy topping. But even though my oven is gas, apparently it needs power to stay on. (I had it preheating when the power went out and a safety feature shut it down.) But honestly, these were good without the crunchy topping. It's about equal parts shredded cabbage (with a bit of carrot) and shredded potato and as much cheese as your heart desires. I cooked the chicken sausage on the griddle. The dill pickles were a perfect accompaniment. #Accessability white plate with a generous serving of cheesey cabbage & hashbrown casserole with a sausage link nestled on top.
