✡️✡️✡️✡️✡️✡️✡️✡️ Today’s post from ethnojunkie.com: The Fifth Question On a very recent visit to Brooklyn’s Brighton Beach, I stopped by a modest bakery and was surprised to see that they were displaying their own rendition of what appeared to be chocolate coated matzos. I knew chocolate coated matzos to be a Passover specialty that always came in a box branded Streit’s or Manischewitz – which prompted me to wonder, “Why is this chocolate coated matzo different from all other chocolate coated matzos?” So I bought one to take home. In deference to the holiday season, I will avoid the word “miraculous” but it was unexpectedly delicious. So much so, in fact, that I returned the next day to purchase another four – in case of breakage in transit, I told myself, but I wasn’t fooling anybody. And the answer to the fifth question? The first bite communicates rich, milk chocolate with a little matzo as a counterpoint. Manischewitz (on the right) tastes like matzo with a de minimis layer of chocolatey glaze; it’s okay if it’s all you’ve ever sampled, but the blob of chocolate on the left plate is a clue to its nature. Of course, that unpredictable dollop comes with a price: with that much chocolate, matzo is bound to sacrifice its crispness as compared with the matzo-ex-machina perfection of the packaged version, but it’s one well worth making IMHO. And yes, of course I will reveal the provenance of this unusual delicacy. All That and a Bag of Krupuk Back in 2016, I wrote a post dedicated to my interminable quest to discover the ultimate ethnic crunchy snack chip. It featured krupuk (aka kerupuk), enjoyed throughout Southeast Asia – amazing crisps that are positively addictive. In the package, they appear to be hard little chips, but they miraculously puff up almost instantly when subjected to hot oil – actually, they’re almost as much fun to prepare as they are to eat – but you can also find them sold in bags and ready to eat. My sweet friend from Indonesia, Elika, whom I met at the New York Indonesian Food Bazaar in Elmhurst many years ago, has stayed in touch with me and recently sent me an assortment of authentic kerupuk. Each photo depicts a single variety before frying (bottom of each plate) and after (top) so you can get an idea of the transformation they undergo. 1. Kerupuk Gandum. Gandum means wheat, one of a variety of starches from which kerupuk are made. 2. Emping Belinjo. Belinjo (padi oats) seeds are ground into flour and used to make emping, a type of kerupuk. Padi oats have a slight bitter, but not at all unpleasant, aftertaste. They’re not really “oatey” in the Cheerios sense because they’re another species, but they’re certainly more like oats than corn or wheat since there’s a satisfying nuttiness to them. Elika suggests a sprinkling of salt on these to lessen the bitter taste. 3. Emping Belinjo Udang. Udang means shrimp. Emping are available in styles such as manis (sweet), pedas (spicy) and madu (honey) and flavors including garlic and shrimp. 4. Rengginan – sweet rice puffs. 5. Kerupuk Udang – my absolute favorite of the group! But you don’t have to take my word for how delicious these are! Americans, however, claim that the sauce began by an Italian-American chef named Luigi Franzese at his restaurant in New York. Notes: Try it with stuffed mushrooms, roasted asparagus and stuffed peppers! Pair with Chianti Classico, a red wine from the Tuscany region of Italy. Ingredients: Penne – Olive oil and butter – Onion and garlic – Vodka – Tomato paste –. Heavy cream – Directions: Boil the penne. Meanwhile, sauté the onion in butter and olive oil until softened, then add in the garlic, followed by the vodka. Let it bubble for about 30 seconds or so, and then stir in the tomato paste, then add the cream.Stir until combined, and then let the vodka sauce warm through and thicken. Toss with the drained cooked penne. World cooking 66/200: Lebanon Baba ganoush (aubergine dip); kousa mahshi (stuffed courgettes); kibbeh (fried mince bulgur balls); & knafeh (cheese pastry) Starting off with a typical Lebanese dip, baba ganoush, made of aubergines. I had fun charring these with my blowtorch, and then combining the inners with tahini, garlic, lemon, and olive oil for a nice little dip. It had pretty subtle flavours but it’s quite good! Next up I made kousa mahshi, Arabic courgettes stuffed with a spiced rice and mince mix. Seven spice plus dried and fresh mint and parsley do the hard work here, alongside a garlicy tomato sauce. The Lebanese seven spice mix I made consists of pepper, cinnamon, paprika, coriander, cumin, allspice, & cayenne - interestingly recipes for it vary and most contain more than 7! The stuffed courgettes are a bit of a pain to make but they are super good and the little Arabic courgettes really are nicer and sweeter (pricey though!). The tomato sauce is excellent with it, and the minty notes are surprisingly good. Super!! I also stuffed a few normal courgettes, tomato, and peppers with the excess - all great! For the main, I made kibbeh, considered the national dish. It’s essentially a spiced mince and bulgur casing (with onion and seven spice), stuffed with a spice mince, onion, & nut mix (seven spice, sumac, marjoram, basil, mint, & rose flavoured). Annoyingly the recipes I found were uhh not good, and I always try to find the most ‘traditional’ ones possible… it produced way too much casing and the casing itself was too bulgur heavy, meaning it didn’t hold together super well either. It did take a while but shaping them was pretty fun! I fried some but had issues with them holding, and I did some in the oven since there were too many to fry anyway - the ones in oven held together better. They came out pretty tasty overall, bulgur is a bit crispy, and the yoghurt/tahini sauce with them was decent - though they went best with tomato sauce from the courgettes personally! World cooking 65/200: Portugal Sardinha de escabeche (fried sardine); bacalhau à brás (saltfish, potato, egg); & pasteis de nata (custard tart) Sardines are a super popular food in Portugal what with the strong fishing ties it has. This dish was a way to preserve them for longer with an acidic sauce consisting of vinegar, tomato, garlic, & onion - simple enough along the fried fish! The dish itself is pretty good - tender oily fish with a sharp, garlicy, & rich sauce? Grand! The sardines being whole are a massive pain to eat though - fine bones are not the one! I would much rather a bigger filleted and boned oily fish here! Next up is bacalhau à brás - bacalhau meaning dried cod, a very culturally important food from seafaring days where preserved food was needed. Portugal’s native oily fish doesn’t take well to it, so it’s actually an imported food too (Newfoundland traditionally - where the Canadian dried fish brewis dish I made hailed from too). This dish is one of many uses for bacalhau, and it looked pretty good- fried matchstick potatoes, onion, and egg to bind with the fish along with some fresh parsley and olives! The dish itself is fairly rich, with a slight crunch from the potatoes, the deeper onion and slight fishy notes and then nicely contrasted with olives. Would make a fab breakfast dish! Lastly I made pasteis de nata, a sweet custard tart. Apparently created when monasteries used egg white for starching, the yolks went to various pastries, hence this yolk rich custard tart! I used a puff pastry base, and a rather annoying method of rolling it up and squishing the swirls out in muffin pans - a more swirled puff but a pain! I also made a rich vanilla, cinnamon, and lemon infused custard, before testing my oven at maximum heat! The tarts themselves are great- sweet, citrusy, thick, in soft flaky pastry - can’t really go wrong here!

World cooking 64/200: Equatorial Guinea Grilled fish with 3 sauces; succotash; & akwadu (baked banana) A coastal country, and like many dishes in central Africa, peanuts feature heavily - so grilled fish and a few sauces from native ingredients makes for a nice meal! The fish was marinated in lime and chili, and the sauces include a peanut sauce (with tomato, chili, bay, etc), spinach sauce (with peanut, chili, and onion), and avocado sauce (with tomato, lemon, and peanut - think cooked guac). All with some rice too. Everything was actually rather good, and to be honest some of the more ‘simple’ and peanut focused African dishes I’ve made so far have been a bit lacking. The peanut sauce is lovely, rich and a little sweet, the avocado sauce is surprisingly good (I’m still pro fresh avo), and the spinach sauce is nice and earthy especially with the limey fish. I also made succotash on the side - a bean and veg stew. The dish seems to have came about following the slave trade abolition as an import, but finding ‘traditional’ version of the dish is difficult! The version I settled on is vegetarian and lightly spiced with cumin and a little smoked paprika- alongside the butter beans, corn, courgette, tomato, pepper, onion, garlic, and herbs. The result is a really nice well rounded stew with some spice and fresh flavour - and I think it tasted better the next day. It’s nothing mega exciting but it is a really good way to include a lot of fresh food! Akwadu, a banana sweet dish, apparently serves as both a breakfast and dessert! I’m down with that - it’s a nice little dish with the bananas baked in butter, orange juice, sugar, coconut, and cinnamon. It’s nothing groundbreaking but it’s a really lovely sweet. Barbecued would be a nice option for it too!

Chicken Paella I love Paella!! I stopped making it after realising I’m allergic to mussels….I know I could have made it without mussels but the novelty wore off! And maybe I was being a little stubborn. BUT a friend recently introduced me to @sainsburys Inspired To Cook mixes and I noticed the Paella one so I had to give it a try! I used to cook Paella from scratch but with a busy lifestyle and the handy sachets, a little help now and again is always welcome! I’m not going to lie, I didn’t follow the recipe on the packet, I love chicken in Paella so adapted it. I added chicken, rice, the paella sachet and water, chopped baby peppers, peas and that was it! Oh my it was super tasty! I may end up cooking Paella more often!! Cast iron pan from @lidlgb 🧡

I was treated to a trip along to Eat Street during my catch up. A little way outside the city, I probably would not have got out there without some help. Imagine the Stack, but warm, friendly, without the stag and hen parties and with a good atmosphere and good food. So actually, nothing like the Stack except for the portocabins 🤣 There were foods from all over and we tried a few including Japanese and Laos. Hello folks, we are doing #khaomokgai for this week's specials. "Khao mok kai” is “chicken buried in rice” which explains the way of cooking this dish. The origins of Khao Mok Gai can be traced back to Persian traders who introduced it to Thailand centuries ago, “Tasteatlas” indicates that this is a Thai version of Biryani, first mentioned in Thai literature as far back as the 18th century. Trick or Treat? Finnish goodies and not-so-goodies from our recent trip. We stocked up on lots of Moomin snack loveliness; sweeties, biscuits, lollies, and these great little fruit bars which the kids loved. Not wanting Pete to feel left out, I brought him back a couple of delicacies of reindeer jerky and salmiaki liquer (if you've never tried it, Salmiaki is a Finnish salty liquorice sweet which is certainly an acquired taste 🤢). Finally, a huge stack of Bear pate cans we saw at the airport.
